Tips for success
For the best flavor, use fresh lemon juice and zest. The syrup should be simmered gently to develop a slightly thicker consistency without becoming too concentrated.
When pouring the syrup over the cake, do it slowly and evenly, allowing the cake to absorb it gradually. This ensures every piece is perfectly moist.
Revani is best served the same day, but it keeps well for a few days. If the cake becomes too dry, drizzle with a little extra syrup or a splash of water before serving.
For a more intense lemon flavor, add a strip of lemon peel to the syrup while it simmers, then remove it before pouring.
Variations
- Orange Revani: Replace the lemon zest and juice with orange zest and juice. The syrup can also include a cinnamon stick for a warm, spiced flavor. This variation is especially nice in the winter.
- Coconut Revani: Add 1/2 cup of shredded coconut to the batter along with the dry ingredients. This adds extra texture and coconut flavor. Increase the syrup slightly if needed, as coconut absorbs moisture.
- Chocolate Revani: For a chocolate twist, add 2 tablespoons of cocoa powder to the batter and use a simple sugar syrup without lemon. Top with chocolate shavings instead of pistachios. This is a rich, indulgent version.
- Rosewater Revani: Add 1 teaspoon of rosewater to the syrup and a few drops to the batter. Garnish with crushed pistachios and dried rose petals for a Middle Eastern-inspired flavor. The floral notes pair beautifully with the semolina.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 5 days. Bring to room temperature before serving for best flavor and texture.
- Freezer
- Freeze Revani for up to 2 months. Wrap tightly in plastic wrap and then foil. Thaw overnight in the refrigerator.
- Reheat
- To reheat, microwave a slice for 10-15 seconds or warm in a 300°F oven for 5-10 minutes. This helps restore the moist texture.
Store Revani in an airtight container at room temperature for up to 3 days. The syrup keeps the cake moist. If the weather is hot, refrigerate to prevent spoilage, but bring to room temperature before serving for the best texture.
Revani can be made a day ahead. Prepare and soak the cake, then cover and store in the refrigerator. The flavors meld and deepen overnight. Let it come to room temperature before serving. The topping can be added just before serving to keep it crunchy.
Serving ideas
Serve Revani at room temperature, cut into squares or diamonds. It pairs wonderfully with Turkish tea or strong coffee.
The moist, syrupy texture is a delightful contrast to the crunchy pistachios and coconut. For an extra touch, add a dollop of clotted cream or a scoop of vanilla ice cream.
Revani is a versatile dessert that can be served at casual gatherings or festive occasions. Its golden color and glossy syrup make it visually appealing.
The lemon flavor is refreshing, making it a perfect ending to a rich meal. Enjoy it as a midday snack or a dinner party finale.

Traditional Turkish Revani Semolina Cake with Lemon Syrup

Ingredients
- 3 large eggs
- 1/2 cup granulated sugar
- 1/2 cup plain yogurt
- 1/2 cup vegetable oil
- 1 cup coarse semolina
- 1 cup all-purpose flour
- 1 tbsp lemon zest
- 2 cups granulated sugar
- 2 cups water
- 2 tbsp fresh lemon juice
- 1/4 cup crushed pistachios
- 1/4 cup shredded coconut
Instructions
- In a medium saucepan, combine 2 cups sugar and 2 cups water. Bring to a boil over medium-high heat, stirring occasionally until the sugar dissolves. Reduce the heat to low and simmer for 15 minutes. Stir in the lemon juice and remove from heat. Let the syrup cool completely while you prepare the cake.
- Preheat the oven to 350°F (175°C). Grease a 9-inch square baking pan lightly with oil or butter and set aside.
- In a large mixing bowl, whip the eggs and 1/2 cup sugar together until pale and fluffy, about 3-4 minutes. The mixture should double in volume and hold a ribbon trail when the whisk is lifted.
- Add the yogurt, vegetable oil, and lemon zest to the egg mixture. Whisk gently until just combined. The batter will look smooth and slightly frothy.
- Add the semolina and flour to the wet mixture. Fold gently with a spatula until no dry streaks remain. The batter will be thick and fluffy.
- Pour the batter into the prepared pan and spread it evenly. Bake for 30 minutes, or until the top is deeply golden and a toothpick inserted in the center comes out clean. The cake should be risen and puffed.
- Remove the cake from the oven and immediately pour the cooled syrup evenly over the hot cake. Allow the cake to absorb all the syrup. Let it rest for at least 15 minutes so the syrup fully penetrates.
- Sprinkle the crushed pistachios and shredded coconut over the top. Cut into squares and serve. The cake is best enjoyed at room temperature.
