Before you start

Before starting, measure all ingredients accurately. Bring the eggs to room temperature for better volume when whipping. Prepare the lemon zest and juice.

Have the baking pan greased and ready. The syrup can be made ahead and cooled completely while the cake bakes. Ensure the oven is preheated to 350°F (175°C) before mixing the batter.

Ingredients at a glance (12)
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup plain yogurt
  • 1/2 cup vegetable oil
  • 1 cup coarse semolina
  • 1 cup all-purpose flour
  • 1 tbsp lemon zest
  • 2 cups granulated sugar
  • 2 cups water
  • 2 tbsp fresh lemon juice
  • 1/4 cup crushed pistachios
  • 1/4 cup shredded coconut

Instructions

Prepare the Syrup and Oven

  1. Make the Syrup
In a medium saucepan, combine 2 cups sugar and 2 cups water. Bring to a boil over medium-high heat, stirring occasionally until the sugar dissolves. Reduce the heat to low and simmer for 15 minutes. Stir in the lemon juice and remove from heat. Let the syrup cool completely while you prepare the cake.
Look for The syrup will thicken slightly and become fragrant with lemon.
Tip Cooling the syrup is essential; pouring hot syrup on hot cake can make it soggy.
  2. Preheat Oven and Prep Pan
Preheat the oven to 350°F (175°C). Grease a 9-inch square baking pan lightly with oil or butter and set aside.
Look for The oven is ready when the temperature stabilizes.
Tip Use a light-colored metal pan for even browning.

The syrup should be boiling, then simmering, and finally cooling. It will thicken slightly and smell of lemon. The oven is preheated, and the pan is greased. The syrup must be cool before the cake is baked, so make it first.

Whip, Mix, and Bake

  1. Whip Eggs and Sugar
In a large mixing bowl, whip the eggs and 1/2 cup sugar together until pale and fluffy, about 3-4 minutes. The mixture should double in volume and hold a ribbon trail when the whisk is lifted.
Look for The mixture is pale yellow and airy.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Use room-temperature eggs for better volume.
  2. Add Wet Ingredients
Add the yogurt, vegetable oil, and lemon zest to the egg mixture. Whisk gently until just combined. The batter will look smooth and slightly frothy.
Look for The batter is uniform and glossy.
Tip Do not overmix; a few streaks are fine.
  3. Incorporate Dry Ingredients
Add the semolina and flour to the wet mixture. Fold gently with a spatula until no dry streaks remain. The batter will be thick and fluffy.
Look for The batter is thick and holds its shape.
Tip Fold rather than stir to keep the air in the batter.
  4. Bake the Cake
Pour the batter into the prepared pan and spread it evenly. Bake for 30 minutes, or until the top is deeply golden and a toothpick inserted in the center comes out clean. The cake should be risen and puffed.
Look for The cake is golden brown and springs back when touched.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Rotate the pan halfway through baking for even color.

The egg-sugar mixture is pale and airy. After adding the wet and dry ingredients, the batter is thick and smooth. The cake bakes until golden and a toothpick comes out clean. The kitchen smells of sweet, toasty semolina.

Soak, Garnish, and Serve

  1. Soak with Syrup
Remove the cake from the oven and immediately pour the cooled syrup evenly over the hot cake. Allow the cake to absorb all the syrup. Let it rest for at least 15 minutes so the syrup fully penetrates.
Look for The cake glistens with syrup and looks moist.
Tip Pour the syrup slowly to ensure even absorption.
  2. Garnish and Serve
Sprinkle the crushed pistachios and shredded coconut over the top. Cut into squares and serve. The cake is best enjoyed at room temperature.
Look for The topping adds color and crunch.
Tip Use a sharp knife to cut clean squares.

The hot cake sizzles as the cool syrup is poured over it, and the syrup is quickly absorbed. The top becomes glossy and moist.

After garnishing with pistachios and coconut, the cake is ready to cut. The texture should be tender and juicy.

Common mistakes

Avoid overmixing the batter once the flour and semolina are added, as this can develop gluten and make the cake tough. Ensure the syrup is completely cool before pouring; warm syrup can make the cake mushy.

Do not skip the resting time after adding the syrup, as this allows the cake to absorb it evenly. Also, avoid opening the oven door during the first 20 minutes of baking to prevent the cake from sinking.

How to tell it’s done

The cake is done when the top is deeply golden and a toothpick inserted into the center comes out clean or with a few moist crumbs. The edges will pull away slightly from the pan.

The cake should feel springy when gently pressed. Since this recipe contains eggs, the internal temperature should reach at least 160°F (71°C) to ensure they are fully cooked.

  • Egg dishes: 160°F (71°C) in the thickest part
