Two minutes per side in cinnamon butter turns an ordinary tortilla into a crackling, caramelized shell around a molten center of hazelnut-chocolate spread, mascarpone and fresh strawberries. It is the kind of dessert that looks like a bakery pastry and takes less time than a bag of popcorn. No oven, no batter, no waiting: one skillet, one tortilla, and a plate of crisp, gooey wedges ready before the movie starts.

This is the dessert quesadilla at its best: a single large flour tortilla folded over a thin, deliberate layer of hazelnut-chocolate spread and mascarpone, scattered with sliced strawberries and mini chocolate chips, then seared in salted cinnamon butter until the outside blisters and turns deep golden. The trick is restraint.

Thin layers of filling mean the tortilla crisps instead of steaming, the berries stay in place instead of sliding out, and every wedge cuts cleanly with a molten streak running through the middle. A dusting of confectioners' sugar and a drizzle of melted white chocolate finish it like a plated dessert. From first slice of berry to first bite, the whole thing takes about ten minutes, which makes it as natural for a weeknight craving as for a late-night treat.

Ingredients

Makes 2 halves, cut into wedges · serves 2
  • 1 10-inch flour tortilla
  • 1/3 cup hazelnut-chocolate spread
  • 2 oz mascarpone cheese
  • 1 cup fresh strawberries, thinly sliced
  • 2 tbsp mini chocolate chips
  • 1 tbsp salted butter, softened
  • 1/4 tsp ground cinnamon
  • Confectioners' sugar, to taste, for dusting
  • 1 oz white chocolate, melted, for drizzling
Contains: gluten, soy, milk, tree nuts

Why this recipe works

The method works because it borrows the logic of a grilled cheese and applies it to dessert. A flour tortilla has just enough fat and moisture to blister beautifully against a hot pan, and folding it in half creates a sealed pocket that traps steam just long enough to soften the filling without soaking the crust.

The mascarpone is not decoration: it buffers the hazelnut spread, which would otherwise melt into a thin, scorching syrup, and turns the center into a thick, glossy cream that holds the strawberries in suspension.

The cinnamon butter does double duty as frying fat and flavoring. Salted butter seasons the crust from the outside, the cinnamon caramelizes against the hot pan and perfumes the whole quesadilla, and the thin coat of fat conducts heat evenly so the tortilla browns in uniform patches rather than in random scorched spots. Two minutes per side is the window where the crust is fully crisp but the berries have barely begun to release their juice, so the interior stays creamy instead of watery.

Notes and substitutions

Choose a pliable, fresh 10-inch flour tortilla; a dried-out one cracks along the fold instead of curving around the filling. Hazelnut-chocolate spread straight from the jar is often stiff, so warm it briefly if it drags the tortilla as it spreads.

Mascarpone should be cold from the refrigerator, which makes it easier to spread in a thin layer next to the softer chocolate spread. Look for firm, ruby-red strawberries that smell like strawberries; soft or underripe berries either leak water or taste flat against the rich filling.

A nonstick skillet makes flipping stress-free, but a well-seasoned cast-iron pan gives the deepest caramelization if the butter coat is generous. Mini chocolate chips are worth seeking out over regular chips because they distribute evenly instead of clustering into one molten pocket.

All amounts for the filling come straight from the dish as shown; the pinch of cinnamon in the butter and the quantity of white chocolate for drizzling are set to typical amounts for a single quesadilla. If making two small quesadillas instead, halve the filling for each.

  • mascarpone cheese: An equal amount of softened cream cheese works well; it is slightly tangier but spreads just as smoothly and keeps the filling from turning runny.
  • hazelnut-chocolate spread: Any smooth chocolate-hazelnut spread works; or use plain chocolate spread if tree nuts are a concern, noting the flavor will be less nutty.
  • 10-inch flour tortilla: Two small 6-inch flour tortillas make two individual quesadillas; reduce the filling by half for each one and sear them one at a time.
  • mini chocolate chips: Regular chocolate chips, chopped, or finely chopped chocolate bar pieces hold their shape just as well against the warm filling.
