Tips for success
For the most flavorful results, consider searing the pork shoulder in a hot skillet with a little oil before adding it to the slow cooker. While this adds a step, it creates a deep, caramelized crust that enhances the overall taste of the dish.
If you're short on time, you can skip this – the slow cooker will still deliver a delicious meal. Another tip is to use a good-quality brown gravy – it makes a difference. You can also add a splash of Worcestershire sauce or a few sprigs of fresh thyme to the pot for extra depth, though the video doesn't show these additions.
To make the dish even more convenient, you can prepare the gravy and peel the shallots the night before. Store them in the refrigerator in separate containers. In the morning, just assemble everything in the slow cooker and set it.
This recipe is also great for meal prep – the leftovers taste even better the next day as the flavors meld. If you're serving a crowd, you can easily double the recipe, but make sure your slow cooker is large enough (at least 8 quarts) and adjust the cooking time slightly.
Variations
- Add Herbs: Sprinkle fresh thyme or rosemary over the roast before cooking. The herbs infuse the gravy with an earthy, aromatic note that complements the pork beautifully.
- Spice It Up: Add a teaspoon of smoked paprika or a pinch of cayenne pepper to the gravy for a subtle smoky heat. A few sliced jalapeños can also be added with the vegetables.
- Use Beef: Swap the pork shoulder for a beef chuck roast. The cooking time remains the same, and you'll get a rich, beefy flavor that pairs well with the brown gravy.
- Add Potatoes: Place baby potatoes or quartered red potatoes in the bottom of the slow cooker under the roast. They'll absorb the savory gravy and become tender and delicious.

Leftover pork and vegetables can be stored in an airtight container in the refrigerator for up to 4 days. The gravy will thicken as it cools; you can thin it with a little broth or water when reheating. For longer storage, freeze the pork and vegetables in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
This recipe is perfect for making ahead. You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed.
Alternatively, you can cook the full recipe, shred the pork, and store it in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave. The flavors will deepen over time.
Serving ideas
Serve this slow-cooker pork shoulder over a bed of creamy mashed potatoes, egg noodles, or rice to soak up the luscious gravy. The tender vegetables are a perfect side, but you can also add a simple green salad or steamed broccoli for a pop of color.
For a heartier meal, pile the pork onto toasted brioche slider buns – the video shows this serving style – and top with a spoonful of the gravy-soaked vegetables.
This dish is a crowd-pleaser that pairs well with a variety of sides. For a cozy dinner, serve with crusty bread to sop up every last drop of sauce. If you have leftovers, they make excellent sandwiches – just pile the pork onto a bun with some of the shallots and carrots. The rich, savory-sweet flavor is satisfying on its own, so you don't need much else on the plate.

Slow-Cooker Shallot Carrot Brown Gravy Pork Shoulder

Ingredients
- 4 lb boneless Boston butt pork shoulder roast
- 8 whole peeled whole shallots
- 1 lb baby carrots
- 2 cups rich brown gravy
- 4 tbsp unsalted butter, cut into pats
Instructions
- Place the pork shoulder roast in the center of a 6-quart slow cooker. Scatter the whole shallots and baby carrots around the roast, tucking them into any gaps. The vegetables will braise in the meat juices and gravy as the roast cooks.
- Pour the rich brown gravy evenly over the roast and vegetables. Dot the top of the roast with the unsalted butter pats. The butter adds richness and helps create a glossy sauce as it melts.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the pork is fork-tender and shreds easily. The long, slow cooking breaks down the collagen in the shoulder, making it succulent and pull-apart tender. Let it rest for 3 minutes before slicing.
- Transfer the roast to a cutting board and let it rest for at least 3 minutes. Using two forks, shred the pork into bite-sized ribbons, discarding any large pieces of fat. Return the shredded meat to the slow cooker and stir it into the gravy and vegetables.
- Spoon the pulled pork, shallots, and carrots onto plates or into toasted brioche slider buns. Ladle extra gravy over the top. Serve hot.
