Tips for success
For the best texture, use a good-quality dark chocolate with at least 70% cocoa solids. The higher percentage gives a deeper, less sweet flavor that balances the sweetness of the honey and halva.
If you prefer a milder chocolate, you can use 60% but reduce the honey slightly to avoid an overly sweet bar. Keep the chocolate cool while grating—if it starts to soften, pop it in the freezer for a few minutes.
When swirling the tahini honey, use a light hand. You want distinct ribbons rather than a fully blended mixture, so that each bite has pockets of nutty sweetness.
If the tahini honey mixture is too thick to drizzle, warm it gently in the microwave for a few seconds. For a cleaner slice, use a sharp knife and wipe it between cuts. If the bars crack, let them sit at room temperature for a few minutes before slicing.
Variations
- Swap the Nuts: Replace pistachios with chopped almonds, hazelnuts, or walnuts for a different crunch. Adjust the amount to taste, and toast the nuts lightly if desired for extra flavor.
- Add Spices: Sprinkle a pinch of sea salt, cardamom, or cinnamon over the topping before chilling. These spices complement the chocolate and tahini beautifully.
- Use Milk Chocolate: For a sweeter, creamier bar, substitute milk chocolate for the dark chocolate. Reduce the honey to 2 tablespoons to balance the sweetness.
- Make It Vegan: Use vegan dark chocolate and replace honey with maple syrup or agave nectar. Ensure the halva is vegan-friendly (some brands contain honey). Check labels to confirm all ingredients are plant-based.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 1 week. Keep them cold to maintain the firm texture.
- Freezer
- Wrap the bars tightly in plastic wrap and then in foil, or place in a freezer-safe container. Freeze for up to 2 months.
- Reheat
- No reheating needed—serve cold. If frozen, thaw in the refrigerator overnight.
Store the bars in an airtight container in the refrigerator for up to 1 week. They are best enjoyed cold, straight from the fridge, as the chocolate stays firm and snappy. If the bars are left at room temperature for too long, the chocolate may soften and the topping may become less crunchy. For longer storage, see the freezer instructions below.
These bars are ideal for making ahead. Prepare the full recipe, then store in the refrigerator for up to 3 days before serving. They can also be made up to a week in advance if kept refrigerated.
The texture remains excellent, and the flavors meld nicely over time. For longer storage, freeze the bars (see below) and thaw in the refrigerator before serving.
Serving ideas
Serve the bars cold, straight from the refrigerator, for the best snap and texture. Arrange them on a platter or individual plates.
They pair beautifully with a cup of strong coffee or tea, as the bitterness of the coffee complements the sweetness of the chocolate and honey. For a more elegant presentation, dust the bars with a little cocoa powder or flaky sea salt just before serving.
These bars are also wonderful for gifting—wrap them in parchment paper and tie with twine. They travel well and are a thoughtful homemade present. For a dinner party, cut them into smaller pieces and serve as a bite-sized dessert with dessert wine or a digestif. The combination of chocolate, tahini, and halva is sophisticated and memorable.

Pistachio Tahini Halva Dark Chocolate Bars

Ingredients
- 12 oz 70% dark chocolate, finely grated
- 1/2 cup tahini
- 1/4 cup honey
- 1 cup roasted pistachios, chopped
- 8 oz sesame tahini halva, crumbled
Instructions
- Using a sharp chef's knife, chop the roasted pistachios into coarse pieces. Crumble the sesame tahini halva into small chunks with your fingers or a fork. Grate the dark chocolate on a box grater into a pile of fine curls; reserve about one-third of the chocolate for the topping.
- Place the remaining two-thirds of the grated chocolate in a heatproof bowl set over a saucepan of barely simmering water. Stir gently until completely melted and smooth. Remove from heat and let cool slightly, about 2 minutes.
- In a small bowl, stir together the tahini and honey until smooth and well combined. The mixture should be pourable but not too thin.
- Line a metal tray with parchment paper. Pour the melted chocolate into the tray and spread it into an even layer about 1/2 inch thick. Tilt the tray to help the chocolate reach the edges evenly.
- Drizzle the tahini honey mixture in ribbons across the surface of the chocolate. Use a knife or skewer to gently swirl the ribbons into the chocolate, creating a marbled pattern.
- Sprinkle the crumbled halva and chopped pistachios evenly over the top. Gently press them into the chocolate so they adhere. Scatter the reserved grated chocolate over the top for extra texture.
- Place the tray in the refrigerator and chill until the chocolate is completely set and firm, about 1 hour. The slab should be solid and easy to lift from the parchment.
- Remove the chilled slab from the tray and peel off the parchment. Use a sharp knife to slice the slab into thick bars, about 2 inches wide. Cut through cleanly in one motion to avoid crumbling.
