Tips for success
For the most dramatic lava flow, serve the cakes within 5 minutes of coming out of the oven. The ganache will continue to set as it cools, so timing is crucial.
If you need to hold them briefly, keep them in the ramekins on a warm (not hot) surface, but expect the lava to be less runny. To ensure even baking, use ramekins of the same size and fill them to the same level.
To make the pistachio ganache ahead, freeze the dollops on a parchment-lined plate, then transfer them to a zip-top bag for up to a month. When ready to bake, no need to thaw—just pop them in the batter.
For a more intense pistachio flavor, lightly toast the roasted pistachios before chopping to enhance their nutty aroma. A pinch of flaky sea salt on top before serving can also elevate the flavors, though it is not in the video.
Variations
- Classic Chocolate Lava: Replace the pistachio ganache with a simple dark chocolate ganache: heat 1/2 cup heavy cream and pour over 4 oz chopped dark chocolate. Stir until smooth, then freeze in dollops.
- Hazelnut Lava: Use hazelnut spread or hazelnut butter in place of pistachio cream, and garnish with chopped roasted hazelnuts. The combination of chocolate and hazelnut is a timeless favorite.
- Salted Caramel Lava: Fill the cakes with a frozen salted caramel sauce. Use a thick caramel that will hold its shape when frozen. Add a pinch of sea salt to the batter for a sweet-salty contrast.
- Berry Lava: For a fruity twist, use a raspberry or strawberry coulis that has been thickened with a little cornstarch and frozen into dollops. The tartness of the berries cuts through the rich chocolate.
Storage and make-ahead
- Fridge
- Store leftover cakes in an airtight container in the refrigerator for up to 2 days.
- Freezer
- Unbaked assembled cakes can be frozen for up to 1 month. Bake from frozen, adding 3-5 minutes to the baking time.
- Reheat
- To reheat a baked cake, microwave on medium power for 20-30 seconds or place in a 350°F (175°C) oven for 5-8 minutes.
These cakes are best served fresh from the oven, as the molten center is the star. If you have leftovers, they can be stored in the refrigerator for up to 2 days, but the lava will set completely.
To reheat, microwave on medium power for 20-30 seconds, but the texture will be different—more like a traditional chocolate cake with a soft center. For best results, bake only as many as you plan to serve.
The pistachio ganache can be prepared and frozen up to 1 month in advance. The batter can also be assembled in the ramekins up to 24 hours ahead, covered, and refrigerated. If baking from chilled, add 2-3 minutes to the baking time. Remove from the refrigerator 30 minutes before baking to take off the chill, and adjust the oven time accordingly.
Serving ideas
Serve the cakes warm, directly from the oven, with the pistachio lava flowing. A dusting of powdered sugar over the top adds a classic touch, though the video does not show it.
For an extra indulgence, pair with a scoop of vanilla ice cream or a dollop of whipped cream—the cold and hot contrast is delightful. The crunchy pistachios on top provide a textural contrast.
For a special occasion, present each cake on a small plate with a drizzle of extra pistachio cream or a few fresh berries. These cakes are rich, so a small portion is satisfying. They pair beautifully with a strong espresso or a dessert wine. The dramatic green and black contrast makes them a stunning centerpiece for any dessert table.

Pistachio Lava Chocolate Fondant Cakes

Ingredients
- 1/3 cup Sicilian pistachio cream (or pistachio butter)
- 3/4 cup white chocolate chips
- 6 oz 70% dark chocolate, chopped
- 1/2 cup unsalted butter, plus more for ramekins
- 2 large eggs
- 2 large egg yolks
- 1/4 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/4 tsp fine salt
- 1/4 cup roasted pistachios, chopped
Instructions
- In a small bowl, stir together the pistachio cream and white chocolate chips until well combined. Melt the mixture in a heatproof bowl set over a pot of barely simmering water, stirring frequently, until smooth and glossy. Alternatively, microwave in 20-second bursts, stirring between each. Let cool to room temperature, then scoop into 4 equal dollops onto a parchment-lined plate. Freeze for at least 30 minutes, until firm.
- Preheat the oven to 425°F (220°C). Generously butter the inside of four 6-ounce ramekins, making sure to coat the bottom and sides completely. Place the ramekins on a baking sheet for easy handling.
- In a medium heatproof bowl, combine the chopped dark chocolate and butter. Melt over a pot of barely simmering water, stirring occasionally, until smooth and completely melted. Remove from heat and let cool slightly.
- In a separate large bowl, whisk together the eggs, egg yolks, and granulated sugar until pale, thick, and doubled in volume, about 2-3 minutes. The mixture should fall from the whisk in a thick ribbon.
- Gently fold the melted chocolate mixture into the egg mixture using a rubber spatula, until just combined. Sift the flour and salt over the top and fold again until no dry streaks remain. The batter should be smooth and glossy.
- Spoon a small amount of batter into each ramekin, just enough to cover the bottom. Place a frozen pistachio ganache dollop in the center of each. Top with the remaining batter, covering the ganache completely. Smooth the tops with a spatula.
- Place the baking sheet with the ramekins in the preheated oven. Bake for exactly 12 minutes, until the edges are set and the tops are slightly domed but still soft in the center. The cakes should jiggle slightly when gently shaken.
- Remove the ramekins from the oven and let them rest on a wire rack for 1 minute. Run a thin knife around the edge of each cake to loosen, then carefully invert onto serving plates. The cakes should release cleanly.
- Sprinkle the chopped roasted pistachios generously over the top of each warm cake. Serve immediately, while the centers are still molten. The contrast of the dark cake and bright green lava is the showstopper.
