Before you start

Before starting, make sure the pistachio ganache is frozen solid. This can be done up to 2 days ahead, which makes the final assembly quick. Butter the ramekins generously and place them on a baking sheet.

Preheat the oven to 425°F (220°C) about 15 minutes before baking. Gather all ingredients and equipment, and have the eggs at room temperature for the best volume when whisking. Measuring the chocolate and butter in advance will streamline the process.

Ingredients at a glance (10)
  • 1/3 cup Sicilian pistachio cream (or pistachio butter)
  • 3/4 cup white chocolate chips
  • 6 oz 70% dark chocolate, chopped
  • 1/2 cup unsalted butter, plus more for ramekins
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 tsp fine salt
  • 1/4 cup roasted pistachios, chopped

Instructions

Prepare the Pistachio Filling

  1. Make the pistachio ganache filling
In a small bowl, stir together the pistachio cream and white chocolate chips until well combined. Melt the mixture in a heatproof bowl set over a pot of barely simmering water, stirring frequently, until smooth and glossy. Alternatively, microwave in 20-second bursts, stirring between each. Let cool to room temperature, then scoop into 4 equal dollops onto a parchment-lined plate. Freeze for at least 30 minutes, until firm.
Look for The ganache should be thick enough to hold its shape when scooped, but still soft and pliable.
Tip Freezing the ganache solid is key to keeping it molten during baking.
  2. Prep the ramekins
Preheat the oven to 425°F (220°C). Generously butter the inside of four 6-ounce ramekins, making sure to coat the bottom and sides completely. Place the ramekins on a baking sheet for easy handling.
Look for The butter coating should be even and visible on all surfaces.
Tip Use a pastry brush to reach the corners and avoid dry spots.
  3. Melt the chocolate and butter
In a medium heatproof bowl, combine the chopped dark chocolate and butter. Melt over a pot of barely simmering water, stirring occasionally, until smooth and completely melted. Remove from heat and let cool slightly.
Look for The mixture should be glossy and free of lumps.
Tip Do not overheat, or the chocolate may seize.

The pistachio ganache should be smooth, glossy, and thick enough to scoop into dollops. After freezing, the dollops should be firm to the touch and hold their shape. The melted chocolate and butter should be smooth and slightly cooled. The egg mixture should be pale and thick, with a ribbon-like consistency when lifted. The batter should be smooth and cohesive, with no lumps of flour.

Assemble and Bake

  1. Whisk the eggs and sugar
In a separate large bowl, whisk together the eggs, egg yolks, and granulated sugar until pale, thick, and doubled in volume, about 2-3 minutes. The mixture should fall from the whisk in a thick ribbon.
Look for The mixture should be pale yellow and hold a ribbon for a few seconds.
Tip Whisking thoroughly helps create a light, airy cake texture.
  2. Combine the batter
Gently fold the melted chocolate mixture into the egg mixture using a rubber spatula, until just combined. Sift the flour and salt over the top and fold again until no dry streaks remain. The batter should be smooth and glossy.
Look for The batter should be uniform in color with no visible flour.
Tip Fold gently to avoid deflating the eggs.
  3. Assemble the cakes
Spoon a small amount of batter into each ramekin, just enough to cover the bottom. Place a frozen pistachio ganache dollop in the center of each. Top with the remaining batter, covering the ganache completely. Smooth the tops with a spatula.
Look for The ganache should be fully enclosed by batter, with no edges showing.
Tip Make sure the ganache is not touching the sides of the ramekin, or it may leak.

When the cakes come out of the oven, the tops should be puffed and slightly cracked, and the edges should be set. The center should look soft and slightly sunk. The aroma of chocolate and pistachio should fill the kitchen.

Let them rest for a minute, then carefully invert onto plates. The exterior should be a deep brown with a delicate crust, while the interior should be moist and tender.

Unmold and Serve

  1. Bake the cakes
Place the baking sheet with the ramekins in the preheated oven. Bake for exactly 12 minutes, until the edges are set and the tops are slightly domed but still soft in the center. The cakes should jiggle slightly when gently shaken.
Look for The tops should be set but the center should feel soft and slightly wobbly.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Do not overbake, or the lava center will set.
  2. Rest and unmold
Remove the ramekins from the oven and let them rest on a wire rack for 1 minute. Run a thin knife around the edge of each cake to loosen, then carefully invert onto serving plates. The cakes should release cleanly.
Look for The cakes should slide out easily and hold their shape.
Tip If they stick, gently tap the bottom of the ramekin.
  3. Garnish and serve
Sprinkle the chopped roasted pistachios generously over the top of each warm cake. Serve immediately, while the centers are still molten. The contrast of the dark cake and bright green lava is the showstopper.
Look for The pistachios add a crunchy texture and vibrant color contrast.
Tip Serve with a small spoon to scoop up the flowing ganache.

The cakes should release from the ramekins cleanly, retaining their shape. When you cut into the cake with a spoon or knife, the green pistachio ganache should flow out slowly, creating a river of molten filling. The chopped pistachios should cling to the top and add a crunchy texture. Serve immediately to enjoy the full lava effect.

Common mistakes

One common mistake is overbaking the cakes, which leads to a solid center instead of a molten lava. To avoid this, start checking for doneness at 10 minutes and trust the visual cues. Another issue is the ganache leaking out during baking, which happens if the ganache is not frozen solid or if it is placed too close to the edge of the ramekin.

Ensure the ganache is completely enclosed by batter. Also, do not skip buttering the ramekins, as this helps the cakes release cleanly. Finally, let the cakes rest briefly after baking to prevent them from falling apart when unmolding.

How to tell it’s done

The cakes are done when the edges are set and the tops are slightly domed, but the centers still look soft and slightly underdone. A gentle shake of the ramekin should produce a subtle wobble in the middle.

If using a thermometer, the center of the cake should reach 160°F (71°C) to ensure the eggs are fully cooked. Overbaking will result in a fully set center, so err on the side of a shorter baking time. Let them rest for 1 minute before unmolding to allow the structure to firm up slightly.
