Tips for success
For perfectly clean slices, use a large chef's knife dipped in hot water and wiped dry between cuts. This prevents the layers from smearing.
Also, let the cheesecake sit at room temperature for 10-15 minutes before slicing if it's too firm, but don't let it soften too much. To make the chocolate curls, use a vegetable peeler on a thick block of chocolate, or grate on a box grater for finer shavings.
When making the ganache, heat the cream until just simmering, then pour it over the chopped chocolate. Let it sit for 2 minutes, then stir until smooth and glossy. If the ganache is too thick, warm it slightly.
For the caramel swirl, use a thick caramel sauce that holds its shape when swirled. If your caramel is too thin, refrigerate it briefly to thicken it before using.
Variations
- Chocolate Cookie Crust: Swap the pretzels for crushed chocolate sandwich cookies for a sweeter, crunchier base. Omit the salt and use a chocolate cookie crust instead of the pretzel layer.
- Salted Caramel Drizzle: Add a pinch of flaky sea salt to the caramel sauce before drizzling for an extra salty-sweet contrast. This enhances the caramel flavor and balances the richness.
- Dark Chocolate Peanut Butter Cups: Use dark chocolate peanut butter cups instead of milk chocolate for a deeper chocolate flavor. This pairs well with the dark chocolate ganache and adds a sophisticated touch.
- Gluten-Free Option: Use gluten-free pretzels and ensure all other ingredients are certified gluten-free. This allows those with gluten sensitivities to enjoy the cheesecake without compromising texture.
Storage and make-ahead
- Fridge
- Store leftover cheesecake in an airtight container in the refrigerator for up to 5 days. Keep it covered to prevent drying out.
- Freezer
- Freeze the cheesecake (without toppings) for up to 2 months. Wrap tightly in plastic wrap and foil. Thaw overnight in the refrigerator before serving.
- Reheat
- No reheating needed—serve chilled. If the cheesecake is too firm, let it sit at room temperature for 10 minutes before slicing.
Store the cheesecake in an airtight container in the refrigerator for up to 5 days. Cover it loosely with plastic wrap or foil to prevent it from absorbing odors. For longer storage, freeze the cheesecake (without the topping) for up to 2 months. Thaw in the refrigerator overnight before serving.
This cheesecake is an excellent make-ahead dessert. Prepare and bake it up to 2 days in advance, then keep it chilled.
Decorate with the peanut butter cups and caramel drizzle just before serving to keep the toppings fresh. The cheesecake also freezes well; wrap it tightly in plastic wrap and foil, then freeze for up to 2 months.
Serving ideas
Serve the cheesecake chilled, straight from the refrigerator, for the best texture. Slice it with a warm knife and lift each piece with a metal cake server to keep the layers intact. A drizzle of extra caramel sauce and a sprinkle of flaky sea salt on top can enhance the flavors, if desired.
This cheesecake pairs beautifully with a cup of strong coffee or a glass of cold milk. For a more indulgent dessert, serve with a scoop of vanilla ice cream or a dollop of whipped cream.
The contrast of warm coffee and cold cheesecake is delightful. Store any leftovers in the refrigerator, covered, and enjoy within a few days.

Caramel Pretzel Peanut Butter Fudge Cheesecake

Ingredients
- 1 1/2 cups golden salted pretzels, crushed
- 12 chocolate peanut butter cups, halved
- 4 oz milk chocolate, grated into curls
- 32 oz cream cheese, softened
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 3 large eggs
- 2 tsp vanilla extract
- 1/2 cup heavy cream
- 8 oz dark chocolate, chopped
- 1 cup heavy cream
- 1/2 cup caramel sauce, warm
- 1/4 cup caramel sauce, warm
Instructions
- Crush the golden salted pretzels into coarse crumbs, leaving some small pieces for texture. Halve the chocolate peanut butter cups and set aside. Grate the milk chocolate on a box grater into a pile of glossy curls. Keep all components ready before making the batter.
- In a large bowl, beat the softened cream cheese and creamy peanut butter until smooth. Add the granulated sugar and beat until fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and heavy cream until fully combined.
- Pour the peanut butter cheesecake batter into a 9-inch springform pan. Pour the warm dark chocolate fudge ganache over the top, spreading it gently. Swirl in the salted amber caramel ribbons and sprinkle with crushed pretzels.
- Place the springform pan in a water bath and bake in a preheated 325°F (163°C) oven for about 70 minutes, or until the center is just set and the top is lightly golden. The internal temperature should reach 160°F (71°C) for the eggs.
- Remove the cheesecake from the water bath and let it cool completely on a wire rack for 1 hour. Then refrigerate for at least 4 hours, or overnight, until fully chilled and set.
- Once chilled, remove the cheesecake from the springform pan. Crown the top with halved chocolate peanut butter cups and drizzle with warm caramel sauce. Slice a thick triangular wedge and lift it onto a plate with a metal cake server.
