Before you start

Before starting, bring the cream cheese, eggs, and heavy cream to room temperature so the batter mixes smoothly. Crush the pretzels to a coarse consistency, halve the peanut butter cups, and grate the chocolate into curls.

Preheat the oven to 325°F (163°C) and prepare a water bath by boiling water. Have all ingredients and equipment ready to streamline the process.

Ingredients at a glance (13)
  • 1 1/2 cups golden salted pretzels, crushed
  • 12 chocolate peanut butter cups, halved
  • 4 oz milk chocolate, grated into curls
  • 32 oz cream cheese, softened
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup heavy cream
  • 8 oz dark chocolate, chopped
  • 1 cup heavy cream
  • 1/2 cup caramel sauce, warm
  • 1/4 cup caramel sauce, warm

Instructions

Prepare the Components

  1. Prepare the Crunch and Curls
Crush the golden salted pretzels into coarse crumbs, leaving some small pieces for texture. Halve the chocolate peanut butter cups and set aside. Grate the milk chocolate on a box grater into a pile of glossy curls. Keep all components ready before making the batter.
Look for Pretzel crumbs are coarse, chocolate curls are thin and glossy.
Tip Chill the chocolate before grating for cleaner curls.
  2. Make the Peanut Butter Batter
In a large bowl, beat the softened cream cheese and creamy peanut butter until smooth. Add the granulated sugar and beat until fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and heavy cream until fully combined.
Look for Batter is smooth, thick, and creamy.
Tip Use room-temperature ingredients to avoid lumps.

At the end of this phase, you should have crushed pretzels, halved peanut butter cups, and a pile of chocolate curls.

The pretzel crumbs should be coarse, the chocolate curls thin and glossy. The batter should be smooth, thick, and creamy with no lumps. Everything is ready to assemble.

Assemble and Bake

  1. Assemble the Layers
Pour the peanut butter cheesecake batter into a 9-inch springform pan. Pour the warm dark chocolate fudge ganache over the top, spreading it gently. Swirl in the salted amber caramel ribbons and sprinkle with crushed pretzels.
Look for Ganache is evenly spread, caramel swirls visible.
Tip Pour ganache slowly to avoid disturbing the cheesecake layer.
  2. Bake the Cheesecake
Place the springform pan in a water bath and bake in a preheated 325°F (163°C) oven for about 70 minutes, or until the center is just set and the top is lightly golden. The internal temperature should reach 160°F (71°C) for the eggs.
Look for Edges are set, center is slightly jiggly but not wet.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Use a water bath to prevent cracking.

The cheesecake is assembled with the batter, ganache, caramel, and pretzels, then baked in a water bath. After baking, the top should be lightly golden, the edges set, and the center slightly jiggly but not wet. The internal temperature should reach 160°F (71°C).

Chill and Decorate

  1. Cool and Chill
Remove the cheesecake from the water bath and let it cool completely on a wire rack for 1 hour. Then refrigerate for at least 4 hours, or overnight, until fully chilled and set.
Look for Cheesecake is firm and cold.
Tip Chill overnight for cleaner slices.
  2. Decorate and Serve
Once chilled, remove the cheesecake from the springform pan. Crown the top with halved chocolate peanut butter cups and drizzle with warm caramel sauce. Slice a thick triangular wedge and lift it onto a plate with a metal cake server.
Look for Top is decorated, slices are clean and tall.
Tip Warm the knife in hot water for neat slices.

After cooling and chilling, the cheesecake should be fully firm and cold. The top is decorated with halved peanut butter cups and a warm caramel drizzle. Slicing should be clean, revealing tall layers of cheesecake, ganache, and pretzel crunch.

Common mistakes

A common mistake is overmixing the batter, which incorporates too much air and can cause cracks during baking. Mix just until smooth. Another issue is skipping the water bath—this leads to uneven baking and a cracked surface.

Also, avoid opening the oven door during baking, as temperature fluctuations can cause the cheesecake to sink. Finally, don't rush the chilling process; the cheesecake needs at least 4 hours to set properly, and overnight is even better.

How to tell it’s done

The cheesecake is done when the edges are set and the center is just slightly jiggly—it will continue to set as it cools. The internal temperature should read 160°F (71°C) on an instant-read thermometer inserted into the center.

The top should be lightly golden and the ganache layer should be set but still slightly shiny. Overbaking can cause cracks, so check at the 60-minute mark and adjust accordingly.

  • Egg dishes: 160°F (71°C) in the thickest part
