Tips for success
For the cleanest slices, use a sharp knife and wipe it between cuts. You can also dip the knife in hot water and dry it before slicing – this helps the blade glide through the creamy texture without dragging.
If the cake is too soft, return it to the refrigerator for a few more minutes before slicing.
To enhance the coffee flavor, you can add a pinch of instant espresso powder to the chocolate cream.
For a decorative touch, dust the cocoa powder through a fine-mesh sieve to ensure an even, snow-like coverage. Serve with a dollop of whipped cream or a few fresh berries if desired.
Variations
- Mocha Twist: Add 1 tablespoon of instant espresso powder to the milk mixture before cooking for an extra coffee kick. You can also sprinkle a layer of crushed espresso beans over the cream before chilling.
- Raspberry Swirl: After pouring the chocolate cream into the tin, drop spoonfuls of raspberry jam over the surface and use a knife to create a marbled effect. Chill as directed.
- Orange Zest: Stir 1 tablespoon of orange zest into the chocolate cream before pouring. The citrus flavor complements the chocolate beautifully. Garnish with candied orange peel.
- Nutty Crunch: Sprinkle a layer of toasted hazelnuts or almonds over the ladyfinger base before pouring the cream. The nuts add a delightful crunch that contrasts with the smooth texture.
Storage and make-ahead
- Fridge
- Store covered in the refrigerator for up to 4 days. Keep in an airtight container or wrap tightly with plastic wrap.
- Freezer
- Freeze the cake (without cocoa dusting) for up to 2 months. Wrap tightly in plastic wrap and then foil. Thaw overnight in the refrigerator before serving.
- Reheat
- This cake is best served cold, so no reheating is needed. If frozen, thaw in the refrigerator overnight.
Store the cake in the refrigerator, covered, for up to 4 days. The texture will remain creamy and delicious. Keep it covered to prevent it from absorbing other odors in the fridge.
This cake is ideal for making ahead. Prepare it the day before and keep it chilled until serving. The flavors meld together beautifully overnight, and the texture becomes even more cohesive.
Serving ideas
Serve the cake chilled, straight from the refrigerator. It’s rich and satisfying on its own, but a light dusting of cocoa and a few coffee beans on top can elevate the presentation.
Pair it with a cup of espresso or a glass of cold milk for a delightful contrast.
For a more indulgent dessert, serve with a scoop of vanilla ice cream or a drizzle of chocolate sauce.
The cake is also lovely with a dollop of lightly sweetened whipped cream and a sprinkle of sea salt to balance the sweetness.

Velvety Chocolate Mousse Cake with Cocoa Dusting

Ingredients
- 1/2 cup milk
- 2 tbsp sugar
- 1 heaping tbsp cornstarch
- 1 1/2 cups heavy cream
- 200 g chopped milk and dark chocolate
- ladyfinger biscuits, to taste
- brewed espresso milk, to taste
- unsweetened cocoa powder, for dusting, to taste
Instructions
- In a saucepan, whisk together the milk, sugar, and cornstarch until smooth. Place over medium heat and cook, whisking constantly, until the mixture thickens into a custard-like consistency. Stir in the heavy cream and continue to whisk until fully incorporated and hot.
- Remove the saucepan from the heat. Add the chopped milk and dark chocolate to the hot cream mixture and stir continuously until the chocolate is completely melted and the mixture is glossy, silky, and deeply velvety.
- Pour the brewed espresso milk into a shallow dish. Quickly dip each ladyfinger biscuit into the espresso milk, turning to coat both sides, but do not soak them for too long.
- Arrange the soaked ladyfingers in a tight, uniform layer at the bottom of a springform cake tin. Break a few biscuits to fill any gaps, ensuring the base is completely covered.
- Pour the warm, luscious chocolate custard cream over the biscuit base. Use an offset spatula to smooth the top into an even layer.
- Place the cake in the refrigerator and chill for at least 4 hours, or until the cream is firmly set and the cake holds its shape when sliced.
- Before serving, dust the top generously with unsweetened cocoa powder. Slice a tall, clean slice using a sharp knife, and serve chilled.
