Tips for success
For the crispiest kadayıf, toast it in a wide pan so the strands spread out and brown evenly. Don’t overcrowd the pan—if needed, work in batches. Use a light hand when stirring to avoid breaking the strands too much, but do stir frequently to prevent burning.
The sugar will caramelize and create a glossy coating; that’s exactly what you want. Let the kadayıf cool completely on a plate, not in the pan, so it doesn’t steam and soften.
When folding the whipped cream into the pudding, use a rubber spatula and cut through the center, then sweep around the side. Repeat until just combined—overmixing will deflate the mixture.
If the pudding is very thick, fold in a spoonful of whipped cream first to loosen it, then add the rest. For clean slices, use a sharp knife dipped in hot water and wipe between cuts. Serve chilled, straight from the fridge.
Variations
- Chocolate Kadayıflı Muhallebi: Melt 4 oz (115 g) of semisweet chocolate into the warm pudding after removing from heat. Stir until smooth, then proceed with chilling and folding in the whipped cream. The chocolate adds a rich depth that pairs beautifully with the crunchy kadayıf.
- Citrus-Scented Pudding: Add 1 teaspoon of finely grated orange or lemon zest to the milk before cooking. The bright citrus flavor cuts through the richness and complements the nuts. Use a little extra vanilla for a warmer aroma.
- Pistachio Crunch: Replace the walnuts with an equal amount of shelled pistachios, roughly chopped. Toast them with the kadayıf as directed. Pistachios offer a vibrant green color and a slightly sweeter, more delicate flavor that’s classic in Turkish desserts.
- Individual Parfaits: Layer the kadayıf and pudding in small glasses or jars instead of a baking dish. Alternate layers, starting and ending with kadayıf. Chill before serving. This makes portioning easy and creates a beautiful presentation for parties.
Storage and make-ahead
- Fridge
- Store in the refrigerator for up to 3 days, covered. The kadayıf will soften over time; refresh with extra toasted kadayıf before serving if desired.
- Freezer
- This dessert is not recommended for freezing, as the pudding and kadayıf will lose their texture. Enjoy it fresh.
- Reheat
- No reheating needed; serve cold.
Store leftover kadayıflı muhallebi in the refrigerator, covered, for up to 3 days. The top layer of kadayıf will lose some crispness over time, but the dessert will still taste delicious. Keep it in an airtight container to prevent absorbing other odors. For best texture, add a fresh layer of toasted kadayıf just before serving if you have extra.
This dessert is perfect for making ahead. Prepare the kadayıf and the pudding up to 2 days in advance, storing them separately in the refrigerator. Assemble the layers a few hours before serving, then chill until ready.
The assembled dessert can also be made a day ahead, but the top kadayıf may soften slightly. For a crunchy top, sprinkle extra toasted kadayıf just before serving.
Serving ideas
Serve this dessert chilled, straight from the refrigerator. Scoop it into individual bowls or glasses, making sure to get all three layers in each portion. The contrast of cold, creamy pudding and crisp, caramelized kadayıf is best enjoyed immediately after scooping. A light dusting of ground cinnamon or a few extra crushed walnuts on top adds visual appeal, though it’s optional.
This dessert is rich and satisfying, so small portions are ideal. It pairs beautifully with strong Turkish coffee or a cup of black tea. For a more elegant presentation, layer it in individual glasses or parfait cups, alternating the kadayıf and pudding.
The dessert is a showstopper at dinner parties and holiday gatherings, and it’s sure to impress guests with its unique texture and flavor.

Turkish Kadayıflı Muhallebi: Crispy & Creamy Pudding

Ingredients
- 200 g shredded kadayıf pastry
- 3 tbsp butter
- 3 tbsp sugar
- 1/2 cup crushed walnuts
- 4 cups whole milk
- 3/4 cup sugar
- 1/2 cup all-purpose flour
- 3 tbsp cornstarch
- 1 large egg yolk
- 1 tbsp vanilla extract
- 1 cup cold heavy cream
Instructions
- Melt the butter in a large skillet over medium heat. Add the shredded kadayıf pastry and sugar, then cook, stirring constantly, for 10 minutes until deeply golden brown and crisp. Stir in the crushed walnuts and cook for 1 more minute. Remove from heat and let cool completely.
- Spread the toasted kadayıf mixture on a plate or baking sheet in an even layer. Let it cool completely at room temperature. This keeps it crunchy when layered.
- In a medium saucepan, whisk together the milk, sugar, flour, cornstarch, and egg yolk until smooth. Place over medium heat and cook, whisking constantly, until the mixture thickens and begins to bubble. Remove from heat and stir in the vanilla extract.
- Pour the hot pudding into a bowl. Press plastic wrap directly onto the surface to prevent a skin from forming. Refrigerate for at least 2 hours, until completely chilled and set.
- In a large bowl, whip the cold heavy cream with an electric mixer on medium-high speed until stiff peaks form. Gently fold the whipped cream into the chilled pudding until fully combined and cloud-like.
- Spread half of the cooled crispy kadayıf mixture evenly in the bottom of an 8x8-inch glass baking dish. Pour the pudding mixture over the kadayıf and smooth the top. Sprinkle the remaining kadayıf mixture evenly over the pudding.
- Refrigerate the assembled dessert for at least 1 hour before serving. This allows the layers to set and the flavors to meld. Serve chilled, scooping through all layers for the full contrast.
