Tips for success
For the best texture, use fresh, soft Medjool dates. If your dates are dry, soak them in warm water for 10 minutes, then drain well before cooking.
This ensures a smooth paste that binds the nuts perfectly. The butter adds richness, but you can use coconut oil for a dairy-free version.
When rolling the log, use the parchment paper to help shape it tightly. This prevents air pockets and ensures even slices. Chilling for at least 30 minutes is crucial—if the log is not firm enough, the slices will crumble. You can chill it longer or even overnight for a firmer texture.
Variations
- Chocolate Drizzle: After slicing, melt dark chocolate and drizzle over the rounds. Let set before serving. The chocolate adds a rich contrast to the sweet dates and nutty texture.
- Spiced Variation: Add 1/2 teaspoon of ground cardamom or nutmeg along with the cinnamon for a warm, aromatic flavor. This pairs beautifully with the nuts and dates.
- Seed Swap: Replace the sesame seeds with flax seeds or chia seeds for a different texture. You can also use a mix of seeds for added crunch.
- Citrus Zest: Add 1 teaspoon of orange zest to the date mixture for a bright, citrusy note. This complements the sweetness and adds a fresh aroma.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 1 week. Separate layers with parchment paper to prevent sticking.
- Freezer
- Freeze the log or slices in a freezer-safe bag for up to 3 months. Thaw in the refrigerator before serving.
- Reheat
- No reheating needed. Serve chilled or at room temperature.
Store the slices in an airtight container in the refrigerator for up to 1 week. Place parchment paper between layers to prevent sticking.
The coconut coating may soften slightly over time, but the flavor remains delicious. For longer storage, freeze the slices in a single layer, then transfer to a freezer-safe bag.
The entire log can be made ahead and stored in the refrigerator for up to 3 days before slicing. Or slice and store the rounds for up to a week. This makes it perfect for parties and holiday trays. You can also freeze the log for up to 3 months; thaw in the refrigerator before slicing.

These rounds are also lovely when served with a scoop of vanilla ice cream or a dollop of whipped cream. The chewy dates and crunchy nuts provide a wonderful contrast to creamy accompaniments.

- 2 tbsp unsalted butter
- 1/2 cup chopped walnuts
- 1/2 cup sliced almonds
- 1/2 cup whole roasted pistachios
- 1 tsp ground cinnamon
- 1/4 cup toasted sesame seeds
- 1/2 cup unsweetened shredded coconut flakes
Instructions
