Tips for success

For a deeper flavor, toast the whole green cardamom pods and cloves in a dry skillet for 30 seconds before adding them to the slow cooker.

This releases their aromatic oils, which significantly boosts the fragrance of the final dish. Be careful not to burn the spices, as this will introduce a bitter note that can overpower the delicate balance of the curry.

If you prefer a spicier curry, you can add a small amount of cayenne pepper alongside the Kashmiri red chili powder.

Kashmiri chili is prized more for its vibrant red color than its intense heat, so adjusting the spice level with a more pungent chili powder allows you to customize the heat to your personal preference without sacrificing the characteristic color of the Rogan Josh.

Variations

  • Lamb Rogan Josh: Substitute the beef chuck with lamb shoulder cut into cubes. Lamb is the traditional protein for this dish and offers a slightly richer, more distinct flavor profile that pairs exceptionally well with the Kashmiri spices.
  • Vegetable Rogan Josh: Replace the beef with hearty vegetables like cauliflower florets, potatoes, and chickpeas. Adjust the cooking time to 4 hours to prevent the vegetables from becoming overly soft, while maintaining the same spice and yogurt base.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days in the refrigerator.
Freezer
Store in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat gently on the stovetop over low heat, adding a splash of water if the sauce has thickened too much, until heated through.

Allow any leftovers to cool at room temperature for no more than 2 hours before transferring them to an airtight container. Place the container in the refrigerator promptly.

The flavors often deepen overnight, making this dish an excellent candidate for meal prep, as the spices continue to mellow and integrate into the meat during the refrigeration period.

This dish is perfect for making ahead as it requires no last-minute preparation and tastes even better the next day. Simply cook it as directed, allow it to cool, and store it in the refrigerator.

When ready to serve, gently reheat it on the stovetop or in the microwave until it is heated through, ensuring you maintain a gentle heat to avoid toughening the beef.

Serving ideas

Serve this Rogan Josh hot, ideally over a bed of fluffy, steamed saffron basmati rice. The rice acts as a perfect canvas for the rich, complex gravy. Garnish with a sprinkle of fresh cilantro if desired, though the traditional version relies on the deep, earthy spice notes of the curry itself to provide the main flavor profile.

Accompany the meal with warm garlic-butter naan or other flatbreads, which are essential for scooping up the thick, flavorful sauce. The contrast between the crunchy, toasted edges of the naan and the tender beef creates a satisfying texture. Ensure the bread is warmed just before serving to maximize the aromatic experience of the garlic and butter.

Frequently asked questions

Can this be made without yogurt?
The yogurt is essential for the creamy, emulsified texture of the gravy. While it can be omitted, the sauce will be significantly thinner and lack the characteristic richness and velvety mouthfeel that defines a traditional Rogan Josh. If dairy is a concern, a high-quality coconut yogurt alternative may be used.
Why is the meat still tough after 8 hours?
If the meat remains tough, it is likely due to the cut used or the slow cooker not reaching the proper temperature. Ensure that you are using beef chuck, which contains the necessary connective tissue that breaks down over time. If the issue persists, verify that your slow cooker is functioning correctly and maintaining the required low heat setting.
Can the spice level be adjusted?
Yes, the spice level is easily adjusted by varying the amount of chili powder used. Kashmiri red chili powder is primarily used for its color and mild heat. For a spicier version, increase the amount of Kashmiri chili or add a small amount of cayenne pepper, tasting the sauce as you adjust to ensure it meets your preference.

Ingredients

  • 3 lb beef chuck cubes
  • 2 tbsp Kashmiri red chili powder
  • 6 pods green cardamom pods
  • 4 whole cloves
  • 2 tbsp ginger-garlic paste
  • 1 cup caramelized onions
  • 150 g Greek yogurt

Instructions

  1. Keep the raw beef chuck cubes in the refrigerator until ready to assemble, keeping it out of the fridge for at most 30 minutes before cooking. Place the beef chuck cubes into the ceramic slow cooker. Add the Kashmiri red chili powder, green cardamom pods, whole cloves, ginger-garlic paste, and caramelized onions. In a separate bowl, whisk the Greek yogurt until smooth before pouring it over the beef mixture to ensure even incorporation.
  2. Cover the slow cooker with the glass lid. Set the device to the LOW heat setting and cook for 8 hours. During this time, the beef will break down and become fork-tender, while the spices and yogurt emulsify into a rich, deep crimson gravy. Do not remove the lid during the first 6 hours to maintain the necessary steam and temperature levels. Ensure the meat reaches an internal temperature of 145°F (63°C) and let it rest for at least 3 minutes.
  3. After the cooking time is complete, turn off the slow cooker and let the beef rest for 10 minutes to allow the juices to redistribute within the meat. Ladle the hot beef Rogan Josh over cooked saffron basmati rice and serve immediately alongside warm garlic-butter naan bread.
