Before you start

Ensure the beef chuck is kept chilled in the refrigerator until ready to use, trimmed of excess fat, and cut into uniform 1.5-inch cubes to promote even cooking. Keep raw meat at room temperature for no more than 30 minutes before slow cooking.

Have all spices measured and ready. If you are caramelizing your own onions, do so in advance until they are a deep golden brown, as this provides the necessary sweetness and complexity to the base of the curry.

Ingredients at a glance (7)
  • 3 lb beef chuck cubes
  • 2 tbsp Kashmiri red chili powder
  • 6 pods green cardamom pods
  • 4 whole cloves
  • 2 tbsp ginger-garlic paste
  • 1 cup caramelized onions
  • 150 g Greek yogurt

Instructions

Ingredient Preparation

  1. Combine ingredients
Keep the raw beef chuck cubes in the refrigerator until ready to assemble, keeping it out of the fridge for at most 30 minutes before cooking. Place the beef chuck cubes into the ceramic slow cooker. Add the Kashmiri red chili powder, green cardamom pods, whole cloves, ginger-garlic paste, and caramelized onions. In a separate bowl, whisk the Greek yogurt until smooth before pouring it over the beef mixture to ensure even incorporation.
Look for The beef should be well-coated in the spice and yogurt mixture.
Tip Whisk the yogurt thoroughly beforehand to prevent it from separating during the long cooking process.

All ingredients should be measured and prepped, with the yogurt whisked until perfectly smooth. The beef chuck should be kept chilled until assembly and arranged uniformly in the slow cooker with the spices and aromatics. This phase is complete once all components are layered in the ceramic pot, ready for the long simmer.

Slow Cooking

  1. Slow cook the curry
Cover the slow cooker with the glass lid. Set the device to the LOW heat setting and cook for 8 hours. During this time, the beef will break down and become fork-tender, while the spices and yogurt emulsify into a rich, deep crimson gravy. Do not remove the lid during the first 6 hours to maintain the necessary steam and temperature levels. Ensure the meat reaches an internal temperature of 145°F (63°C) and let it rest for at least 3 minutes.
Look for The aroma of spices will fill the kitchen and the gravy will appear thickened and deep red.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip If the gravy appears too thin after 8 hours, remove the lid and cook on high for an additional 20 minutes to reduce it.

The kitchen will begin to fill with the aromatic scent of cardamom and cloves. The beef will gradually soften as the collagen breaks down, and the crimson color of the Kashmiri chili will permeate the sauce.

By the end of this phase, the meat should be extremely tender and reach an internal temperature of at least 145°F (63°C).

Serving

  1. Final resting and serving
After the cooking time is complete, turn off the slow cooker and let the beef rest for 10 minutes to allow the juices to redistribute within the meat. Ladle the hot beef Rogan Josh over cooked saffron basmati rice and serve immediately alongside warm garlic-butter naan bread.
Look for The beef should pull apart easily with a fork.
Tip Use a meat thermometer to confirm the beef has reached the safe internal temperature of 145°F (63°C).

The dish is ready when the beef is fork-tender, rested for at least 3 minutes, and the gravy is rich and velvety. The curry should look vibrant and inviting, with a deep red hue that contrasts beautifully with fresh green cardamom pods and the saffron basmati rice served underneath.

Common mistakes

A common mistake is leaving raw meat on the counter too long before assembly; always keep it refrigerated until ready to prepare. Another error is failing to whisk the yogurt thoroughly before adding it, which can cause the sauce to appear lumpy or curdled.

Additionally, avoid overcrowding the slow cooker or lifting the lid prematurely, as this disrupts internal steam and prolongs the required cooking time.

How to tell it’s done

The beef is perfectly cooked when it reaches an internal temperature of 145°F (63°C) and pulls apart easily with a fork without resistance. The gravy should have reduced slightly, appearing thick, glossy, and deep red.

If the sauce is too thin, it may need to be reduced on the stovetop or by keeping the slow cooker lid off for a short period on a high heat setting.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
