Tips for success

To achieve the crispy fried rosemary needles used for the final garnish, heat a small amount of neutral oil in a skillet over medium heat. Add the rosemary needles and fry for about 30 seconds until they turn dark green and crisp.

Remove them immediately and drain on a paper towel. This adds a beautiful, crunchy texture that contrasts perfectly with the tender, slow-cooked meat and provides a fresh, piney aroma that highlights the rosemary used in the slow cooker.

If you prefer a more intense balsamic flavor, you can finish the sauce with a small drizzle of high-quality balsamic glaze just before serving. This adds a vibrant acidity that cuts through the richness of the pork. Additionally, if the sauce seems too thin after shredding the meat, you can transfer the glaze to a saucepan and simmer it over medium-high heat for 5 to 10 minutes to reduce it further before tossing it back with the pork.

Variations

  • Balsamic Fig Pork Tacos: Serve the shredded pork in warm corn tortillas with a dollop of goat cheese and pickled red onions. The acidity of the onions cuts perfectly through the sweet balsamic glaze.
  • Pork and Polenta Bake: Layer the shredded pork in a casserole dish topped with a thin layer of cooked polenta and a sprinkle of parmesan cheese. Broil until the top is golden and bubbling.

Storage and make-ahead

Fridge
Keep in an airtight container for up to 3 days.
Freezer
Store in freezer-safe bags for up to 3 months.
Reheat
Reheat gently in a saucepan over low heat, adding a splash of broth if necessary to loosen the glaze.

Transfer any leftover pork to an airtight container. Allow it to cool at room temperature for no more than 2 hours before placing it into the refrigerator. This ensures food safety while maintaining the quality of the meat.

Properly stored, the pork will remain fresh and flavorful for up to 3 days. For longer storage, the shredded meat can be portioned into freezer-safe bags, removing as much air as possible to prevent freezer burn, and kept for up to 3 months.

This recipe is an excellent candidate for making ahead, as the flavors often deepen after sitting in the refrigerator overnight. You can prepare the entire dish, including the shredding process, a day before serving. Simply reheat the pork gently on the stovetop or in the slow cooker on the low setting until warmed through. If the sauce becomes too thick during reheating, add a tablespoon or two of water or broth to restore the desired consistency to the glaze.

Serving ideas

For a classic presentation, serve the balsamic fig pulled pork over a bed of creamy mascarpone polenta. The richness of the mascarpone complements the sweetness of the figs and the tang of the balsamic vinegar.

Spoon a generous portion of the shredded pork over the center of the polenta, ensuring that plenty of the syrupy glaze is drizzled over the top. Garnish with the crispy rosemary needles to add visual interest and a burst of fragrance that enhances the dining experience.

Alternatively, this pulled pork works exceptionally well in elevated sliders or as a topping for rustic sourdough crostini. For a lighter approach, serve it alongside roasted root vegetables or a crisp arugula salad with a lemon vinaigrette.

The versatility of the balsamic fig glaze makes it a fantastic centerpiece for various side dishes, allowing you to tailor the meal to your preferences while maintaining the core flavor profile that makes this slow-cooked roast so special.

Frequently asked questions

Can the pork be cooked on high instead of low?
Cooking on low is strongly recommended for this recipe. A slow, steady heat is necessary to break down the connective tissues in the pork shoulder correctly. Cooking on high often results in the exterior of the meat becoming tough or dry before the center reaches the desired tender, shreddable consistency.
What is the best way to get a thicker glaze?
If the glaze is too thin after 8 hours, remove the lid and switch the slow cooker to the high setting for the final 30 to 45 minutes. This allows excess moisture to evaporate and concentrates the balsamic and honey sugars, resulting in a much thicker, syrupy consistency that coats the meat beautifully.
Does the pork need to be seared before slow cooking?
While searing is a common step for many roasts, it is not necessary for this specific recipe. The long cooking time in the balsamic and fig glaze allows the flavors to penetrate the meat deeply without the need for initial browning. Skipping this step also makes the recipe a convenient dump-and-go meal.

Ingredients

  • 1 red onion, sliced
  • 4 lb pork shoulder
  • 1 cup Mission figs, halved
  • 3 sprigs fresh rosemary
  • 1/2 cup aged balsamic vinegar
  • 1/3 cup honey
  • 1/2 cup broth

Instructions

  1. Place the sliced red onion at the bottom of the slow cooker insert. Nestle the 4-pound pork shoulder on top of the onions. Scatter the halved Mission figs and rosemary sprigs around the meat, then pour the balsamic vinegar, honey, and broth over the entire assembly.
  2. Cover the slow cooker with the glass lid and set to the LOW temperature setting. Allow the pork to cook for 8 hours until it reaches an internal temperature of at least 145°F (63°C). Once cooked, let the meat rest for at least 3 minutes before shredding.
  3. Once the cooking time is complete and the meat has rested, remove the pork from the slow cooker and transfer it to a cutting board. Use two forks to pull the meat apart into shreds. Return the shredded pork to the glaze in the slow cooker to coat thoroughly. Serve over creamy polenta, garnished with crispy fried rosemary.
