Tips for success
For a crispier potato sheet, try to squeeze out as much moisture as possible from the grated potatoes. You can also sprinkle a little cornstarch over the mixture to help absorb any remaining liquid.
When pressing the potato mixture onto the baking sheet, aim for an even thickness—about 1/4 inch is ideal. Use a ruler or just eyeball it. If the edges brown faster than the center, you can cover the edges with foil halfway through baking.
When rolling, use the parchment paper to lift and guide the sheet. Start at one short end and roll tightly but gently, tucking the filling as you go. If the sheet cracks, don't worry—just press it back together.
To get clean slices, use a sharp serrated knife and wipe it with a damp cloth between cuts. For the best flavor, let the roulade rest for 5-10 minutes after slicing to allow the flavors to meld.
Variations
- Mediterranean Twist: Add crumbled feta cheese, Kalamata olives, and chopped sun-dried tomatoes to the filling. Use spinach instead of lettuce and add a sprinkle of dried oregano for a Greek-inspired flavor.
- Spicy Southwestern: Replace the labneh with a mixture of cream cheese and chopped chipotle peppers in adobo. Add black beans, corn, and sliced jalapeños for a zesty, hearty filling. Top with fresh cilantro.
- Smoked Salmon Deluxe: Spread a layer of dill cream cheese, then add smoked salmon, capers, and thinly sliced cucumber. Use fresh dill and a squeeze of lemon juice for a luxurious brunch version.
- Vegetarian Harvest: Use a layer of hummus instead of labneh, and fill with roasted red peppers, grilled zucchini, and baby spinach. Add crumbled goat cheese for extra creaminess and a drizzle of balsamic glaze before serving.
Storage and make-ahead
- Fridge
- Store leftover roulade slices in an airtight container in the fridge for up to 3 days. Place parchment paper between slices to prevent sticking.
- Freezer
- Freeze the baked potato sheet (without filling) for up to 2 months. Thaw overnight in the fridge, then assemble and bake or roll as directed.
- Reheat
- Reheat slices in a toaster oven at 350°F (175°C) for 5-7 minutes, or in a dry skillet over medium heat for 2-3 minutes per side.
Store any leftover roulade slices in an airtight container in the refrigerator for up to 3 days. To prevent the slices from drying out, place a piece of parchment paper between them.
If the slices become soggy, you can reheat them in a toaster oven or a dry skillet over medium heat for a few minutes to crisp up the edges. The roulade is best served warm or at room temperature, so let it sit out for 15-20 minutes before serving if refrigerated.
You can prepare the potato sheet up to a day ahead: bake it, let it cool completely, wrap it in plastic wrap, and refrigerate. When ready to assemble, let the sheet come to room temperature for 30 minutes, then proceed with spreading the labneh and adding the fillings.
The assembled roulade can also be made a few hours ahead and kept in the refrigerator, but it's best to slice it just before serving to keep the vegetables crisp.
Serving ideas
Serve the roulade as a centerpiece for brunch, accompanied by a fresh green salad or a bowl of fruit. It also makes a wonderful appetizer for a party—slice it into thinner rounds and arrange on a platter with toothpicks. The roulade can be served warm, at room temperature, or even chilled, making it versatile for any occasion.
For a complete meal, pair it with a light soup or a simple side of roasted vegetables. The roulade is substantial enough to be a main course, but it also works as a side dish alongside grilled meats or fish. Garnish with extra fresh dill or a sprinkle of smoked paprika for a pop of color. Enjoy it with a dollop of sour cream or a drizzle of hot sauce if desired.

Savory Baked Potato and Boiled Egg Roulade: A Stunning Brunch Centerpiece

Ingredients
- 4 large potatoes, grated
- 2 eggs
- 1 1/2 cups shredded cheese
- 1/4 cup fresh dill, chopped
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup labneh or cream cheese
- 2 cups curly lettuce leaves
- 1/2 cup red onion, thinly sliced
- 2 medium tomatoes, sliced
- 4 boiled eggs, sliced
- 1/2 tsp chili flakes
Instructions
- Preheat the oven to 390°F (199°C). Line a large baking sheet with parchment paper. Grate the potatoes using a box grater. Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible. Transfer the potatoes to a large bowl. Add the eggs, shredded cheese, chopped dill, smoked paprika, salt, and black pepper. Mix until well combined.
- Transfer the potato mixture onto the prepared baking sheet. Using your hands or a spatula, press it into an even, thin rectangle, about 1/4-inch thick. Make sure the edges are as even as possible. Bake for 25 minutes, or until the sheet is golden brown, firm to the touch, and slightly flexible. Remove from the oven and let cool for 10 minutes.
- Once the potato sheet has cooled slightly but is still warm, spread the labneh or cream cheese evenly over the entire surface, leaving a small border at the edges. Use an offset spatula or the back of a spoon for a smooth, even layer.
- Arrange the lettuce leaves over the labneh, followed by the red onion slices, tomato slices, and sliced boiled eggs. Sprinkle the chili flakes over the top. Make sure the layers are distributed evenly for a colorful cross-section when sliced.
- Using the parchment paper as a guide, carefully lift one edge of the potato sheet and roll it into a tight cylinder. Use the parchment to help you roll and press gently to keep the roll compact. The roll should be firm but not cracked.
- Transfer the roulade to a cutting board. Using a sharp serrated knife, slice the roulade into thick, even rounds, about 1 to 1 1/2 inches thick. Arrange the slices on a serving platter and serve warm or at room temperature.
