Tips for success
For perfectly even bars, use a ruler to mark the chocolate before cutting. Use a long, sharp knife and cut in one smooth motion, wiping the blade between cuts.
If the chocolate starts to crack, let it warm slightly at room temperature for a few minutes.
Store the bark in an airtight container in a cool, dry place. It will keep for up to two weeks.
If you live in a warm climate, refrigerate it to prevent melting. The bark also makes a beautiful gift—wrap it in tissue paper and place in a decorative box.
Variations
- Dark Chocolate Bark: Swap the ruby chocolate for dark chocolate with 70% cocoa. Use dried cherries or cranberries instead of raspberries, and replace rose petals with crystallized ginger for a spiced twist.
- Nut-Free Bark: Omit the pistachios and use toasted pumpkin seeds or sunflower seeds for crunch. Ensure all other ingredients are nut-free. The texture will still be delightful.
- Mint Chocolate Bark: Add 1/2 teaspoon of peppermint extract to the melted ruby chocolate. Replace rose petals with crushed candy canes or mint leaves. Use chopped dark chocolate mint cookies as a topping.
- Tropical Bark: Use macadamia nuts instead of pistachios, and top with freeze-dried pineapple and shredded coconut. Omit rose petals. This version pairs well with white chocolate.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 weeks. Let it come to room temperature for 5 minutes before serving for best texture.
- Freezer

- Reheat
- No reheating needed. If chilled, let the bark sit at room temperature for 5-10 minutes before serving to soften slightly.
Store the bark in an airtight container at room temperature for up to 2 weeks. If the room is warm, keep it in the refrigerator. Layer the bars between sheets of parchment paper to prevent sticking.
The bark can be made up to 2 weeks ahead. Prepare as directed, store in an airtight container, and keep in a cool, dry place. The flavor actually improves as the rose petals infuse the chocolate slightly.
Serving ideas
Serve the bark as a dessert on its own, or alongside fresh berries and a dollop of whipped cream.
It also pairs beautifully with coffee or tea. For a party, break the bark into rustic shards and arrange on a platter.
For a festive presentation, dust the top with a little powdered sugar or edible glitter before serving.
The bark can also be used as a topping for ice cream, yogurt, or cakes. Crumbled pieces make a lovely garnish for mousse or panna cotta.

Raspberry Pistachio Ruby Chocolate Bark

Ingredients
- 12 oz ruby chocolate, chopped
- 2 oz white chocolate, chopped
- 1/2 cup shelled pistachios, chopped
- 1/4 cup freeze-dried raspberries, crushed
- 2 tbsp dried edible rose petals
Instructions
- Chop the shelled pistachios into small pieces with a sharp chef's knife. Crush the freeze-dried raspberries into small bits with your fingers or the flat side of the knife. Lightly chop the dried rose petals if they are large. Set all the toppings aside in separate small bowls.
- Grate the solid block of ruby chocolate on the large holes of a box grater into a fresh pile of pink curls. This step is optional but adds a lovely texture. If you prefer, simply chop the chocolate finely with a knife.
- Place the chopped ruby chocolate in a heatproof bowl set over a saucepan of barely simmering water. Stir gently until completely melted and smooth. Remove from heat and let cool slightly for 2 minutes.
- In a separate small heatproof bowl, melt the white chocolate in the microwave in 15-second bursts, stirring between each, or over the same simmering water. Stir until smooth.
- Line a metal baking tray with parchment paper. Pour the melted ruby chocolate onto the tray and spread it evenly with a rubber spatula to about 1/4-inch thickness. Tap the tray lightly on the counter to release any air bubbles.
- Drizzle the melted white chocolate in ribbons across the ruby chocolate. Use a knife or skewer to swirl the white chocolate gently into the pink base, creating a marbled pattern.
- Immediately scatter the chopped pistachios, crushed raspberries, and rose petals evenly over the top. Gently press them into the chocolate with your fingers or a spatula so they stick.
- Place the tray in the refrigerator for at least 30 minutes, or until the chocolate is completely firm and set.
- Once set, lift the chocolate slab from the tray using the parchment paper. Place on a cutting board and use a sharp chef's knife to slice into thick bars, about 2 inches wide.
- Lift one bar and snap it cleanly in half to reveal the layered cross-section. Serve immediately or store in an airtight container.
