Tips for success
For a perfectly smooth mirror glaze, blend the glaze with an immersion blender just before pouring to eliminate any air bubbles. This ensures a flawless, glass-like surface. If you don't have an immersion blender, pass the glaze through a fine-mesh sieve after mixing.
When slicing the cake, use a long, thin knife and wipe it clean between each cut. This prevents the glaze from dragging and keeps the layers intact.
For the cleanest slices, cut while the cake is still slightly frozen; let the slices come to room temperature for a few minutes before serving to soften the mousse.
Variations
- Hazelnut Praline Layer: Swap the pistachio paste and feuilletine for a hazelnut praline crunch: mix 1 cup crushed hazelnut praline with 3 tablespoons melted butter and press into the mold. The nutty flavor pairs beautifully with the chocolate and raspberry.
- White Chocolate Glaze: For a sweeter, ivory-colored mirror glaze, replace the cocoa powder with 1 cup white chocolate, melted, and reduce the sugar to 3/4 cup. Omit the cocoa and add a few drops of red food coloring for a pink blush effect.
- Mango-Passionfruit Gelee: Replace the raspberry gelee with a tropical version: puree 2 cups mango and 1/2 cup passionfruit pulp, then cook with 1/2 cup sugar and 2 teaspoons gelatin. The bright acidity complements the dark chocolate.
- Coffee Mousse: Infuse the heavy cream with 2 tablespoons espresso powder before whipping, or add 1 tablespoon instant coffee to the melted chocolate. The coffee enhances the chocolate flavor and adds depth.
Storage and make-ahead
- Fridge
- Keep refrigerated in an airtight container for up to 3 days. Let sit at room temperature for 5 minutes before serving to soften slightly.
- Freezer
- Freeze the unglazed cake for up to 2 weeks, wrapped tightly in plastic. Glaze after thawing in the refrigerator for 4-6 hours.
- Reheat
- Do not reheat the cake; serve chilled or at cool room temperature. If the glaze dulls after refrigeration, it is still safe to eat.
Store the glazed cake in the refrigerator for up to 3 days. Keep it in an airtight container or covered with plastic wrap to prevent the glaze from absorbing odors.
The cake is best served slightly chilled, but let it sit at room temperature for 5-10 minutes to soften the mousse for the perfect texture.
The entire cake can be made and frozen up to 2 weeks in advance. After glazing, keep the cake frozen and transfer to the refrigerator 4-6 hours before serving to thaw slightly.
The glaze will remain shiny and the layers will hold their structure. Slice just before serving for the best presentation.
Serving ideas
Serve the cake cold, straight from the refrigerator, for the cleanest slices. The contrast between the firm glaze and the creamy mousse is delightful.
For an elegant presentation, place each slice on a chilled plate and garnish with a few fresh raspberries or a dusting of cocoa powder, though the cake is stunning on its own.
Pair this entremet with a cup of espresso or a glass of dessert wine, such as a late-harvest Riesling or a ruby port. The bitterness of the chocolate and the tartness of the raspberries are complemented by the sweetness of the wine. This dessert is rich, so small portions are ideal.

Mirror Glaze Dark Chocolate Raspberry Pistachio Cake

Ingredients
- 8 oz dark chocolate (70% cacao), chopped
- 2 cups heavy cream, cold
- 4 large egg yolks
- 1/4 cup granulated sugar
- 2 tbsp water
- 2 cups raspberries (fresh or frozen)
- 1/2 cup granulated sugar
- 2 tsp powdered gelatin (about 1 packet)
- 3 tbsp cold water
- 1 cup feuilletine (or crushed crepes dentelles)
- 1/2 cup pistachio paste
- 3 tbsp unsalted butter, melted
- 1 cup granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1/2 cup water
- 1/2 cup sweetened condensed milk
- 2 tsp powdered gelatin
- 3 tbsp cold water
Instructions
- In a small bowl, sprinkle gelatin over cold water and let bloom for 5 minutes. In a saucepan, combine raspberries and sugar; cook over medium heat, stirring, until the berries break down and the mixture is bubbling, about 5 minutes. Remove from heat, stir in the bloomed gelatin until fully dissolved. Strain through a fine-mesh sieve to remove seeds. Let cool slightly, then pour into the ring mold to form a thin layer (about 1/4 inch). Freeze until set, about 30 minutes.
- In a bowl, combine feuilletine, pistachio paste, and melted butter. Mix until the feuilletine is evenly coated. Press the mixture evenly over the frozen raspberry gelee layer in the ring mold. Freeze while preparing the mousse.
- Melt the dark chocolate in a heatproof bowl set over simmering water, stirring until smooth. Set aside to cool slightly. In a small saucepan, combine egg yolks, sugar, and water; whisk constantly over medium heat until the mixture reaches 160°F (71°C) and thickens slightly. Remove from heat and whisk in the melted chocolate until glossy. In a separate bowl, whip the cold heavy cream to soft peaks. Gently fold the whipped cream into the chocolate mixture in three additions until no streaks remain.
- Pour the chocolate mousse over the frozen feuilletine layer in the ring mold, filling to the top. Smooth the surface with an offset spatula. Tap the mold gently on the counter to release air bubbles. Freeze the assembled cake overnight, or at least 6 hours, until completely solid.
- In a small bowl, sprinkle gelatin over cold water and let bloom for 5 minutes. In a saucepan, combine sugar, cocoa powder, water, and condensed milk. Whisk over medium heat until the sugar dissolves and the mixture comes to a gentle boil. Remove from heat and whisk in the bloomed gelatin until fully dissolved. Let the glaze cool to exactly 92°F (33°C) before using.
- Remove the frozen cake from the ring mold and place on a wire rack set over a baking sheet. Pour the mirror glaze at 92°F (33°C) in one continuous stream over the top and sides of the cake, starting from the center and moving outward. Let the excess glaze drip off. Allow the glaze to set for a few minutes before transferring the cake to a serving plate.
- Dip a sharp knife in hot water, wipe dry, and slice the cake with a clean, smooth motion. Wipe the blade between cuts for clean slices. Serve immediately, or keep refrigerated until ready to serve.
