Tips for success

To achieve the most professional finish, consider trimming the edges of the cake after assembly but before slicing it into individual squares. This removes any uneven crust and highlights the distinct layers of cake and cream.

A warm, wet knife wiped dry between each cut will always produce the cleanest results, preventing the cream from smearing across the chocolate layers.

Experiment with the flavor profile by adding a hint of instant espresso powder to the cake mix or a splash of vanilla extract to the cream filling.

These minor additions deepen the chocolate notes and round out the sweetness of the ganache, adding a layer of complexity that transforms a simple sheet cake into a sophisticated dessert suitable for any occasion.

Variations

  • Peppermint Infusion: Add a half-teaspoon of peppermint extract to the cream filling for a refreshing twist that pairs beautifully with the rich chocolate ganache topping.
  • Salted Ganache: Sprinkle a very light dusting of flaky sea salt over the ganache before it sets to balance the sweetness and intensify the depth of the chocolate.

Storage and make-ahead

Fridge
Keep in an airtight container in the refrigerator for up to 3 days.

Store the cake in an airtight container to prevent it from absorbing odors from the refrigerator. Because of the whipped cream filling, it must be kept chilled at all times. The cake is best consumed within three days of assembly, as the sponge may begin to absorb moisture from the cream, potentially affecting the texture over longer periods.

This recipe is excellent for making ahead of time. The cake base can be baked a day in advance, and the ganache can be prepared and kept at room temperature until needed.

The entire cake can be assembled and chilled for several hours before serving, which actually allows the flavors to meld and the structure to firm up perfectly for easier slicing.

Serving ideas

Serve the cake chilled directly from the refrigerator for the best texture and stability. A small, simple plate is sufficient, as the cake is visually striking on its own. If desired, you may accompany each slice with a few fresh raspberries or a small dollop of lightly sweetened whipped cream to provide a bright contrast to the rich chocolate.

When serving for a crowd, keep the cake in the refrigerator until the last possible moment to ensure the ganache maintains its glossy finish. Use a metal spatula to transfer the squares carefully, as the layers are delicate.

This presentation highlights the contrast between the dark ganache, the light filling, and the moist sponge, creating an inviting and professional display.

Frequently asked questions

Can this cake be made without a cake mix?
Yes, any standard chocolate sponge or butter cake recipe can be used as the base. Simply ensure the cake is baked in a 9x13 inch pan and allowed to cool completely before assembly, as the structural integrity of the cake is vital for the layering process.
How can the cream filling be kept from melting?
The most important factor is temperature. The cake must be entirely cold before the filling is applied. Additionally, using a stabilized whipped cream or a filling containing a small amount of cream cheese or mascarpone will provide much better heat resistance and a firmer texture.
Why is it necessary to chill the cake before slicing?
Chilling allows the ganache to set and the cream filling to firm up, which ensures that the layers remain intact during the slicing process. If sliced while warm, the cream may squeeze out and the ganache may smear, resulting in an uneven appearance.

Ingredients

  • 1 box store-bought or made ahead chocolate cake mix
  • 2 cups whipped cream filling, store-bought or made ahead
  • 1 cup chocolate ganache, store-bought or made ahead

Instructions

  1. If using a pre-made cake base, ensure it is completely cooled before proceeding. If baking from a mix, follow the package instructions to bake the cake in a 9x13 inch pan. Once baked, allow the cake to cool entirely on a wire rack to ensure the structural integrity of the layers when slicing and filling.
  2. Using a long serrated knife, carefully slice the cooled cake horizontally into two even layers. Spread the whipped cream filling evenly over the bottom layer of the cake. Place the top layer of the cake back onto the cream filling, pressing down very gently to secure the layers without compressing the fluffy texture of the filling. If preparing a cooked custard-based filling, ensure it reaches 160°F (71°C) to be fully cooked.
  3. Pour the chocolate ganache over the top of the cake, spreading it toward the edges with an offset spatula. Allow the ganache to set in the refrigerator for at least 30 minutes to firm up. Once set, use a metal spatula to slice the cake into squares and serve immediately on a clean plate.
Contains: gluten, eggs, milk
Food safety: The eggs in the filling are not cooked through. Use pasteurised eggs for pregnant women, young children, older adults and anyone with a weakened immune system.
