Tips for success

Heat management is the whole recipe. Medium-high with a full preheat gives a crust that fries rather than steams; if the first side browns before 2 1/2 minutes, lower the heat slightly, because the cheese inside needs that full time to melt through.

Press with the spatula only in the first seconds of each sear — constant pressing squeezes sauce and cheese out the sides. When flipping, get the spatula completely under the disc and turn it in one motion; hesitate halfway and the stack folds.

The outer pepperoni crust is the detail worth protecting. Press those slices onto the top tortilla slightly in from the edge so the melting cheese grips their rims during the flip, and set them fat-side down against the pan after turning so the rendered grease bastes the crust.

Blotting the chorizo and pepperoni beforehand keeps the pan from smoking, and wiping out browned butter between batches keeps the flavor clean if a second pizzadilla follows.

Variations

  • Chicken Tortilla Pizza: Replace the chorizo with an equal amount of shredded cooked chicken tossed with a pinch of chili powder and cumin. Keep the same sauce, cheese and pepperoni layers, and sear exactly the same way — the filling is already cooked, so timing does not change.
  • Vegetable Garden Version: Skip the chorizo and pepperoni and add sautéed diced bell pepper, finely chopped onion and sliced black olives between the cheese layers. Sauté the vegetables first so they release no water into the tortilla, and dust the finished top with the same Parmesan and oregano.
  • Extra-Hot Diabla: Stir an extra teaspoon of chopped chipotle in adobo into the sauce, swap the crushed red pepper for thinly sliced fresh serrano, and finish the wedges with a drizzle of hot honey. The garlic butter sear stays identical; only the heat level climbs.
  • Breakfast Pizzadilla: Use the same tortilla-and-cheese build with cooked crumbled breakfast sausage and the marinara-chipotle sauce, then top the finished wedges with a fried egg cooked to a fully set yolk. Cut the sear to 2 minutes per side so the crust stays tender enough for a fork.

Storage and make-ahead

Fridge
Refrigerate cooled wedges in an airtight container for up to 3 days, with a paper towel under them to catch moisture.
Freezer
Freeze cooked, cooled wedges wrapped individually in foil for up to 1 month; thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a dry skillet over medium heat, about 2 minutes per side, until the crust crackles. Skip the microwave if the crust matters.

Leftovers keep surprisingly well because the double tortilla resists sogginess. Cool the wedges on a rack for no more than 2 hours, then refrigerate them in an airtight container with a paper towel underneath to catch surface moisture. They hold their texture for up to 3 days. Reheat in a dry skillet over medium heat, 2 minutes per side, to restore the crackle — the microwave will melt the cheese but surrender the crust.

The pizzadilla is best built and cooked in one go, but the prep splits cleanly. Up to a day ahead, stir the marinara-chipotle sauce and refrigerate it covered; grate the Parmesan, chop the oregano and store each in its own small container. Shred the mozzarella the same day, since pre-shredded cheese dries at the edges and melts less smoothly.

The fully assembled, uncooked pizzadilla can rest loosely covered at room temperature for up to 30 minutes before searing, or refrigerated for a few hours — let it lose the chill for those 30 minutes before it hits the pan so the cheese melts evenly.

Serving ideas

Serve the pizzadilla the way it was built: fast and hot. Cut the rested disc into six wedges with a pizza wheel and bring them to the table on a wooden board, still steaming, so the cheese pull happens at the table rather than in the kitchen. The dusting of Parmesan, crushed red pepper and fresh oregano should go on just before slicing, while the surface is tacky enough to hold it.

For a spread, lean into the Mexican-Italian crossover. A bowl of the same marinara-chipotle sauce on the side gives the wedges a dipping sauce, and something cool and creamy — a simple shredded-lettuce salad with lime — balances the richness of the pepperoni and chorizo.

Cold beer or a bright lime aguas frescas both cut through the garlic butter. Two wedges make a generous main; three wedges, halved, work well as a party appetizer passed straight from the board.

Frequently asked questions

Can this pizzadilla be made without a cast-iron skillet?
Yes. Any heavy skillet — stainless steel or carbon steel — works if it is preheated well over medium-high before the garlic butter goes in. Thin nonstick pans are the least reliable choice: they do not hold enough heat to dehydrate the tortilla surface, so the crust turns pale and leathery instead of crisp. With a lighter pan, sear a little longer per side and press firmly at the start of each turn.
Why does cheese leak out of the edges during searing?
Leaking means the sauce border was too wide or the filling was piled in the center instead of spread edge to edge. Spread the sauce in a thin layer with a 1/2-inch border, distribute the cheese and toppings all the way to the rim, and press the stack gently with a palm before it enters the pan. A second cheese layer on top of the fillings also seals them in place.
How is a pizzadilla different from a quesadilla?
A quesadilla is usually one tortilla folded over cheese, cooked gently so the tortilla stays pliable. A pizzadilla stacks two flat tortillas like pizza dough, loads them with sauce and pizza toppings, and cooks them hard in fat with firm pressure, smash-burger style. The result is a rigid, crackling crust with charred pepperoni on the outside — closer in texture to pan pizza than to a soft folded tortilla.
Can the assembled pizzadilla wait before cooking?
It can sit loosely covered at room temperature for up to 30 minutes, which is actually helpful for even melting. For longer waits, refrigerate the assembled stack for a few hours, then let it sit out for 30 minutes before searing so the chill leaves the cheese. Do not assemble it the night before: the sauce softens the tortilla and the crust will never fully crisp.
Can this be doubled for a crowd?
Yes, but cook one pizzadilla at a time — two discs in one skillet steam each other and never crisp. The stages compensate: while the first sears, assemble the second, and keep the finished wedges on a rack in a low oven, around 200°F, so the crust stays dry. Wipe out the browned garlic butter between batches and add fresh butter for each sear.

Crispy Tortilla Smash Pizzadilla in One Skillet

A crispy tortilla smash pizzadilla wedge lifted with a long mozzarella cheese pull, topped with charred pepperoni and chorizo

Ingredients

  • 2 large flour tortillas, 10-inch (burrito-size)
  • 1/3 cup zesty marinara-chipotle sauce
  • 1 1/2 cups whole-milk mozzarella, shredded
  • 12 pepperoni slices, cup-and-char style
  • 2 oz cooked Mexican chorizo, crumbled
  • 1 tbsp garlic butter
  • Extra pepperoni slices, optional, for the outer crust
  • Grated Parmesan, to taste, for dusting
  • Crushed red pepper flakes, to taste
  • Fresh oregano leaves, for serving

Instructions

  1. Spoon the marinara-chipotle sauce into a small bowl and stir until the color is even and the texture is thick and spoonable. It should cling to the spoon, not run off it, since a watery sauce steams the tortilla and softens the crust before it ever reaches the pan. Set it beside the cutting board with a small spatula for spreading.
  2. Grate the Parmesan on the fine holes of a box grater, strip the oregano leaves from their stems and give them a rough chop, and crumble the cooked chorizo into small pieces — it should already be fully cooked through, 160°F (71°C) at its center when it was browned. Count out the pepperoni, separating the 12 slices for the inside from the extra slices destined for the crust. Line everything up in the order it will be used so assembly takes under a minute.
  3. Lay one tortilla flat on the cutting board and spread the sauce in a thin, even layer, leaving a 1/2-inch border at the edge so it cannot squeeze out during searing. Scatter 3/4 cup of the mozzarella over the sauce until every inch is covered. The cheese is the glue that welds the two tortillas together, so coverage matters more than thickness here.
  4. Shingle the 12 pepperoni slices over the cheese, then scatter the crumbled chorizo evenly from edge to edge. Add the remaining 3/4 cup mozzarella — a second cheese layer anchors the toppings when the wedge is lifted — and lay the second tortilla on top. Press down gently with your palm to close the pizzadilla, then press the extra pepperoni slices onto the top tortilla where they will face the pan.
  5. Set a 10-inch cast-iron skillet over medium-high heat and add the garlic butter, swirling until it foams and smells toasted, about 1 minute. Lay the pizzadilla in the pan and press it firmly with a wide spatula for a few seconds so the entire underside makes contact with the hot metal. Sear undisturbed for 2 1/2 minutes, checking the edge only once.
  6. Slide the spatula fully under the pizzadilla and flip it in one confident motion so the pepperoni-studded side is now against the pan. Sear another 2 1/2 minutes, pressing once more, until the second side matches the first and the cheese has melted all the way through. Dust the hot top with Parmesan, crushed red pepper and oregano, rest for 2 minutes, then cut into 6 wedges.
