Tips for success
For the crispiest carrots, do not overcrowd the baking sheet. If making a double batch, use two sheets and rotate them halfway through.
Let the carrots cool for 2 to 3 minutes after roasting – they will crisp up further as they rest. If you want extra heat, add a pinch of cayenne to the spice mix or use a hotter honey.
To make the whipped feta ahead, blend it and store in the fridge for up to 3 days. Let it come to room temperature for 15 minutes before serving.
When drizzling the hot honey, do it just before serving so the honey doesn't soak into the carrots and make them soggy. The pistachios are best added at the last minute to keep their crunch.
Variations
- Spicy Harissa: Replace the smoked paprika with 1 teaspoon harissa paste mixed into the olive oil. Add a pinch of cayenne to the hot honey for an extra kick. The harissa adds a smoky, spicy depth that pairs well with the feta.
- Lemon-Herb: Add 1 teaspoon dried oregano and the zest of one lemon to the spice mix. Swap the hot honey for a drizzle of regular honey and a squeeze of fresh lemon juice. Finish with chopped fresh parsley for a bright, herby version.
- Maple-Bourbon: Use maple syrup mixed with a dash of bourbon instead of hot honey. The sweetness of maple complements the roasted carrots, while the bourbon adds a subtle warmth. Sprinkle with candied pecans instead of pistachios.
- Za'atar Crusted: Mix 1 teaspoon za'atar into the olive oil along with the cumin and paprika. Omit the smoked paprika if you prefer a more floral flavor. Top with sesame seeds and a drizzle of tahini alongside the hot honey.
Storage and make-ahead
- Fridge
- Store leftover carrots and feta separately in airtight containers in the refrigerator for up to 3 days.
- Freezer
- Freezing is not recommended as the carrots will become mushy and the feta will separate.
- Reheat
- Reheat carrots in a 400°F oven for 5-7 minutes until hot and edges re-crisp. Whipped feta can be served cold or at room temperature.
Leftover carrots and feta can be stored separately in airtight containers in the refrigerator for up to 3 days. The carrots will lose their crispness, but they can be reheated in a hot oven or air fryer for a few minutes to revive some texture. The whipped feta can be used as a spread or dip.
You can cut and season the carrots up to 24 hours in advance. Store them in the refrigerator in an airtight container. The whipped feta can also be made ahead and kept chilled. When ready to serve, roast the carrots and assemble. This makes entertaining easy – the components are ready to go.
Serving ideas
Serve the accordion carrots as a stunning appetizer on a large platter, letting guests pull off their own crispy pieces.
They also work beautifully as a side dish alongside roasted chicken or lamb. The whipped feta acts as a sauce, so no extra dressing is needed. Pair with a crisp white wine or a light beer.
For a more substantial meal, serve the carrots over a bed of grains like farro or quinoa, with extra whipped feta on the side.
The hot honey can be drizzled to taste – some prefer a light touch, others a generous pour. Garnish with fresh herbs like parsley or dill if desired, though the video keeps it simple.

Crispy Accordion Carrots with Whipped Feta & Hot Honey

Ingredients
- 4 large thick carrots, trimmed
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp salt
- 150 g feta cheese
- 3 tbsp Greek yogurt
- 1 tbsp lemon juice
- Hot honey, for drizzling, to taste
- Crushed pistachios, for garnish, to taste
Instructions
- Heat the oven to 410°F (210°C). Place one carrot between two chopsticks on a cutting board. Make straight vertical cuts along the entire carrot, spacing them about 1/8 inch apart, stopping when the knife touches the chopsticks so the bottom stays intact. Flip the carrot and make diagonal cuts at a 45-degree angle, again stopping at the chopsticks. Repeat with the remaining carrots.
- In a small bowl, mix the olive oil, cumin, smoked paprika, and salt. Brush the mixture all over the accordion carrots, making sure to get into the cuts. Gently stretch each carrot to open the slits and allow the seasoning to reach the inner surfaces.
- Line a baking sheet with parchment paper. Place the carrots on the sheet in a single layer, leaving space between them. Roast for 25 minutes, until the edges are caramelized, blistered, and crispy. The carrots should be tender when pierced with a fork but still hold their shape.
- While the carrots roast, combine the feta cheese, Greek yogurt, and lemon juice in a food processor. Process for 2 to 3 minutes, scraping down the sides once, until the mixture is light, fluffy, and completely smooth. The texture should be cloud-like and airy.
- Spread the whipped feta in swooshes on a serving platter. Lay the hot roasted carrots over the feta. Drizzle generously with hot honey and sprinkle with crushed pistachios. Serve immediately while the carrots are still hot and crispy.
