Before you start
Heat the oven to 410°F (210°C) and line a baking sheet with parchment paper. Take the feta out of the fridge to soften slightly while you prep. Wash and trim the carrots, but do not peel them if the skin is thin – just scrub well.
Set up your cutting board and have the chopsticks ready. Measure the oil and spices into a small bowl. Have the food processor and serving platter within reach.

Instructions
Cut and Season
- Cut the Accordion CarrotsHeat the oven to 410°F (210°C). Place one carrot between two chopsticks on a cutting board. Make straight vertical cuts along the entire carrot, spacing them about 1/8 inch apart, stopping when the knife touches the chopsticks so the bottom stays intact. Flip the carrot and make diagonal cuts at a 45-degree angle, again stopping at the chopsticks. Repeat with the remaining carrots.Look for The carrot should stretch like an accordion when gently pulled, with the bottom intact.Tip Chill the carrots for 10 minutes before cutting for cleaner slices.
- Season the CarrotsIn a small bowl, mix the olive oil, cumin, smoked paprika, and salt. Brush the mixture all over the accordion carrots, making sure to get into the cuts. Gently stretch each carrot to open the slits and allow the seasoning to reach the inner surfaces.Look for The carrots are evenly coated with the red-orange spice mixture.Tip Use a pastry brush for even coverage without breaking the carrots.
The carrots should be evenly sliced with the bottom intact, and each one should stretch into a long accordion. The spice mixture should coat every surface, including the inner folds.
The carrots look vibrant with paprika and cumin, and the scent is warm and smoky. Check that no cuts go all the way through before moving on.
Roast and Whip
- Roast the CarrotsLine a baking sheet with parchment paper. Place the carrots on the sheet in a single layer, leaving space between them. Roast for 25 minutes, until the edges are caramelized, blistered, and crispy. The carrots should be tender when pierced with a fork but still hold their shape.Look for The edges are golden brown and crispy, and the kitchen smells of roasted spices.Tip If the carrots are browning too quickly, cover loosely with foil for the last 5 minutes.
- Make the Whipped FetaWhile the carrots roast, combine the feta cheese, Greek yogurt, and lemon juice in a food processor. Process for 2 to 3 minutes, scraping down the sides once, until the mixture is light, fluffy, and completely smooth. The texture should be cloud-like and airy.Look for The whipped feta is pale, smooth, and holds soft peaks when lifted with a spoon.Tip Use block feta, not crumbled, for the creamiest result.
The carrots are golden brown at the edges, with some blistered spots and a slightly shriveled appearance that signals crispiness. The whipped feta is pale, fluffy, and holds its shape when spooned. The kitchen smells of roasted carrots and warm spices. The feta should be completely smooth with no lumps.
Assemble and Serve
- Assemble and ServeSpread the whipped feta in swooshes on a serving platter. Lay the hot roasted carrots over the feta. Drizzle generously with hot honey and sprinkle with crushed pistachios. Serve immediately while the carrots are still hot and crispy.Look for The hot honey sizzles slightly on the warm carrots, and the pistachios add a bright green crunch.Tip For extra crunch, add a pinch of flaky salt on top before serving.
The platter is layered with a swoosh of whipped feta, hot carrots arranged on top, and a generous drizzle of hot honey that glistens. The pistachios add a green crunch. The contrast of hot carrots and cold feta is immediate – serve right away so the carrots stay crispy.
Common mistakes
Slicing too deeply can cut through the carrot entirely. Always let the chopsticks be your guide – the knife should stop when it touches the wood. If the cuts are too thick, the carrot won't crisp as well; aim for 1/8 inch.
Overcrowding the baking sheet traps steam and prevents browning. Use a large sheet and leave space between carrots. Whipping the feta too briefly leaves a grainy texture; process until truly smooth.
How to tell it’s done
The carrots are done when the edges are deeply browned and crispy, and the flesh is tender when pierced with a fork. The internal temperature of the carrots should be at least 145°F (63°C) for food safety, but they will likely be much hotter.
The whipped feta is ready when it is light, airy, and completely smooth with no graininess. Taste and adjust the lemon juice if needed.
