Tips for success
For the best flavor, use European-style butter with a higher fat content — it emulsifies more easily and tastes richer. If you have time, chill the lobster tails in the refrigerator for 15 minutes before splitting; this makes them easier to cut cleanly.
When basting the lobster, use a spoon to continuously scoop the butter over the meat. This keeps the top moist and cooks it evenly.
The pasta water should be reserved just before draining — it's starchy and hot, perfect for emulsifying. If the sauce seems too thick, add a splash more pasta water; if too thin, let it simmer for a minute.
Taste and adjust seasoning at the end, as the butter and lobster both add salt. Serve with extra lemon wedges on the side for those who like a brighter finish.
Variations
- Shrimp Mafaldine: Substitute 8 oz large shrimp, peeled and deveined, for the lobster. Poach the shrimp in the same butter until pink and opaque, about 2 minutes. Reduce the lemon juice to 1 tablespoon and add a pinch of red pepper flakes for heat.
- Herb-Butter Version: Add 1 tablespoon chopped fresh chives and 1 teaspoon chopped fresh dill to the butter along with the garlic. Omit the tarragon and lemon zest at the end, and finish with a squeeze of lemon juice and a few extra herbs.
- Creamy Saffron Sauce: After poaching the lobster, add 1/4 cup heavy cream to the butter and simmer for 2 minutes before adding the pasta water. This creates a richer, more luxurious sauce. Reduce the pasta water to 1/4 cup to keep the consistency balanced.
- Spicy Lemon Butter: Add 1/2 teaspoon red pepper flakes and 1 teaspoon grated fresh ginger to the butter with the garlic. Use 1 tablespoon lemon juice and 1 tablespoon lime juice. Finish with cilantro instead of tarragon and lime zest instead of lemon zest.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently with a splash of water or broth.
- Freezer
- Not recommended for freezing, as the texture of the lobster and pasta will suffer.
- Reheat
- Reheat in a skillet over low heat with a splash of water or broth, stirring gently until warmed through.
Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. The pasta will absorb some sauce, so when reheating, add a splash of water or broth to loosen it. The lobster may lose some tenderness upon reheating, so it's best enjoyed fresh. If storing, keep the lobster separate from the pasta if possible, and combine when reheating.
The butter sauce can be made up to 1 day ahead and kept refrigerated. Gently reheat it over low heat before poaching the lobster. The pasta can be cooked ahead and tossed with a little olive oil to prevent sticking, then reheated in the sauce.
However, the lobster is best cooked fresh to maintain its texture. The entire dish is quick enough to make on the spot, so advance prep is optional.
Serving ideas
Serve this pasta immediately after plating, while the sauce is still glossy and the lobster is warm. A glass of dry white wine, such as Sauvignon Blanc or Pinot Grigio, pairs beautifully with the saffron and lemon.
For a complete meal, start with a simple arugula salad dressed with lemon and olive oil. Crusty bread is essential for sopping up any remaining sauce.
This dish is rich, so portion sizes can be modest. Two servings are generous for a main course, or it can serve four as a starter. Garnish with extra tarragon and lemon zest just before bringing it to the table. The presentation is impressive enough for a celebration, but the preparation is simple enough for a weeknight indulgence.

Butter-Poached Lobster Mafaldine Date-Night Pasta

Ingredients
- 12 oz mafaldine pasta
- 8 oz lobster tails, split
- 6 tbsp salted butter
- 4 cloves garlic, crushed
- 1 pinch saffron threads
- 2 tbsp fresh lemon juice
- 1/3 cup starchy pasta water
- 2 tbsp fresh tarragon leaves
- 1 tsp lemon zest
Instructions
- Melt the butter in a large skillet over medium-low heat. Add the crushed garlic and saffron threads, stirring until fragrant, about 1 minute. Add the lemon juice and the split lobster tails, arranging them in a single layer. Poach gently, basting the lobster with the butter mixture constantly, until the lobster meat is opaque and reaches 145°F (63°C), about 3 minutes. Remove the lobster to a plate and set aside.
- Meanwhile, bring a large pot of generously salted water to a boil. Add the mafaldine and cook until al dente according to package directions, about 8 to 10 minutes. Reserve 1/3 cup of the starchy pasta water before draining. Drain the pasta and set aside.
- Return the skillet with the saffron butter to low heat. Add the reserved pasta water and whisk until the mixture emulsifies into a glossy, slightly thickened sauce. Season with salt to taste.
- Add the drained mafaldine to the skillet and toss with tongs until every ribbon is coated in the saffron butter sauce. Cook for 1 to 2 minutes, allowing the pasta to absorb some of the sauce and become glossy.
- Slice the poached lobster meat into medallions. Arrange the lobster over the pasta and sprinkle with fresh tarragon leaves and lemon zest. Serve immediately.
