Before you start

Before starting, bring the lobster tails to room temperature if they were refrigerated, no more than 30 minutes. Fill a large pot with water and salt it generously — it should taste like the sea.

Have all your ingredients measured and ready: the butter cut into pieces, the garlic crushed, the lemon juiced and zested, and the tarragon picked. Set a large skillet over medium-low heat and a large pot over high heat. The whole dish comes together quickly, so having everything prepped ensures a smooth cook.

Ingredients at a glance (9)
  • 12 oz mafaldine pasta
  • 8 oz lobster tails, split
  • 6 tbsp salted butter
  • 4 cloves garlic, crushed
  • 1 pinch saffron threads
  • 2 tbsp fresh lemon juice
  • 1/3 cup starchy pasta water
  • 2 tbsp fresh tarragon leaves
  • 1 tsp lemon zest

Instructions

Poach and Boil

  1. Poach the lobster
Melt the butter in a large skillet over medium-low heat. Add the crushed garlic and saffron threads, stirring until fragrant, about 1 minute. Add the lemon juice and the split lobster tails, arranging them in a single layer. Poach gently, basting the lobster with the butter mixture constantly, until the lobster meat is opaque and reaches 145°F (63°C), about 3 minutes. Remove the lobster to a plate and set aside.
Look for The butter is fragrant and the lobster turns opaque and firm.
Safe temperature 145°F (63°C) internal temperature (shellfish)
Tip Keep the heat low so the butter never sizzles or browns.
  2. Cook the pasta
Meanwhile, bring a large pot of generously salted water to a boil. Add the mafaldine and cook until al dente according to package directions, about 8 to 10 minutes. Reserve 1/3 cup of the starchy pasta water before draining. Drain the pasta and set aside.
Look for The pasta is tender but still has a slight bite at the center.
Tip Use a ladle to scoop out the pasta water before draining.

The kitchen smells of garlic, saffron, and butter. The lobster tails are turning from translucent to opaque, and the pasta water is at a rolling boil. The butter mixture is gently bubbling, not sizzling. The lobster should be just cooked through, with a tender, springy texture. The pasta is al dente and waiting in a colander, with the reserved starchy water nearby.

Emulsify and Toss

  1. Emulsify the sauce
Return the skillet with the saffron butter to low heat. Add the reserved pasta water and whisk until the mixture emulsifies into a glossy, slightly thickened sauce. Season with salt to taste.
Look for The sauce coats the back of a spoon and looks glossy.
Tip Whisk continuously to incorporate the water into the butter.
  2. Toss the pasta
Add the drained mafaldine to the skillet and toss with tongs until every ribbon is coated in the saffron butter sauce. Cook for 1 to 2 minutes, allowing the pasta to absorb some of the sauce and become glossy.
Look for The pasta is evenly coated and the sauce clings to the ruffles.
Tip Use tongs to lift and turn the pasta gently to avoid breaking the ribbons.

The sauce has transformed from melted butter into a creamy, glossy emulsion. The mafaldine ribbons are evenly coated, each ruffle holding a bit of the golden sauce. The pan looks almost dry, but the pasta is slick and shiny. The aroma is rich and slightly citrusy. This is the moment when the dish comes together — the pasta should be well dressed but not swimming in sauce.

Finish and Plate

  1. Finish and serve
Slice the poached lobster meat into medallions. Arrange the lobster over the pasta and sprinkle with fresh tarragon leaves and lemon zest. Serve immediately.
Look for The lobster is tender and the pasta is glossy with herbs and zest.
Safe temperature 145°F (63°C) internal temperature (shellfish)
Tip For an extra touch, drizzle a little of the remaining butter sauce over the top.

The lobster medallions are arranged on top of the pasta, their edges slightly caramelized from the residual heat. The tarragon leaves are bright green against the golden sauce, and the lemon zest adds a pop of color.

The dish looks elegant and inviting, with the sauce clinging to every ribbon. A final drizzle of butter sauce over the top ensures every bite is rich and flavorful.

Common mistakes

One common mistake is overheating the butter, which can cause it to brown and lose its delicate flavor. Keep the heat low and gentle. Another pitfall is overcooking the lobster — it can turn rubbery in seconds.

Use a thermometer to ensure it reaches exactly 145°F (63°C) and remove it immediately. Also, don't rinse the pasta after draining; the starch is essential for the sauce to cling. Finally, use enough salt in the pasta water — it's your only chance to season the pasta from within.

How to tell it’s done

The lobster is done when it reaches an internal temperature of 145°F (63°C) and the meat is opaque and firm to the touch. The pasta should be al dente, with a slight bite at the center.

The sauce should be glossy and coat the back of a spoon. To check, drag a spoon through the sauce — it should leave a clear path that slowly closes. Serve immediately, as the sauce will continue to thicken as it cools.

  • Shellfish: 145°F (63°C) in the thickest part
