Tips for success
For the best texture, cook the pasta just until al dente—it will finish cooking in the oven. The sauce should be slightly looser than you think, because the pasta absorbs some liquid during baking.
If the top browns too quickly, cover loosely with foil for the last 5 minutes. Use a serrated spoon to serve, which helps cut through the crust cleanly.
Grate the cheese on the large holes of a box grater for even melting. Avoid using pre-shredded cheese, which contains anti-caking agents that can make the sauce gritty. If you prefer a spicier kick, add a pinch of cayenne or smoked paprika to the panko mixture. For a deeper flavor, use smoked Gouda instead of regular Gouda.
Variations
- Smoky Bacon: Cook 6 slices of bacon until crisp, crumble, and fold into the mac and cheese before topping with panko. The smoky, salty flavor pairs perfectly with the creamy cheese sauce.
- Spicy Jalapeño: Add 2 finely chopped jalapeños (seeded for less heat) to the cheese sauce along with a pinch of cayenne. Top with extra jalapeños before baking for a kick.
- Truffle Mac: Stir 1 tablespoon of truffle oil into the finished cheese sauce before combining with pasta. The earthy aroma elevates the dish to gourmet status.
- Vegetable Add-In: Fold in 1 cup of roasted broccoli or cauliflower florets with the pasta. The vegetables add color and a slight crunch, making it a one-dish meal.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 4 days. Reheat in the oven or microwave until piping hot.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat in a 350°F (175°C) oven for 15-20 minutes or microwave individual portions for 1-2 minutes, stirring halfway.
Store leftover mac and cheese in an airtight container in the refrigerator for up to 4 days. To reheat, place individual portions in the microwave or warm in a 350°F (175°C) oven until heated through. The topping may lose some crunch, but the flavor will remain. For longer storage, freeze in a freezer-safe container for up to 3 months.
Prepare the mac and cheese completely, but do not bake. Cover and refrigerate for up to 2 days. When ready to bake, add 5-10 minutes to the baking time, starting from a cold dish.
Alternatively, assemble the cheese sauce and pasta separately, then combine and bake when needed. The garlic panko can be prepared ahead and stored in an airtight container for up to 3 days.
Serving ideas
Serve the mac and cheese hot from the skillet, garnished with extra chives if desired. It pairs beautifully with roasted chicken, grilled steak, or a simple green salad.
For a complete meal, add a side of steamed broccoli or sautéed greens to balance the richness. This dish is also a star on holiday tables, offering a familiar comfort with a gourmet twist.
Portion generously—each serving should include a good amount of the crispy topping. The contrast between the crunchy panko and the creamy interior is the highlight.
For a casual dinner, serve directly from the skillet; for a more formal occasion, transfer to a serving platter. The leftovers are just as delicious cold, straight from the fridge, if you're a fan of cold mac and cheese.

Ultra-Creamy Five-Cheese Mac and Cheese with Garlic Panko Crust

Ingredients
- 4 tbsp unsalted butter
- 3 tbsp all-purpose flour
- 3 cups warm whole milk
- 1 3/4 cups sharp cheddar, shredded (about 7 oz)
- 1 1/2 cups Gruyère, shredded (about 6 oz)
- 1 1/4 cups Fontina, shredded (about 5 oz)
- 1 cup Gouda, shredded (about 4 oz)
- 1/2 cup Parmigiano-Reggiano, grated (about 2 oz)
- 1 lb cavatappi pasta
- 1 cup panko breadcrumbs
- 3 tbsp unsalted butter, melted
- 2 cloves garlic, minced
- 2 tbsp fresh chives, chopped
Instructions
- In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1 minute, stirring constantly. Slowly pour in the warm milk, whisking continuously to avoid lumps. Bring the mixture to a gentle simmer and cook until thickened, about 3-4 minutes.
- Reduce the heat to low. Add the shredded cheddar, Gruyère, Fontina, Gouda, and Parmigiano-Reggiano in batches, stirring until each addition is fully melted and the sauce is silky.
- Bring a large pot of salted water to a boil. Add the cavatappi and cook until just al dente, about 1 minute less than the package directions. Drain well and set aside.
- Fold the drained cavatappi into the cheese sauce, stirring gently until every piece is coated. The mixture will look saucy—that's perfect.
- In a small bowl, mix the panko, melted butter, and minced garlic until the crumbs are evenly moistened.
- Preheat the oven to 400°F (200°C). Transfer the mac and cheese to a cast-iron skillet or baking dish. Sprinkle the garlic panko evenly over the top. Bake for 18 minutes, until the top is golden and the edges are bubbling.
- Remove the skillet from the oven and let it rest for 5 minutes. Sprinkle with chopped chives before serving.
