Tips for success
For the best cheese pull, use a combination of low-moisture mozzarella and a little provolone, which melts beautifully and stretches. Grate the cheese yourself rather than buying pre-shredded, as the anti-caking agents in pre-shredded cheese can affect melting.
If you want a deeper color on the bread, brush the outside of the dough with a beaten egg before baking, but note that this adds an egg allergen.
To make the bread bowl easier to handle, shape it on a piece of parchment paper and transfer it to the baking sheet with the paper. This prevents sticking and makes cleanup a breeze.
If you have leftover filling, it is delicious on its own or spooned over rice. The bread bowl is best eaten the day it is made, but the filling can be refrigerated and reheated separately.
Variations
- Spicy sausage version: Swap the chicken for 1 1/2 lb of fresh Italian sausage (casings removed) and cook it the same way. Add a pinch of red pepper flakes with the spices for extra heat. The sausage provides its own fat, so reduce the olive oil to 1 tablespoon.
- Vegetarian mushroom filling: Replace the chicken with 1 1/2 lb of cremini mushrooms, sliced thickly. Sauté the mushrooms until they release their liquid and brown, then proceed with the rest of the filling. Use a vegan mozzarella alternative to make the dish dairy-free, if desired.
- Mediterranean twist: Add 1 cup of pitted Kalamata olives and 1/2 cup of crumbled feta cheese to the filling before baking. Replace the oregano with dried thyme and add a squeeze of lemon juice at the end. The briny flavors cut through the richness of the cheese.
- BBQ chicken version: Replace the tomato paste and spices with 1/2 cup of barbecue sauce. Use a smoked mozzarella or cheddar for the topping. The result is a smoky, tangy filling that pairs perfectly with the bread. Serve with pickles on the side.
Storage and make-ahead
- Fridge
- Store leftover casserole in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to restore crispness.
- Freezer
- Freeze the baked casserole for up to 2 months. Thaw overnight in the refrigerator and reheat in a 350°F (175°C) oven until hot throughout.
- Reheat
- Reheat individual portions in the microwave for 1-2 minutes, or in a 350°F (175°C) oven for 10 minutes to re-crisp the bread.
Store leftover casserole in an airtight container in the refrigerator for up to 3 days. The bread will soften as it absorbs moisture from the filling, so for best texture, reheat in a 350°F (175°C) oven for 10 minutes to crisp the edges. If storing the filling separately from the bread, keep both in separate containers.
The dough can be made up to 2 days ahead and kept in the refrigerator after the first rise. Let it come to room temperature before shaping. The chicken filling can also be cooked a day ahead and refrigerated; reheat gently before filling the bread bowl.
Assemble the casserole just before baking, or store the unbaked assembled dish in the refrigerator for up to 8 hours, then add a few extra minutes to the baking time.
Serving ideas
Serve the casserole hot from the oven, with the bread lid placed on top for a dramatic reveal. Let everyone tear off pieces of the bread bowl to scoop up the cheesy chicken filling. A simple green salad with a lemon vinaigrette is a bright counterpoint to the rich, cheesy dish. For a heartier meal, serve alongside roasted vegetables or a bowl of soup.
This casserole is meant to be shared, so place it in the center of the table and let guests dig in. Provide small plates and forks, but encourage eating with hands for the full experience.
The bread bowl itself is part of the meal, so do not be shy about breaking off chunks and dipping them into the filling. Any leftover bread can be toasted and used for dipping in soups or stews.

Turkish Bread-Pot Chicken Casserole: Cheesy Pull-Apart Comfort

Ingredients
- 3 1/2 cups all-purpose flour
- 2 1/4 tsp active dry yeast
- 1 tbsp granulated sugar
- 1 1/2 tsp salt
- 1 1/4 cups warm water (110°F/43°C)
- 2 tbsp olive oil
- 1 1/2 lb boneless skinless chicken breast, diced
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 medium onion, chopped
- 2 medium red bell peppers, diced
- 3 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp dried oregano
- 3 cups shredded mozzarella cheese
Instructions
- In a small bowl, dissolve the yeast and sugar in warm water and let stand for 5 minutes until frothy. In a large bowl, combine the flour and salt. Add the yeast mixture and olive oil, then stir until a shaggy dough forms. Turn the dough out onto a floured surface and knead for about 8 minutes, until smooth and elastic. Place the dough in a lightly oiled bowl, cover, and let rise in a warm spot for 1 hour, or until doubled in size.
- Punch down the risen dough. On a lightly floured surface, roll out about two-thirds of the dough into a large circle. Press it into a round baking dish or onto a baking sheet, forming a hollow bowl shape with thick sides. Roll the remaining dough into a circle for the lid, and shape a small knob handle from a scrap of dough. Attach the knob to the center of the lid with a dab of water. Cover both and let rest for 15 minutes.
- Heat the olive oil in a large skillet over medium-high heat. Add the diced chicken and cook, stirring occasionally, until browned on all sides but not fully cooked through, about 5 minutes. Add the garlic, onion, and red bell peppers, and cook for another 3 minutes until the vegetables soften. Stir in the tomato paste, cumin, and oregano, and cook for 2 minutes until the mixture is thick and saucy. Remove from heat.
- Spoon the chicken filling into the hollow bread bowl, spreading it evenly. Top with the shredded mozzarella, mounding it over the filling and letting it spill over the edges of the dough.
- Preheat the oven to 400°F (200°C). Place the filled bread pot on a baking sheet and bake for 25–30 minutes, until the cheese is melted, bubbly, and golden in spots, and the dough is cooked through and deep golden brown.
- Remove the casserole from the oven and let it rest for 5 minutes. Place the bread lid on top and bring the whole pot to the table. Tear into the cheesy bread, pull off the lid, and stretch the cheese for the perfect serving moment.
