Sizzling restaurant chicken fajitas, wrapped inside a cheesy grilled burrito. Thin strips of chicken sear hard in a screaming-hot cast-iron pan with charred bell peppers and caramelized onions, then get piled onto a 12-inch tortilla with pinto beans and molten white queso. Rolled tight and toasted crisp on the griddle, every slice cuts open to a steaming fajita core. Guacamole and pico de gallo finish it off.

This burrito solves a problem every fajita lover knows: the platter is gone before the tortillas are. Here the whole sizzling show gets rolled into one hand-held package. Chicken breast is sliced thin, dusted with fajita seasoning and seared at high heat alongside peppers and onions until the edges char.

That same mix lands on a warm tortilla with warm queso and pinto beans, gets rolled tight, and then goes back onto the griddle to toast until the shell crackles. The method borrows from both a steakhouse fajita station and a taqueria plancha, and it comes together in about half an hour on a single pan plus a small saucepan. Cut one open and the queso stretches, the steam rolls out, and the peppers still carry their blisters.

Why this recipe works

High heat is the entire trick. Fajita seasoning contains paprika, cumin and garlic that bloom and toast in oil at around 450°F, building the smoky depth that low-and-slow cooking never reaches.

Slicing the chicken thin gives every strip maximum contact with the metal, so a browned crust forms in minutes instead of the meat grayly steaming in its own juice. Cooking the vegetables on the far side of the same pan keeps them from watering down the sear while letting them absorb the seasoned fond.

The assembly order matters as much as the sear. Queso goes down first because a warm, sticky cheese layer anchors the beans and the fajita mix to the tortilla, so the roll stays tight and the filling stays put.

Warming the tortilla makes it pliable enough to roll without cracking, and a second pass on the griddle toasts the shell into a crisp, golden shell that holds its shape when sliced. Filling kept to the middle third means clean ends and no blowouts.

Notes and substitutions

Choose bell peppers in contrasting colors for the best look and a sweeter, rounder char; red and yellow bring more sugar to the pan than green. A 12-inch burrito-size flour tortilla is essential; taco-size tortillas cannot hold this filling. Any smooth white queso works, as long as it is pourable when warm. Pinto beans should be drained well so excess liquid never softens the tortilla from the inside.

Equipment stays simple: one large cast-iron skillet or flat griddle, tongs, a small saucepan and an instant-read thermometer. Cast iron is worth reaching for because it holds its temperature when cold chicken hits the surface.

If the pan is small, sear the chicken in two batches; crowding is the fastest way to lose the crust. Chicken thighs can replace the breast, and black beans can replace the pinto beans, without changing anything else.

  • chicken breast: Boneless skinless chicken thighs stay juicier over high heat; cook to the same 165°F internal temperature.
  • white queso: Any smooth melting cheese sauce works; queso fresco crumbled on top is a saltier, less melty option.
  • pinto beans: Black beans or refried beans hold the roll together just as well; drain them well so the tortilla stays crisp.
  • fajita seasoning: Chili powder, cumin, smoked paprika, garlic powder, oregano, salt and pepper in equal-ish proportions makes a quick stand-in.
