Before you start

Before starting, make sure the yeast is fresh and the water is warm but not hot — about 110°F (43°C) — to activate it properly. Have all the ingredients measured and ready: dice the chicken, chop the onion and peppers, and mince the garlic.

Grease a large baking dish or line a baking sheet with parchment paper. If you are using a stand mixer, fit it with the dough hook; otherwise, a large bowl and a sturdy spoon work just as well. Clear a countertop for kneading and shaping, and have a clean kitchen towel ready to cover the dough while it rises.

Ingredients at a glance (15)
  • 3 1/2 cups all-purpose flour
  • 2 1/4 tsp active dry yeast
  • 1 tbsp granulated sugar
  • 1 1/2 tsp salt
  • 1 1/4 cups warm water (110°F/43°C)
  • 2 tbsp olive oil
  • 1 1/2 lb boneless skinless chicken breast, diced
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 medium red bell peppers, diced
  • 3 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 3 cups shredded mozzarella cheese

Instructions

Making and shaping the dough

  1. Make the dough
In a small bowl, dissolve the yeast and sugar in warm water and let stand for 5 minutes until frothy. In a large bowl, combine the flour and salt. Add the yeast mixture and olive oil, then stir until a shaggy dough forms. Turn the dough out onto a floured surface and knead for about 8 minutes, until smooth and elastic. Place the dough in a lightly oiled bowl, cover, and let rise in a warm spot for 1 hour, or until doubled in size.
Look for The dough is smooth, springs back when poked, and has doubled in volume.
Tip If the dough is too sticky, add a little more flour, a tablespoon at a time.
  2. Shape the bread pot
Punch down the risen dough. On a lightly floured surface, roll out about two-thirds of the dough into a large circle. Press it into a round baking dish or onto a baking sheet, forming a hollow bowl shape with thick sides. Roll the remaining dough into a circle for the lid, and shape a small knob handle from a scrap of dough. Attach the knob to the center of the lid with a dab of water. Cover both and let rest for 15 minutes.
Look for The dough bowl holds its shape and the lid is even in thickness.
Tip Make the bowl walls about 1/2 inch thick so they hold the filling without tearing.

The dough should be smooth, elastic, and doubled in size after rising. When you press a finger into it, the indentation should remain. The shaped bowl should hold its form, with thick, even walls and a lid that fits snugly.

The dough should feel soft and pillowy, not sticky. If it is too sticky, dust with a little flour; if too dry, add a teaspoon of water at a time. The bowl should be about 1/2 inch thick on the sides and bottom, with a slightly thicker rim to hold the filling.

Cooking the filling

  1. Cook the chicken filling
Heat the olive oil in a large skillet over medium-high heat. Add the diced chicken and cook, stirring occasionally, until browned on all sides but not fully cooked through, about 5 minutes. Add the garlic, onion, and red bell peppers, and cook for another 3 minutes until the vegetables soften. Stir in the tomato paste, cumin, and oregano, and cook for 2 minutes until the mixture is thick and saucy. Remove from heat.
Look for The chicken is browned, the vegetables are tender, and the sauce coats everything.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Do not overcook the chicken here; it will finish cooking in the oven.
  2. Fill the bread pot
Spoon the chicken filling into the hollow bread bowl, spreading it evenly. Top with the shredded mozzarella, mounding it over the filling and letting it spill over the edges of the dough.
Look for The filling is level and the cheese covers it completely.
Tip Pile the cheese high for the best pull.

The chicken should be browned on the outside but still slightly pink in the center, as it will finish cooking in the oven. The vegetables should be tender and the sauce should coat everything thickly, with no excess liquid pooling in the pan. The aroma of cumin and oregano should be fragrant, and the tomato paste should have deepened in color to a rusty red. Taste the filling and adjust salt if needed, but remember the cheese will add saltiness.

Baking and serving

  1. Bake until bubbly
Preheat the oven to 400°F (200°C). Place the filled bread pot on a baking sheet and bake for 25–30 minutes, until the cheese is melted, bubbly, and golden in spots, and the dough is cooked through and deep golden brown.
Look for The cheese is bubbling over the crust and the dough is golden brown.
Tip If the lid browns too quickly, cover it loosely with foil.
  2. Rest and serve
Remove the casserole from the oven and let it rest for 5 minutes. Place the bread lid on top and bring the whole pot to the table. Tear into the cheesy bread, pull off the lid, and stretch the cheese for the perfect serving moment.
Look for The cheese stretches in long ribbons and the bread is crisp on the outside, soft inside.
Tip Letting it rest helps the filling set slightly and prevents burns.

The cheese should be fully melted and bubbling, with golden brown spots on top. The bread should be a deep golden brown and sound hollow when tapped. The filling should be hot and steamy, with the chicken cooked through and reaching 165°F (74°C). Let the casserole rest for 5 minutes, then place the lid on top and bring it to the table. When you pull off the lid, the cheese should stretch in long, elastic ribbons.

Common mistakes

One common mistake is overfilling the bread bowl with too much sauce, which can make the dough soggy and difficult to eat. Keep the filling thick and saucy, but not soupy. Another pitfall is underbaking the dough — the outside should be dark golden brown and crisp, not pale and doughy.

If the top browns too quickly, cover it loosely with foil. Also, be careful not to overwork the dough when kneading, which can make the bread tough; knead just until smooth and elastic. Finally, let the dough rise in a warm, draft-free spot for the full hour, or the bread will be dense.

How to tell it’s done

The casserole is done when the bread is deep golden brown and sounds hollow when tapped on the bottom, and the cheese is completely melted and bubbling with browned spots on top. The filling should be hot and steaming, and the chicken should register 165°F (74°C) in the thickest part.

If you do not have a thermometer, cut into a piece of chicken to check that it is opaque and no longer pink inside. Let the casserole rest for a few minutes before serving to allow the filling to set slightly, making it easier to scoop and less likely to burn mouths.
