Tips for success
To ensure the meatballs stay tender, do not overmix the meat mixture when forming them. Handle the meat gently and shape them into uniform balls so they cook evenly.
Sear them in a hot skillet with a little oil until deeply browned on all sides—this adds flavor and helps them hold together during baking.
For an extra layer of flavor, you can add a pinch of red pepper flakes to the sauce if you like a little heat.
The dish is also delicious with a dollop of plain yogurt or a sprinkle of fresh herbs like parsley or mint when serving, though the video keeps it simple. If you have leftover casserole, it reheats well in the oven or microwave.
Variations
- Chicken Meatballs: Swap the beef meatballs for ground chicken or turkey meatballs. Ensure they are cooked to 165°F (74°C) in the center. The flavor will be lighter but still delicious with the tomato sauce.
- Add Zucchini: Add sliced zucchini to the frying step along with the eggplant and potatoes. It will add a mild, summery flavor and extra texture. Fry until golden and tender, then proceed with the recipe as written.
- Spicy Version: Stir 1/2 teaspoon of red pepper flakes or a chopped fresh chili into the sauce for a spicy kick. Adjust the amount to your heat preference. This adds a pleasant warmth without overwhelming the dish.
- Vegetarian Option: Replace the meatballs with large chunks of halloumi or firm tofu, seared until golden. For a vegan version, use vegan meatballs or extra vegetables like mushrooms. Adjust cooking times as needed.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.

Store any leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day. Reheat gently in the oven or microwave until warmed through.
You can assemble the entire casserole (without baking) up to 24 hours in advance. Cover and refrigerate, then bake as directed, adding 5–10 minutes to the cooking time if starting from cold. The fried vegetables can also be prepared a day ahead and stored in the refrigerator.
Serving ideas
Serve this casserole hot, straight from the baking dish, with a spoon to capture all the sauce. It pairs beautifully with crusty bread, rice, or bulgur pilaf to soak up the savory juices.
A simple green salad with a lemon vinaigrette would brighten the meal and balance the richness.
For a family-style dinner, place the baking dish in the center of the table and let everyone help themselves.
The dish is hearty enough to stand alone, but you can also serve it with a side of yogurt or a sprinkle of fresh herbs for added freshness. Leftovers make a great lunch the next day, served cold or reheated.

Tender Meatballs and Roasted Veggies Casserole

Ingredients
- 1 large eggplant, cut into 1-inch cubes
- 2 medium potatoes, peeled and cut into 1-inch cubes
- 1 cup vegetable oil, for frying
- 400 g seared beef köfte meatballs
- 1 cup sweet green peas
- 3 sweet green sivri peppers, sliced
- 2 tbsp tomato paste
- 1 cup warm water
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
Instructions
- Heat the vegetable oil in a large skillet over medium-high heat until shimmering. Working in batches, add the eggplant cubes and fry until golden brown and tender, about 4–5 minutes. Remove with a wire spider strainer and drain on paper towels. Repeat with the potato cubes, frying until golden and cooked through, about 5–6 minutes. Transfer both to a large baking dish.
- Arrange the seared beef meatballs evenly over the fried vegetables in the baking dish. Sprinkle the sweet green peas and sliced sivri peppers over the top, distributing them evenly.
- In a small bowl, whisk together the tomato paste, warm water, olive oil, salt, black pepper, and dried oregano until smooth. Pour the sauce evenly over the casserole, making sure to cover all the ingredients.
- Cover the baking dish with a sheet of damp crumpled parchment paper, tucking it around the edges. Place in the oven and bake at 400°F (200°C) for 25 minutes, until the sauce is bubbling and the vegetables are tender.
- Carefully remove the parchment paper, revealing the steaming casserole. Let it rest for 5 minutes before serving. Spoon the meatballs and roasted vegetables onto plates, making sure to include some of the savory sauce.
