Before you start

Preheat the oven to 400°F (200°C). Cut the eggplant and potatoes into uniform 1-inch cubes so they cook evenly. Have the seared meatballs ready—if they are homemade, prepare them ahead of time.

Measure all the sauce ingredients and have the baking dish and parchment paper on hand. Crumple the parchment paper and dampen it slightly under running water, then shake off excess water. This helps it conform to the dish and keeps moisture in during baking.

Ingredients at a glance (12)
  • 1 large eggplant, cut into 1-inch cubes
  • 2 medium potatoes, peeled and cut into 1-inch cubes
  • 1 cup vegetable oil, for frying
  • 400 g seared beef köfte meatballs
  • 1 cup sweet green peas
  • 3 sweet green sivri peppers, sliced
  • 2 tbsp tomato paste
  • 1 cup warm water
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano

Instructions

Frying the Vegetables

  1. Fry the Vegetables
Heat the vegetable oil in a large skillet over medium-high heat until shimmering. Working in batches, add the eggplant cubes and fry until golden brown and tender, about 4–5 minutes. Remove with a wire spider strainer and drain on paper towels. Repeat with the potato cubes, frying until golden and cooked through, about 5–6 minutes. Transfer both to a large baking dish.
Look for Eggplant and potatoes are golden brown and fork-tender.
Tip Do not overcrowd the skillet; fry in batches to keep the vegetables crispy.
  2. Add the Meatballs and Vegetables
Arrange the seared beef meatballs evenly over the fried vegetables in the baking dish. Sprinkle the sweet green peas and sliced sivri peppers over the top, distributing them evenly.
Look for The dish is evenly layered with meatballs, peas, and peppers.
Tip Tuck the peppers slightly under the meatballs so they soften during baking.

By the end of this phase, the eggplant and potatoes should be golden brown and crisp on the outside, with a soft interior. The kitchen will smell of hot oil and caramelizing vegetables. The fried cubes should be transferred to the baking dish in an even layer, ready to receive the meatballs and other toppings.

Assembling and Baking

  1. Make the Sauce
In a small bowl, whisk together the tomato paste, warm water, olive oil, salt, black pepper, and dried oregano until smooth. Pour the sauce evenly over the casserole, making sure to cover all the ingredients.
Look for The sauce is a uniform reddish-orange and coats the ingredients.
Tip Whisk thoroughly so the tomato paste fully dissolves into the water.
  2. Cover and Bake
Cover the baking dish with a sheet of damp crumpled parchment paper, tucking it around the edges. Place in the oven and bake at 400°F (200°C) for 25 minutes, until the sauce is bubbling and the vegetables are tender.
Look for The sauce is bubbling around the edges and the parchment is slightly puffed.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Crumple the parchment paper before wetting it so it fits snugly over the dish.

The casserole should be covered with damp parchment and placed in the oven. After 25 minutes, the sauce should be bubbling and the vegetables tender. The parchment will be slightly puffed and the edges of the dish will show active bubbles. The aroma will be rich and savory, with notes of tomato and oregano.

Finishing and Serving

  1. Uncover and Serve
Carefully remove the parchment paper, revealing the steaming casserole. Let it rest for 5 minutes before serving. Spoon the meatballs and roasted vegetables onto plates, making sure to include some of the savory sauce.
Look for The meatballs are glossy and the vegetables are caramelized.
Tip Let the casserole rest briefly so the sauce thickens slightly.

Once the parchment is removed, the casserole should be steaming and the meatballs glossy. The sauce will be slightly thickened and coating the ingredients. Let it rest briefly, then serve with a spoon to capture all the elements. The meatballs should be tender and the vegetables soft, with a deep, roasty flavor.

Common mistakes

One common mistake is overcrowding the frying pan, which lowers the oil temperature and makes the vegetables greasy instead of crisp.

Fry in small batches and allow the oil to reheat between batches. Another pitfall is skipping the parchment cover—without it, the top can dry out and the sauce may reduce too much.

Also, be careful not to overcook the vegetables in the oven; they should be tender but still hold their shape. Finally, taste the sauce before pouring it over the casserole and adjust the salt as needed.

How to tell it’s done

The casserole is done when the sauce is bubbling vigorously around the edges and the vegetables are fork-tender. The meatballs should register 160°F (71°C) on an instant-read thermometer.

Let the dish rest for 5 minutes before serving—this allows the sauce to settle and the flavors to meld. The vegetables should be soft but not mushy, and the meatballs should be juicy and tender.

  • Ground meat: 160°F (71°C) in the thickest part
  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
