Tips for success
For a more intense flavor, add a pinch of smoked paprika or crushed red pepper flakes to the cheese before adding the eggs. This adds a subtle warmth that complements the tang of the pickle brine. You can also experiment with different types of cheese, such as Monterey Jack or a mild gouda, depending on your personal preference for creaminess or sharpness.
If you prefer a firmer yolk, extend the steaming time by another 30 seconds. Conversely, if you enjoy a runnier yolk, reduce the steaming time slightly.
Always adjust based on your stove's specific heat output, as burner temperatures can vary significantly. Keep a close eye on the pan during the final stage to ensure the perfect balance of crispy cheese and tender, cooked egg.
Variations
- Spicy Jalapeno Twist: Replace the dill pickle slices with fresh or pickled jalapeno rounds. The heat from the peppers pairs beautifully with the cheddar crust and adds an extra layer of complexity to the sandwich.
- Herb-Infused Crust: Sprinkle dried chives or fresh parsley over the cheese before cracking the eggs. This adds a fresh, aromatic element that brightens the savory profile of the cheddar and egg combination.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 24 hours. Reheat carefully to avoid drying out the eggs.
- Reheat
- Reheat in a nonstick skillet over medium-low heat until warmed through and the cheese bottom regains some of its crispness.
This dish is best enjoyed immediately after cooking to ensure the cheese crust remains crispy. If you must store it, keep the egg patty separate from the bun to prevent the bread from becoming soggy.
Store the egg patty in an airtight container in the refrigerator for up to 24 hours. Note that the texture of the cheese crust will soften significantly upon storage and reheating.
While the egg is best fresh, you can prepare the cheese and pickle components in advance. Keep the shredded cheese and sliced pickles in the refrigerator until you are ready to cook.
The potato bun can also be pre-toasted and kept in an airtight bag. However, the actual frying and steaming process must be done just before serving to maintain the integrity of the crispy crust.
Serving ideas
Serve this sandwich alongside a simple side salad of fresh greens dressed with a light vinaigrette to balance the richness of the cheese.
The crunch of the egg sandwich pairs wonderfully with the freshness of crisp lettuce or sliced cucumbers. It is a substantial breakfast that requires little else, but a side of fresh fruit or a cup of coffee makes for a complete morning meal.
Presentation is key for this dish, so place the sandwich on a warm plate to keep the cheese crust from cooling too quickly. If you are serving this for a brunch, consider adding a small side of extra pickles or a dollop of chipotle mayo for dipping. The focus should remain on the contrast between the tangy brine and the savory, crispy cheese-encrusted egg.

- 2 large eggs
- 4 crisp dill pickle slices
- 15 milliliters dill pickle brine
- 1 toasted potato bun
