Tips for success
To achieve the most consistent results, pat the chicken wings dry with paper towels before marinating. Excess moisture on the surface of the skin can prevent the rice flour from forming a cohesive, crispy layer during the frying stage. If you have extra time, leave the wings uncovered in the refrigerator for an hour after marinating to further dry the skin.
When adding the palm sugar to the wok, crush it into smaller pieces first so that it melts evenly into the sweet chili sauce.
If the sauce becomes too thick or sticky before you have tossed all the wings, add a splash of warm water to loosen the consistency. Always serve these wings immediately, as the crispy coating will lose its texture the longer it sits in the sauce.
Variations
- Spicy Mango Wings: Add 1/4 cup of mango puree to the sweet chili glaze for a tropical, fruity sweetness that complements the heat of the bird's eye chilies.
- Extra Heat Wings: Increase the amount of bird's eye chili rings and add a teaspoon of chili flakes into the rice flour dredge for a significantly spicier kick.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 2 days in the refrigerator.
- Reheat
- Reheat in a preheated oven at 375°F (190°C) on a wire rack for 8–10 minutes until crispy and hot.
Store any leftover wings in an airtight container in the refrigerator for up to 2 days. Allow the wings to cool at room temperature for no more than 2 hours before moving them to the refrigerator. Keep the garnish separate if possible, as the moisture from the wings will cause the fried shallots and peanuts to lose their crunch over time.
You can prepare the marinade and dredge the chicken ahead of time, but the frying and glazing should be done just before serving. The wings can be marinated for up to 4 hours in the refrigerator.
The garnishes, such as the crushed peanuts and chopped basil, can be prepared several hours in advance and stored in small containers until you are ready to assemble the final dish.
Serving ideas
Serve these wings hot on a large platter, making sure to distribute the garnish evenly over the top. The contrast between the hot, sticky wings and the fresh, cold Thai basil is essential to the dish.
Offer plenty of napkins, as these are meant to be eaten with your hands. Consider serving them alongside a simple cucumber salad to provide a refreshing, cooling balance to the bold flavors of the chili glaze.
The presentation is key to the overall experience. Arrange the wings in a slight mound to create height, and sprinkle the fried shallots, crushed peanuts, and red chili rings generously over the top.
The vibrant colors of the basil and the chilies make for a stunning centerpiece. If serving at a casual gathering, provide extra bowls for the bones and perhaps a side of steamed jasmine rice to soak up any remaining glaze.

Sticky Thai Sweet Chili Wings for a Bold Dinner

Ingredients
- 2 lb chicken wings
- 2 tbsp fish sauce
- 1 tbsp lime juice
- 1 tsp white pepper
- 1 cup rice flour
- 1/2 cup sweet chili garlic sauce
- 2 tbsp palm sugar
- 1/4 cup fried shallots, for garnish
- 2 tbsp crushed roasted peanuts, for garnish
- 1 tbsp red bird's eye chili rings, for garnish
- 2 tbsp fresh Thai basil, chopped
Instructions
- In a large mixing bowl, combine the chicken wings with the fish sauce, lime juice, and white pepper. Toss well to ensure every wing is evenly coated. Cover and refrigerate for at least 30 minutes to allow the flavors to penetrate the meat thoroughly.
- Remove the wings from the refrigerator and dredge each piece in the rice flour until fully coated. Heat your carbon-steel wok with oil to 370°F (188°C). Fry the wings in batches for 10 minutes until they reach an internal temperature of 165°F (74°C) and are shatteringly crisp. Drain on paper towels and let rest for 5 minutes.
- Wipe out the wok and heat it over high heat. Add the sweet chili garlic sauce and palm sugar, stirring until the mixture bubbles and thickens. Return the fried wings to the wok and toss rapidly until every wing is glossy and coated. Remove from heat and serve immediately with fried shallots, crushed peanuts, chili rings, and fresh Thai basil.
