Before you start

Before starting, ensure all ingredients are measured and ready, as the cooking process moves very quickly. Set up a station for dredging the wings to keep your workspace clean. Prepare the garnish ingredients—chopping the basil, crushing the peanuts, and slicing the chili rings—so they are ready for immediate use once the wings are glazed.

Clear enough counter space to handle the cooling rack and the wok safely. Ensure your thermometer is calibrated and accessible to verify the internal temperature of the chicken.

Ingredients at a glance (11)
  • 2 lb chicken wings
  • 2 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 tsp white pepper
  • 1 cup rice flour
  • 1/2 cup sweet chili garlic sauce
  • 2 tbsp palm sugar
  • 1/4 cup fried shallots, for garnish
  • 2 tbsp crushed roasted peanuts, for garnish
  • 1 tbsp red bird's eye chili rings, for garnish
  • 2 tbsp fresh Thai basil, chopped

Instructions

Phase 1: Flavor Infusion

  1. Marinating the wings
In a large mixing bowl, combine the chicken wings with the fish sauce, lime juice, and white pepper. Toss well to ensure every wing is evenly coated. Cover and refrigerate for at least 30 minutes to allow the flavors to penetrate the meat thoroughly.
Look for The chicken should be evenly coated with the marinade.
Tip Keep the chicken cold in the refrigerator while marinating to ensure food safety.

The chicken should be fully coated in the marinade, with no dry spots remaining. The aroma of the fish sauce and lime should be present, indicating that the flavors are beginning to permeate the meat.

Ensure the bowl is covered tightly and placed in the coldest part of your refrigerator. After 30 minutes, the chicken should look slightly hydrated and ready for the dredging process.

Phase 2: Achieving the Crunch

  1. Dredging and frying
Remove the wings from the refrigerator and dredge each piece in the rice flour until fully coated. Heat your carbon-steel wok with oil to 370°F (188°C). Fry the wings in batches for 10 minutes until they reach an internal temperature of 165°F (74°C) and are shatteringly crisp. Drain on paper towels and let rest for 5 minutes.
Look for The wings should look golden brown and feel firm to the touch.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Fry in small batches to maintain the oil temperature and ensure maximum crispiness.

The wings should emerge from the oil with a uniform, golden-brown crust that is shatteringly crisp. Each wing should be hot and firm. The oil should have remained clear during the process, and the wings should not appear oily or translucent. Check the internal temperature with a thermometer to confirm they have reached 165°F (74°C) before proceeding to the final glaze.

Phase 3: The Sticky Glaze

  1. Glazing and serving
Wipe out the wok and heat it over high heat. Add the sweet chili garlic sauce and palm sugar, stirring until the mixture bubbles and thickens. Return the fried wings to the wok and toss rapidly until every wing is glossy and coated. Remove from heat and serve immediately with fried shallots, crushed peanuts, chili rings, and fresh Thai basil.
Look for The sauce should be sticky and cling to the surface of the wings.
Tip Work quickly once the sauce is in the wok to prevent the sugar from burning.

The sauce in the wok should be bubbling, syrupy, and dark amber in color. It should coat the back of a spoon with a thick, glossy layer. When the wings are tossed, the sound should be audible as the sticky sauce adheres to the crispy skin. The final dish should smell aromatic, sweet, and slightly spicy, with the garnishes providing a fresh contrast to the sticky, glazed wings.

Common mistakes

Avoid overcrowding the wok, as this drops the oil temperature too quickly and leads to greasy, soggy wings. Ensure the oil is properly heated to 370°F (188°C) before adding the chicken; if the oil is too cool, the rice flour will absorb the fat instead of forming a crisp barrier.

Do not leave the wings in the glaze for too long over high heat, as the sugar content in the sweet chili sauce and palm sugar can burn very quickly and turn bitter.

How to tell it’s done

The wings are ready when the internal temperature reaches 165°F (74°C). At this point, the crust should be deep golden brown and exceptionally crispy. When tapped with tongs, the wings should sound hollow and rigid.

The meat should pull away easily from the bone without being mushy. If the wings are not reaching this temperature within 10 minutes, adjust the heat slightly or fry in smaller batches to ensure the center of the chicken is fully cooked through.

  • Poultry: 165°F (74°C) in the thickest part
