Tips for success
For the best caramelization, brush the butter generously and evenly over the tops of the rolls. Use a pastry brush to reach every nook and cranny.
If the rolls are very tall, you can press them down gently before baking to create a more compact slider that's easier to eat.
To make slicing easier, use a serrated knife and cut the sliders while they're still in the baking dish. Serve with extra cranberry sauce on the side for those who want more tartness.
These sliders are best enjoyed fresh from the oven, but they can be kept warm in a low oven for up to 30 minutes.
Variations
- Chicken and Apple: Swap the turkey for sliced rotisserie chicken and add thin apple slices along with the cranberry sauce. The apple adds a crisp, sweet contrast that pairs beautifully with the Brie.
- Spicy Cranberry: Mix 1 tablespoon of hot sauce or a pinch of cayenne into the cranberry sauce for a spicy kick. The heat balances the creamy Brie and sweet rolls.
- Ham and Swiss: Replace the turkey with sliced ham and the Brie with Swiss cheese. Use a honey mustard instead of Dijon for a sweeter glaze.
- Vegetarian: Omit the turkey and add roasted butternut squash or caramelized onions. The cranberry and Brie still shine, making a satisfying meatless version.
Storage and make-ahead
- Fridge
- Leftover sliders can be refrigerated in an airtight container for up to 3 days. Reheat in the oven for best texture.
- Freezer
- Assembled sliders can be frozen before baking, without the butter brush, for up to 2 months. Thaw overnight and bake as directed.
- Reheat
- Reheat leftover sliders in a 350°F (175°C) oven for 8-10 minutes, or until hot and bubbly.
Store leftover sliders in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F (175°C) oven for 8-10 minutes, or until warmed through, to restore the crisp tops. Avoid microwaving, as it can make the rolls soggy.
Assemble the sliders up to 24 hours in advance, but do not brush with the butter. Cover and refrigerate. When ready to bake, brush with the rosemary Dijon butter and bake as directed, adding 5 minutes to the baking time to account for the cold filling.
Serving ideas
Serve these sliders warm as an appetizer for a holiday party, game day spread, or as a main course with a simple green salad.
The combination of sweet rolls, savory turkey, and creamy Brie is universally loved. Provide small plates and napkins, as the cheese tends to pull with each bite.
For a more substantial meal, pair the sliders with roasted vegetables or a bowl of soup. They also make great party fare because they can be eaten with one hand.
If serving a crowd, double the recipe and use two baking dishes. Garnish with extra fresh rosemary for a pop of color.

Cranberry Brie Turkey Sliders with Rosemary Dijon Butter

Ingredients
- 1/2 lb carved smoked turkey breast
- 8 oz Brie cheese, sliced
- 1/2 cup whole-berry orange cranberry sauce
- 4 tbsp butter
- 1 tbsp chopped fresh rosemary
- 2 tsp Dijon mustard
- 12 sweet rolls (such as brioche slider buns)
Instructions
- Preheat the oven to 350°F (175°C). Without separating the rolls, slice the entire slab of sweet rolls in half horizontally. Place the bottom half in a 9x13-inch baking dish. Layer the carved smoked turkey breast evenly over the bottom half, followed by the sliced Brie cheese. Spoon the whole-berry orange cranberry sauce over the cheese and spread it gently. Place the top half of the rolls over the filling.
- In a small saucepan, melt the butter over medium heat. Add the chopped fresh rosemary and Dijon mustard, stirring to combine. Cook for 1 to 2 minutes until the butter is fragrant and lightly browned, being careful not to burn it. Remove from heat.
- Brush the rosemary Dijon brown butter generously over the top of the rolls, making sure to cover the entire surface. Place the baking dish in the preheated oven and bake uncovered for 18 minutes, until the tops are caramelized and the Brie is bubbling around the edges.
- Remove the baking dish from the oven and let the sliders rest for 5 minutes. Use a spatula to lift individual sliders out of the dish, ensuring each has a good amount of melted Brie and cranberry sauce. Serve warm.
