Tips for success
For the best flavor, use freshly shredded cheddar-Jack cheese, as it melts more smoothly than pre-shredded blends. If you prefer a spicier kick, add a diced jalapeño along with the bell peppers.
The dish is quite rich, so consider serving it with a side of Mexican rice or a simple green salad to balance the meal.
Warm the tortillas before serving to make them pliable and enhance their flavor.
You can do this in a dry skillet over medium heat for 30 seconds per side, or wrap them in a damp paper towel and microwave for 30 seconds. This step makes the tortillas soft and prevents them from tearing when filled.
Variations
- Spicy Chipotle Version: Add 2-3 chipotle peppers in adobo sauce, minced, along with the other seasonings. This adds a smoky, spicy heat that pairs beautifully with the bacon and ranch. Reduce the smoked paprika to 2 teaspoons to balance the flavors.
- Veggie-Packed Fajitas: Add 1 cup of sliced mushrooms and 1 cup of cherry tomatoes to the slow cooker along with the bell peppers. The mushrooms add an earthy flavor, and the tomatoes break down into a slightly tangy sauce. Omit the bacon for a vegetarian version, or use a plant-based bacon alternative.
- Creamy Cilantro-Lime Finish: After cooking, stir in 1/4 cup of chopped fresh cilantro and the juice of 1 lime. This brightens the rich, creamy sauce and adds a fresh, citrusy note. Serve with extra lime wedges for squeezing over the top.
- BBQ Ranch Twist: Swap the smoked paprika for 2 tablespoons of your favorite barbecue sauce, and use a smoky cheddar instead of cheddar-Jack. This gives the dish a sweet, smoky flavor that pairs well with the ranch seasoning. Reduce the cream cheese to 3/4 cup for a thinner sauce.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The chicken and sauce will keep well, and the flavors may even deepen overnight. Reheat gently in the microwave or on the stovetop, adding a splash of water or chicken broth if the mixture has thickened too much.
This recipe is excellent for meal prep. Assemble the chicken, peppers, seasonings, and cream cheese in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook on LOW for 4 hours. Add the cheese and bacon during the last 15 minutes as directed.
Serving ideas
Serve the chicken fajita mixture in warm flour tortillas, and let everyone customize their own with toppings like diced tomatoes, avocado slices, sour cream, and chopped scallions.
The creamy, smoky filling pairs well with a squeeze of fresh lime juice and a sprinkle of cilantro for extra freshness.
For a lighter serving option, spoon the mixture over a bed of lettuce for a taco salad, or serve it alongside rice and beans. The leftovers also make excellent quesadillas or nachos the next day. This dish is versatile enough to be the star of a casual dinner or a festive gathering.

Slow-Cooker Smoky Bacon & Ranch Chicken Fajita Bake

Ingredients
- 2 lb chicken tenderloins
- 3 bell peppers, sliced
- 1 packet fiesta ranch seasoning
- 1 tbsp smoked paprika
- 1 cup cream cheese, softened
- 2 cups shredded cheddar-Jack cheese
- 1 cup crispy crumbled bacon
- warm tortillas, for serving
- diced tomatoes, for serving
- avocado slices, for serving
- sour cream, for serving
- chopped scallions, for serving
Instructions
- Place the chicken tenderloins in the bottom of a 6-quart slow cooker. Scatter the sliced bell peppers over the chicken. Sprinkle the fiesta ranch seasoning and smoked paprika evenly over the top. Add the softened cream cheese in dollops, spreading it slightly. Do not stir.
- Cover the slow cooker and cook on LOW for 4 hours. Do not lift the lid during this time to keep the heat steady. The chicken will become tender and the cream cheese will melt into a creamy sauce as the chicken releases its juices.
- After 4 hours, sprinkle the shredded cheddar-Jack cheese evenly over the chicken mixture. Top with the crispy crumbled bacon. Cover and continue cooking on LOW for 15 minutes, until the cheese is fully melted and bubbly.
- To ensure the chicken is safe to eat, insert an instant-read thermometer into the thickest part of a tenderloin. The temperature must read at least 165°F (74°C). If not, return the lid and cook for another 15-20 minutes before checking again.
- Spoon the cheesy chicken fajita mixture into warm tortillas. Top with diced tomatoes, avocado slices, a dollop of sour cream, and a sprinkle of chopped scallions. Serve immediately while warm.
