Before you start

Before starting, slice the bell peppers into thin strips and set aside. Soften the cream cheese to room temperature for easier melting. Cook and crumble the bacon if not using store-bought bits.

Measure out the ranch seasoning and smoked paprika. Have the slow cooker and all ingredients ready so the layering process is quick and seamless.

Ingredients at a glance (12)
  • 2 lb chicken tenderloins
  • 3 bell peppers, sliced
  • 1 packet fiesta ranch seasoning
  • 1 tbsp smoked paprika
  • 1 cup cream cheese, softened
  • 2 cups shredded cheddar-Jack cheese
  • 1 cup crispy crumbled bacon
  • warm tortillas, for serving
  • diced tomatoes, for serving
  • avocado slices, for serving
  • sour cream, for serving
  • chopped scallions, for serving

Instructions

Layer and Cook

  1. Layer the Fajita Base
Place the chicken tenderloins in the bottom of a 6-quart slow cooker. Scatter the sliced bell peppers over the chicken. Sprinkle the fiesta ranch seasoning and smoked paprika evenly over the top. Add the softened cream cheese in dollops, spreading it slightly. Do not stir.
Look for The cream cheese will look patchy; that is fine.
Tip Using softened cream cheese blends more smoothly during cooking.
  2. Cover and Cook on Low
Cover the slow cooker and cook on LOW for 4 hours. Do not lift the lid during this time to keep the heat steady. The chicken will become tender and the cream cheese will melt into a creamy sauce as the chicken releases its juices.
Look for After 4 hours, the chicken should be fork-tender and the sauce bubbly.
Tip Resist the urge to peek; every lid lift adds cooking time.

After the initial layering, the slow cooker will look colorful with raw chicken, peppers, and cream cheese dollops. As it cooks, the cream cheese will melt into a creamy sauce, and the chicken will become opaque and tender.

The aroma of ranch and smoky paprika will fill the kitchen. After 4 hours, the mixture should be bubbling and the chicken easily shreds with a fork.

Melt and Finish

  1. Add Cheese and Bacon
After 4 hours, sprinkle the shredded cheddar-Jack cheese evenly over the chicken mixture. Top with the crispy crumbled bacon. Cover and continue cooking on LOW for 15 minutes, until the cheese is fully melted and bubbly.
Look for The cheese should be melted and the bacon fragrant.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip For a golden top, broil for 2-3 minutes after melting, if desired.
  2. Check Chicken Temperature
To ensure the chicken is safe to eat, insert an instant-read thermometer into the thickest part of a tenderloin. The temperature must read at least 165°F (74°C). If not, return the lid and cook for another 15-20 minutes before checking again.
Look for The thermometer should read 165°F (74°C).
Tip Shredding the chicken with two forks after checking makes serving easier.

Once the cheese and bacon are added, the top becomes a golden, bubbly layer of melted cheddar-Jack with crispy bacon bits. The cheese should be fully melted and the bacon fragrant. The chicken should be fully cooked and tender, and the sauce should be creamy and well combined. This is the point to check the internal temperature.

Serve and Top

  1. Serve in Warm Tortillas
Spoon the cheesy chicken fajita mixture into warm tortillas. Top with diced tomatoes, avocado slices, a dollop of sour cream, and a sprinkle of chopped scallions. Serve immediately while warm.
Look for The filling should be creamy and the toppings fresh.
Tip Warm the tortillas in a dry skillet or microwave for pliability.

The final dish is a creamy, cheesy chicken fajita mixture that holds together well in tortillas. The peppers are soft, the chicken is juicy, and the bacon adds a smoky crunch. Toppings like fresh tomatoes, avocado, and scallions add brightness and texture, balancing the richness of the cheese and cream.

Common mistakes

One common mistake is lifting the lid during the first 4 hours, which lets heat escape and increases cooking time. Another is using pre-shredded cheese that doesn't melt smoothly; shredding from a block gives a creamier result.

Overcooking the chicken can make it dry, so check the temperature at the 4-hour mark. Also, avoid adding the bacon too early, as it will become soggy instead of crispy.

How to tell it’s done

The dish is done when the chicken is fork-tender and registers at least 165°F (74°C) on an instant-read thermometer. The sauce should be creamy and slightly thickened, and the cheese on top should be fully melted and bubbly.

The peppers should be soft but still have a slight bite. If the sauce seems thin, let it cook uncovered for an additional 10-15 minutes to reduce.

  • Poultry: 165°F (74°C) in the thickest part
