Tips for success

For the most flavorful results, use fresh herbs rather than dried. Rosemary and thyme sprigs can be left whole and removed before serving, or chopped and stirred in.

The garlic cloves become sweet and spreadable — mash them into the gravy for extra depth. If the gravy seems thin after cooking, remove the pork and simmer the gravy on the stovetop to reduce and thicken.

To make this recipe even easier, prepare the garlic, herbs, and gravy the night before. Store them in the refrigerator in separate containers.

In the morning, simply place the roast in the slow cooker, top with the aromatics and gravy, and set the timer. This recipe is also great for feeding a crowd — it scales up easily as long as the roast fits in the slow cooker.

Variations

  • Spicy Kick: Add 1-2 chopped chipotle peppers in adobo sauce along with the gravy for a smoky heat. Reduce the butter to 2 tablespoons to balance the richness. Serve with pickled jalapeños for extra spice.
  • Citrus and Herb: Add the zest and juice of one orange to the gravy along with the herbs. The citrus brightens the rich pork and pairs well with the rosemary and thyme. Omit the butter and use olive oil instead for a lighter sauce.
  • Onion and Mushroom: Layer 1 large sliced onion and 8 oz sliced mushrooms at the bottom of the slow cooker before adding the pork. The vegetables will release moisture and add savory depth to the gravy. Increase the gravy to 2 1/2 cups to accommodate the extra vegetables.
  • BBQ Style: Replace the brown gravy with 2 cups of your favorite barbecue sauce and add 1/2 cup chicken broth. Omit the butter. After shredding, toss the pork with additional barbecue sauce and serve on buns with coleslaw.

Storage and make-ahead

Fridge
Store leftover pork and gravy in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth if needed.
Freezer
Freeze the shredded pork with gravy in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a saucepan over low heat, stirring occasionally, until hot. Add a little broth or water if the gravy is too thick.

Store leftover pork and gravy in an airtight container in the refrigerator for up to 4 days. The flavors will continue to develop as it sits. Reheat gently on the stovetop or in the microwave, adding a splash of broth or water if the gravy has thickened too much. The pork can also be frozen for up to 3 months.

This dish is ideal for making ahead. Cook the pork a day in advance, shred it, and store it in the gravy in the refrigerator. The next day, reheat gently on the stovetop or in the slow cooker on LOW.

The flavors meld even more overnight, making it taste even better the next day. It is a great option for parties or busy weeknights.

Serving ideas

Serve the shredded pork on toasted brioche slider buns for a crowd-pleasing meal. The sweet, buttery buns complement the savory pork and rich gravy. Add a side of coleslaw or pickles for crunch and acidity. For a low-carb option, serve the pork over cauliflower rice or mashed vegetables instead of buns.

This pork also works beautifully as a main course. Spoon it over mashed potatoes, polenta, or egg noodles, and drizzle with extra gravy. Garnish with fresh herbs, if desired.

The leftovers are excellent in tacos, quesadillas, or on a baked potato. The possibilities are endless, and the flavor is always satisfying.

Frequently asked questions

Can this recipe be made with a different cut of pork?
Yes, bone-in pork shoulder or pork butt works well. The bone adds flavor and helps keep the meat moist. Cooking time may be slightly longer. Avoid lean cuts like pork loin, which will dry out. If using a smaller roast, reduce the cooking time accordingly.
What if the gravy is too thin after cooking?
If the gravy is thinner than desired, remove the pork and shred it. Transfer the gravy to a saucepan and simmer over medium heat until reduced and thickened. Alternatively, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into the hot gravy, cooking until thickened.
Can this be cooked on high instead of low?
Yes, but the texture may be less tender. Cook on HIGH for about 5-6 hours, checking for doneness earlier. Low heat is recommended for the most succulent results, as it allows the collagen to break down slowly without drying out the meat.
How should leftovers be reheated?
Reheat leftovers gently on the stovetop over low heat, stirring occasionally, until hot. Add a splash of beef broth or water if the gravy has thickened. The microwave works too — heat in 1-minute intervals, stirring between. Avoid high heat, which can toughen the meat.
Can this recipe be doubled?
Yes, as long as the roast fits in the slow cooker. A 7-quart slow cooker can typically hold up to 6 pounds of pork. Keep the same cooking time, but check for doneness earlier. Do not overfill the slow cooker, as it may not cook evenly.

Slow Cooker Rosemary Thyme Brown Gravy Pork Shoulder

Prep 10 minCook 8 hRest 10 minTotal 8 h 20 minServes 8
Slow cooker pork shoulder with rosemary and thyme in rich brown gravy, garnished with fresh herbs.

Ingredients

  • 4 lb boneless Boston butt pork shoulder roast
  • 12 garlic cloves, smashed
  • 4 sprigs fresh rosemary
  • 6 sprigs fresh thyme
  • 2 cups rich brown gravy
  • 4 tbsp unsalted butter, cut into pats
  • 8 toasted brioche slider buns

Instructions

  1. Place the pork shoulder roast in the center of a 7-quart slow cooker. Scatter the smashed garlic cloves and fresh rosemary and thyme sprigs over the top of the roast. Pour the rich brown gravy over the roast, then dot with the pats of unsalted butter. Cover the slow cooker with the lid.
  2. Set the slow cooker to LOW and cook for 8 hours, or until the pork is fork-tender and easily shreds. The internal temperature of the pork should reach at least 145°F (63°C) for food safety, but for shredding it will be much higher, around 200°F (93°C). Let it rest for 3 minutes before slicing.
  3. When the pork is done, turn off the slow cooker. Remove the roast to a cutting board and let it rest for at least 3 minutes, tented loosely with foil. This allows the juices to redistribute.
  4. Using two forks, shred the pork into bite-sized pieces, discarding any large pieces of fat. Return the shredded pork to the slow cooker with the gravy and garlic confit, stirring to coat.
  5. Spoon the shredded pork and gravy onto toasted brioche slider buns. Serve immediately, with extra gravy on the side if desired.
