Tips for success

For the most flavorful gravy, use a good-quality au jus sauce or make your own with beef broth, soy sauce, and seasonings.

If you prefer a thicker sauce, whisk a tablespoon of cornstarch with a little water and stir it into the slow cooker during the last 30 minutes of cooking. This will give the gravy a glossy, rich texture without altering the flavor.

To make the dish even more hands-off, you can sear the pork shoulder in a hot skillet before adding it to the slow cooker.

This adds a nice browned crust and deepens the flavor, but it's not necessary—the slow cooker does all the work. If you're meal-prepping, double the recipe and freeze half for later. The pork reheats beautifully.

Variations

  • Add Bacon: For a smoky twist, cook 4 slices of bacon until crisp, crumble, and sprinkle over the finished dish. The bacon adds a salty crunch that complements the creamy gravy.
  • Swap the Mustard: If you don't have whole-grain Dijon, use smooth Dijon or even yellow mustard. The flavor will be slightly less textured but still delicious.
  • Make it Spicy: Add a teaspoon of smoked paprika or a pinch of cayenne pepper along with the sour cream and mustard for a subtle heat that builds with each bite.
  • Herb Infusion: Sprinkle fresh thyme leaves or a few sprigs of rosemary over the pork before cooking. The herbs will perfume the dish and add an aromatic note.

Storage and make-ahead

Fridge
Leftovers keep in the refrigerator for up to 4 days in an airtight container. Reheat gently with a splash of broth or water.
Freezer
Freeze the shredded pork and gravy in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat.
Reheat
Reheat on the stovetop over medium-low heat, stirring occasionally, until warmed through. Add a little broth if needed.

Store any leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day. Reheat gently on the stovetop or in the microwave, adding a splash of broth or water if the sauce has thickened too much.

This recipe is perfect for making ahead. Assemble everything in the slow cooker the night before, cover, and refrigerate.

In the morning, simply place the insert in the slow cooker and cook on low. You can also cook the entire dish, shred the pork, and store it in the refrigerator for up to 3 days before serving.

Serving ideas

Serve this pork shoulder over steamed white rice to soak up all the creamy gravy. The neutral rice balances the tangy Dijon and rich sour cream. For a low-carb option, serve over cauliflower rice or alongside roasted vegetables. The dish also works well with crusty bread for dipping into the sauce.

For a complete meal, add a simple green salad or steamed green beans on the side. The pork is hearty, so a light vegetable accompaniment keeps the plate balanced.

Garnish with fresh parsley or chives if you like, though the dish is delicious on its own. This is comfort food at its best—satisfying, savory, and sure to please.

Frequently asked questions

Can this recipe be made with a different cut of pork?
Yes, a pork butt or picnic roast works well, as these cuts are also well-marbled and become tender with slow cooking. You can also use a pork loin, but it will be leaner and may dry out if cooked too long. Adjust the cooking time accordingly—loin may be done in 6 hours on low.
Why does the gravy sometimes look curdled?
Curdling can happen if the sour cream is added to a very hot liquid or if the slow cooker is on high. To avoid this, make sure the sour cream is at room temperature when you add it, and always cook on low. If the sauce does curdle, whisk it vigorously to smooth it out.
Can this be cooked on high instead of low?
Yes, you can cook on high for about 5 to 6 hours, but the meat may not be as tender as when cooked on low. The low setting allows the collagen to break down more gradually, resulting in more succulent pork. If you're short on time, high is a good fallback.
Is it necessary to sear the pork before slow cooking?
No, searing is optional. It adds a deeper flavor and color, but the slow cooker will still produce delicious results without it. If you have time, searing the roast in a hot skillet for a few minutes on each side enhances the overall taste.
Can the potatoes be substituted with other vegetables?
Absolutely. Try sweet potatoes, parsnips, or turnips for a different flavor. Keep in mind that some vegetables cook faster than others, so cut them into similar-sized chunks to ensure even cooking. Root vegetables work best because they hold up well in the slow cooker.

Slow-Cooker Pork Shoulder with Dijon Cream Gravy

Slow-cooker pork shoulder with Dijon cream gravy, potatoes, and carrots in a black crockpot

Ingredients

  • 4 lb boneless pork shoulder roast
  • 1 1/2 lb baby Yukon Gold potatoes, halved
  • 4 medium heirloom carrots, thick-cut
  • 1/2 cup sour cream
  • 1/4 cup whole-grain Dijon mustard
  • 1 cup au jus sauce
  • 3 cups cooked white rice, for serving

Instructions

  1. Place the pork shoulder roast in the center of the slow cooker. Arrange the halved baby Yukon Gold potatoes and thick-cut heirloom carrots around the roast, tucking them into the bottom of the pot.
  2. Dollop the sour cream and whole-grain Dijon mustard over the top of the roast. Pour the au jus sauce along the side of the pot, being careful not to wash off the sour cream and mustard.
  3. Cover the slow cooker and cook on low for 8 to 10 hours, until the pork is fork-tender and shreds easily. The potatoes and carrots should be tender when pierced with a fork. Let it rest for 3 minutes before slicing.
  4. Remove the roast from the slow cooker and place it on a cutting board. Let it rest for at least 3 minutes, then shred the meat using two forks, discarding any large pieces of fat.
  5. Stir the cooking liquid in the slow cooker to combine the sour cream, Dijon, and au jus into a smooth, velvety gravy. The sauce should be thick enough to coat the back of a spoon.
  6. Return the shredded pork to the slow cooker and toss gently to coat with the gravy. Add the potatoes and carrots back in, stirring carefully so they don't break apart.
  7. Spoon a portion of steamed white rice onto each plate. Top with a generous mound of the shredded pork, potatoes, and carrots, and ladle extra gravy over the top.
Contains: milk, mustard
