Tips for success

To achieve an even deeper flavor, you can marinate the ribs in the glaze for up to 4 hours in the refrigerator before transferring them to the slow cooker. This extra time allows the gochujang and ginger to penetrate the meat more thoroughly, resulting in a more intense final taste once the long cooking process is complete.

If you prefer a slightly thicker glaze, you can remove the ribs once they are done and whisk a small amount of cornstarch slurry into the remaining liquid in the slow cooker. Turn the heat to high for 10 minutes to reduce the sauce further before drizzling it over the plated ribs for a restaurant-style presentation.

Variations

  • Spicy Kick: Add a teaspoon of red pepper flakes or a dash of chili oil to the glaze for an extra level of heat that complements the gochujang perfectly.
  • Citrus Infusion: Stir in the zest of one orange or a tablespoon of orange juice to the glaze for a bright, citrusy note that cuts through the richness of the pork.

Storage and make-ahead

Fridge
Keep in an airtight container for up to 3 days.
Freezer
Freeze in a freezer-safe container for up to 2 months.
Reheat
Reheat in a preheated oven at 300°F (150°C) until warmed through, adding a little water to keep the meat moist.

Store any leftovers in an airtight container to maintain moisture. Ensure the ribs are cooled within two hours of cooking before placing them into the refrigerator.

They can be stored in the fridge for up to three days, though the flavors often improve even further after sitting for twenty-four hours, making this an excellent candidate for advance preparation.

These ribs are perfect for making ahead as the flavors continue to develop over time. Simply cook the ribs as directed, allow them to cool completely, and store them in the refrigerator.

When you are ready to serve, gently reheat them in the oven or on the stovetop with a splash of water to loosen the glaze, ensuring they remain tender.

Serving ideas

Serve these ribs alongside a bowl of steamed jasmine rice or a simple cucumber salad to balance the intensity of the gochujang glaze.

The mildness of the rice acts as a perfect canvas for the sticky sauce, while the fresh, crunchy cucumbers provide a cooling contrast that cleanses the palate between bites of the rich, savory meat.

For a more substantial meal, consider adding a side of stir-fried bok choy or blanched snap peas.

The vegetal notes of these greens pair beautifully with the sweet and spicy profile of the ribs, creating a well-rounded dining experience that is both satisfying and visually appealing. Ensure everyone has plenty of napkins, as these ribs are meant to be enjoyed with your hands.

Frequently asked questions

Can baby back ribs be used instead of spare ribs?
Yes, baby back ribs work well, but they are leaner and will cook faster. Reduce the cooking time by about an hour and check for tenderness to ensure they do not dry out during the slow cooking process.
Why is it important to ladle the sauce over the ribs?
Ladling the sauce during the final hour ensures the ribs are evenly coated and helps the sugars in the honey caramelize. This creates the signature sticky, glossy finish that defines this dish and adds layers of flavor to the exterior of the meat.
Is it necessary to brown the ribs before slow cooking?
Browning is optional but can add extra depth of flavor. If you choose to brown them, do so quickly in a hot skillet before placing them in the slow cooker, but it is not strictly required for this recipe to be delicious.

Ingredients

  • 4 lb pork spare ribs, cut into individual portions
  • 1/2 cup gochujang chili paste
  • 1/3 cup honey
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 8 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • crushed roasted peanuts, for serving
  • fresh cilantro, for serving
  • sesame seeds, for serving

Instructions

  1. Place the pork spare ribs into the base of your slow cooker. In a separate bowl, whisk together the gochujang, honey, soy sauce, rice vinegar, minced garlic, and grated ginger until smooth. Pour this mixture evenly over the ribs, ensuring every piece is well-coated in the spicy-sweet marinade.
  2. Cover the slow cooker with its lid and set to cook on LOW for 6.5 hours. During the final hour of cooking, occasionally open the lid to ladle the bubbling, glossy glaze over the top of the ribs. Continue this process until the meat is exceptionally tender, reaching an internal temperature of at least 145°F (63°C). Once cooked, let the meat rest for at least 3 minutes before serving.
  3. Carefully remove the tender ribs from the slow cooker and arrange them on a dark slate platter. Drizzle any remaining glaze from the pot over the meat. Sprinkle generously with crushed roasted peanuts, fresh cilantro, and sesame seeds before serving immediately while hot.
