Tips for success
For the most flavorful gravy, use a high-quality beef chuck roast with good marbling. The fat renders as it cooks, enriching the sauce. If you have time, sear the roast in a hot skillet with a little oil before adding it to the slow cooker.
This adds a deep, caramelized flavor that elevates the final dish. However, the recipe works beautifully without this step, so feel free to skip it on busy days.
When shredding the beef, use two forks and pull in opposite directions for the best texture. For larger pieces, use your fingers (once the meat is cool enough) or a pair of tongs.
If you prefer a thicker gravy, remove the beef from the slow cooker and whisk a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) into the liquid. Simmer until thickened, then return the beef to the pot.
Variations
- Red Wine Gravy: After shredding the beef, stir in 1/2 cup of red wine and simmer for 5 minutes to deepen the flavor. The alcohol cooks off, leaving a rich, complex gravy.
- Mushroom and Onion: Add 8 oz sliced mushrooms and 1 large sliced onion to the slow cooker along with the roast. They will soften and meld into the gravy, adding earthy notes.
- Spicy Kick: Add 1-2 sliced jalapeños or a teaspoon of red pepper flakes along with the garlic and herbs for a subtle heat that complements the buttery richness.
- Balsamic Glaze: Drizzle 2 tablespoons of balsamic glaze over the shredded beef just before serving for a touch of sweetness and acidity that balances the savory gravy.
Storage and make-ahead
- Fridge
- Store leftover shredded beef and gravy in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze the shredded beef and gravy in an airtight container or freezer-safe bag for up to 3 months.
- Reheat
- Reheat the beef and gravy in a saucepan over medium-low heat, stirring occasionally, until warmed through.
Store leftover shredded beef and gravy in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, and the dish tastes even better the next day. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water if the gravy has thickened too much.
This dish is perfect for making ahead. Prepare the recipe as directed, then cool the shredded beef and gravy completely before storing in the refrigerator.
It can be made up to 2 days in advance. When ready to serve, reheat gently on the stovetop or in the slow cooker on LOW until warmed through. The beef will remain tender and flavorful.
Serving ideas
Serve the shredded beef over a bed of warm buttered egg noodles, as shown, or alongside mashed potatoes, rice, or crusty bread. The rich garlic-herb gravy is the star, so be generous when spooning it over the meat and starch. A simple green salad or steamed vegetables make a fresh counterpoint to the hearty dish.
For a cozy presentation, garnish with a few fresh thyme leaves or a sprig of rosemary. The roasted garlic cloves are a treat to spread on bread or mix into the noodles.
This dish is satisfying on its own, but a glass of full-bodied red wine, such as Cabernet Sauvignon or Syrah, pairs beautifully with the savory beef.

Slow-Cooker Garlic Butter Chuck Roast

Ingredients
- 3 1/2 lb beef chuck roast
- 12 garlic cloves, smashed
- 4 sprigs fresh rosemary
- 6 sprigs fresh thyme
- 4 oz garlic-herb compound cowboy butter, cut into medallions
- 12 oz buttered egg noodles, for serving
Instructions
- Place the beef chuck roast in the center of a 6-quart slow cooker insert. Scatter the smashed garlic cloves, rosemary sprigs, and thyme sprigs evenly over the top of the roast.
- Arrange the medallions of garlic-herb compound cowboy butter on top of the roast, spacing them evenly so they melt over the meat as it cooks.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours, until the beef is fork-tender and easily shreds apart. Let it rest for 3 minutes before slicing.
- Once the roast is fully tender, transfer it to a cutting board. Use two forks to shred the beef into bite-sized pieces, discarding any large pieces of fat. Return the shredded beef to the slow cooker and stir it into the garlic-herb butter gravy.
- Let the shredded beef rest in the warm slow cooker for at least 10 minutes before serving. This allows the juices to redistribute and the flavors to meld.
- Place a generous portion of warm buttered egg noodles on each plate. Spoon the shredded beef and garlic-herb butter gravy over the noodles, making sure to include some of the roasted garlic cloves and herb sprigs.
