Tips for success
For the best flavor, rub the spice mixture over the beef and let it marinate in the refrigerator overnight. This allows the jerk paste and allspice to penetrate the meat more deeply.
If you're short on time, a 30-minute rest at room temperature is acceptable, but always keep raw beef refrigerated until ready to cook.
To achieve a thicker glaze, remove the lid for the last 30 minutes of cooking to let the liquid reduce.
If the sauce is too thin after shredding, transfer the beef to a skillet and simmer over medium heat until the glaze thickens. Taste and adjust seasoning with salt or more jerk paste if needed.
Variations
- Chicken Jerk: Replace beef chuck with bone-in chicken thighs. Cook on low for 4 to 5 hours until tender and cooked through to 165°F (74°C). Shred and serve the same way.
- Extra Spicy: Add 1 to 2 finely chopped Scotch bonnet peppers to the spice rub. For a smoky kick, include 1 teaspoon of smoked paprika or chipotle powder.
- Pork Jerk: Use a 3-pound pork shoulder instead of beef. Cook on low for 8 hours until fork-tender. The pork will be equally juicy and flavorful with the jerk glaze.
- Mango Salsa Slaw: Mix shredded cabbage with diced mango, red bell pepper, red onion, lime juice, and cilantro for a fresher, more salsa-like slaw. This adds extra crunch and tang.

Serving ideas
Serve the jerk beef piled high in warm coco bread with a generous scoop of mango slaw. The cool, crisp slaw balances the spicy, sweet beef.
For extra heat, offer sliced Scotch bonnet peppers or a drizzle of hot sauce on the side. This sandwich is a meal in itself, but it also pairs well with rice and peas or fried plantains.
For a lighter option, serve the shredded beef over a bed of greens or in lettuce wraps. The glaze is rich, so a simple side of steamed vegetables or a fresh salad works well. Leftover beef can be used in tacos, quesadillas, or as a topping for nachos.

Jamaican Jerk Crockpot Shredded Beef with Mango Slaw

Ingredients
- 3 lb beef chuck roast
- 60 g Jamaican jerk paste
- 1 tbsp allspice
- 1 tbsp fresh thyme leaves
- 50 g dark brown sugar
- 1 tbsp fresh ginger, grated
- 120 ml pineapple juice
- 6 coco bread, warmed
- 1 1/2 cups mango slaw
Instructions
- Pat the beef chuck roast dry with paper towels. In a small bowl, stir together the Jamaican jerk paste, allspice, fresh thyme, dark brown sugar, and grated ginger. Rub this mixture all over the beef, pressing it into every surface. Place the seasoned roast into the slow cooker.
- Pour the pineapple juice around the beef in the slow cooker. Do not rinse off the spice rub. The juice will help keep the meat moist during the long cooking time and will blend with the spices to form a glaze.
- Cover the slow cooker and cook on LOW for 8 hours, until the beef is fork-tender and easily pulls apart. The spices and pineapple juice will caramelize into a dark, bubbling glaze during the final hour. Let it rest for 3 minutes before slicing.
- Remove the beef from the slow cooker and place it on a cutting board. Using two forks, shred the meat into bite-sized pieces, discarding any large pieces of fat. Return the shredded beef to the slow cooker and toss it in the glaze. Let it rest for 3 minutes before slicing.
- Warm the coco bread according to package instructions, or in a dry skillet over medium heat for 1 minute per side, until soft and pillowy.
- Split each coco bread open without breaking it fully. Fill each with a generous portion of the jerk beef and top with mango slaw. Serve immediately while warm.
