Tips for success
For the best texture, let the beef rest in the warm jus for 10 to 15 minutes after shredding. This allows the meat to absorb some of the liquid, making it even more succulent.
If you have time, you can also refrigerate the shredded beef in the jus overnight and reheat gently the next day — the flavors meld even further, and the beef becomes even more tender.
Don't discard the garlic cloves after cooking. They become soft, sweet, and buttery — spread them on crusty bread or mash them into the jus for an extra layer of flavor.
The rosemary and thyme sprigs can be removed before serving, but if you leave them in, they'll continue to infuse the jus with their aroma.
Variations
- Add Onions and Carrots: Layer sliced yellow onions and baby carrots under the roast before adding the garlic and herbs. They'll soften and sweeten during cooking, becoming part of the jus. Serve them alongside the beef for a complete one-pot meal.
- Spice It Up: Add 1 teaspoon smoked paprika and 1/2 teaspoon black pepper to the roast before cooking. For a little heat, tuck a dried chipotle pepper or a pinch of red pepper flakes among the herbs. This adds a smoky, slightly spicy depth to the jus.
- Red Wine Variation: Pour 1/2 cup dry red wine over the roast before adding the butter. The wine adds complexity and helps create a deeper, more robust jus. Let the alcohol cook off during the slow cooking process — no need to reduce it separately.
- Herb Swap: Replace the rosemary and thyme with fresh oregano and sage for a different herbal profile. Use 4 sprigs of oregano and 6 sage leaves, adjusting to taste. This works beautifully with the butter and garlic, giving the dish a more Mediterranean feel.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze shredded beef and jus in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently on the stovetop over low heat, stirring occasionally, or in the microwave in 30-second bursts.
Store leftover shredded beef and jus in an airtight container in the refrigerator for up to 4 days. The fat will solidify on top; either skim it off or whisk it back in when reheating for a richer sauce.
This recipe is ideal for meal prep. Cook the roast up to 3 days ahead, shred it, and store it in the jus. Reheat gently on the stovetop or in the microwave when ready to serve. The beef also freezes well for up to 3 months.
Serving ideas
Serve the shredded beef over whipped Yukon Gold mashed potatoes, as shown in the video. The creamy potatoes are the perfect foil for the rich, buttery jus.
For a lighter option, spoon the beef over creamy polenta or buttery egg noodles, or pile it onto toasted rolls for a hearty sandwich.
Garnish with a few fresh thyme leaves or a sprig of rosemary for a pop of color and a burst of herbaceous flavor.
A side of roasted green beans or a crisp green salad balances the richness of the dish. Leftover jus can be drizzled over roasted vegetables or used as a dipping sauce for crusty bread.

Rosemary Thyme Butter Chuck Roast: 4-Ingredient Slow Cooker

Ingredients
- 3 1/2 lb beef chuck roast
- 12 garlic cloves, smashed
- 4 sprigs fresh rosemary
- 6 sprigs fresh thyme
- 1 stick salted butter
Instructions
- Place the beef chuck roast in the center of the slow cooker. Scatter the smashed garlic cloves and the fresh rosemary and thyme sprigs over the top of the roast, pressing them gently so they stay in place.
- Unwrap the stick of salted butter and place it directly on top of the seasoned roast. It will melt as the cooker heats, basting the meat and creating a rich, golden jus.
- Cover the slow cooker and cook on low for 8 to 10 hours, or on high for 5 to 6 hours, until the beef is fork-tender and shreds easily. The butter and juices will form a bubbling, golden pan jus. Let it rest for 3 minutes before slicing.
- Remove the roast from the slow cooker and place it on a cutting board. Use two forks to shred the beef into large, bite-sized pieces, discarding any large pieces of fat. Return the shredded beef to the pot and stir gently to coat with the jus. Let it rest for 3 minutes before slicing.
- Spoon the shredded beef and a generous amount of the buttery pan jus over whipped Yukon Gold mashed potatoes. Serve hot, with extra fresh herbs if desired.
