Tips for success
For the most flavorful gravy, use a rich beef bone broth as the base for your brown gravy. You can also add a splash of red wine or a teaspoon of Worcestershire sauce to deepen the flavor, though the video doesn't call for it.
If you have leftover gravy, it's fantastic over mashed potatoes or roasted vegetables.
To make this recipe even easier, you can assemble everything in the slow cooker insert the night before and store it in the refrigerator. In the morning, simply place the insert in the cooker and turn it on.
This is a great time-saver for busy mornings. Just be sure to let the slow cooker come to room temperature for about 30 minutes before starting, or add 30 minutes to the cooking time.
Variations
- Mushroom Gravy: Add 8 ounces sliced cremini mushrooms along with the roast and gravy. They'll release their liquid and add an earthy depth to the sauce.
- Spicy Kick: Add 1 teaspoon red pepper flakes or a chopped chipotle pepper in adobo sauce to the gravy for a subtle heat.
- Herb Swap: Replace rosemary and thyme with fresh oregano and sage for a different herbal profile that pairs well with beef.
- Onion Lover's: Add a large yellow onion, thinly sliced, to the bottom of the slow cooker before placing the roast on top. It will caramelize and sweeten the gravy.
Storage and make-ahead
- Fridge
- Store leftover chuck roast in an airtight container in the refrigerator for up to 4 days. Reheat gently with a splash of broth to keep the gravy moist.
- Freezer
- Freeze the shredded beef and gravy in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbling. Add a little beef broth if needed to loosen the gravy.
Store leftover shredded beef and gravy in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making the leftovers even more delicious. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water if the gravy has thickened too much.
This recipe is ideal for making ahead. Cook the roast as directed, then cool it completely before refrigerating. The beef can be shredded and stored in the gravy for up to 4 days. It also freezes beautifully—see the freezer instructions below. To serve, reheat gently on the stovetop until bubbling.
Serving ideas
Serve this chuck roast over creamy mashed potatoes, egg noodles, or polenta, with plenty of gravy spooned over the top.
The tender beef and rich sauce are also delicious piled onto toasted slider buns with a spoonful of the garlic confit. Add a simple green salad or roasted vegetables on the side for a complete meal.
For a more casual presentation, set out the shredded beef, gravy, and slider buns and let everyone build their own sandwiches. This is a great option for game day or a family dinner.
The dish is hearty and satisfying on its own, but a dollop of horseradish cream or a sprinkle of fresh parsley would be a nice touch, though not required.

Rosemary Thyme Brown Gravy Chuck Roast: Slow-Cooker Comfort

Ingredients
- 3 1/2 lb beef chuck roast
- 12 cloves garlic, smashed
- 4 sprigs fresh rosemary
- 6 sprigs fresh thyme
- 2 cups rich brown gravy (beef bone broth based)
- 4 tbsp unsalted butter, cut into pats
Instructions
- Place the beef chuck roast in the center of a 6- to 7-quart slow cooker. Scatter the smashed garlic cloves and fresh rosemary and thyme sprigs over the top of the roast.
- Pour the rich brown gravy over the roast, ensuring it coats the meat and herbs. Dot the top with pats of unsalted butter.
- Cover the slow cooker and cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the beef is fork-tender and easily shreds. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the roast rest in the gravy for at least 3 minutes before shredding. This allows the juices to redistribute.
- Using two forks, shred the beef directly in the slow cooker, mixing it with the garlic and herbs. The garlic should be soft and spreadable.
- Spoon the shredded beef and gravy onto plates or into slider buns. Serve hot, with extra gravy spooned over the top.
