Tips for success
For the best texture, use whole milk and full-fat cheese. The fat in the milk and cheese contributes to a tender crumb and rich flavor. If you prefer a lighter version, you can use low-fat milk, but the buns may be slightly less tender.
When shaping the buns, keep the dough pieces covered with a damp towel to prevent them from drying out. This is especially important in a dry kitchen.
To get a perfect cheese pull, use a cheese that melts well, like kaşar, mozzarella, or provolone. Grate the cheese yourself rather than buying pre-shredded, which often contains anti-caking agents that can affect melting.
If you want to add a little heat, include a pinch of red pepper flakes in the filling. The buns are best served fresh, but they can be reheated in a toaster oven or microwave.
Variations
- Spicy Sausage Filling: Add 1/2 cup cooked, crumbled spicy sausage to the potato filling for a meaty, flavorful twist. Reduce the salt in the filling to account for the sausage’s seasoning.
- Herbed Dough: Mix 1 tablespoon of dried oregano or thyme into the flour for an herbed dough. This adds a subtle fragrance that complements the savory filling.
- Vegan Version: Use plant-based milk, oil instead of butter, and a vegan cheese alternative. Skip the egg wash and brush with olive oil before baking for a golden crust.
- Spinach and Feta: Replace the potato filling with a mixture of sautéed spinach, crumbled feta, and a little garlic. This makes a lighter, tangy filling that’s equally delicious.
Storage and make-ahead
- Fridge
- Store leftover buns in an airtight container in the refrigerator for up to 4 days. Reheat in a 350°F oven for 5-7 minutes.
- Freezer

- Reheat
- For best results, reheat buns in a 350°F oven for 5-7 minutes. Avoid microwaving, which can make the buns tough and chewy.
Store leftover buns in an airtight container at room temperature for up to 2 days. To reheat, place them in a 350°F (175°C) oven for 5-7 minutes, or until warmed through.
Avoid microwaving, as it can make the buns tough. For longer storage, freeze the baked buns in a single layer on a baking sheet, then transfer to a freezer-safe bag or container. They can be frozen for up to 3 months.
The dough can be prepared the night before and refrigerated after the first rise. Let it come to room temperature for about 30 minutes before shaping. The filling can also be made a day ahead and stored in the refrigerator. Assemble and bake the buns the next day for fresh, warm pastries with minimal morning effort.
Serving ideas
Serve these poğaça buns warm, ideally within an hour of baking, when the cheese is still gooey and the crust is at its crispest. They pair beautifully with a cup of Turkish tea or a glass of cold ayran.
For a more substantial meal, serve them alongside a bowl of lentil soup or a fresh salad. The buns are also great for breakfast, especially with a dollop of yogurt or a side of olives.
If serving as part of a brunch spread, arrange the buns on a platter with fresh herbs and sliced tomatoes. They can be eaten out of hand, making them perfect for picnics or packed lunches. For a special touch, sprinkle a little flaky sea salt on top after brushing with olive oil. The buns are best enjoyed the day they are made, but they are still delicious the next day when reheated.

Potato and Cheese Stuffed Turkish Poğaça Buns: Soft, Savory, Irresistible

Ingredients
- 5 cups all-purpose flour
- 1 cup warm milk
- 1/2 cup warm water
- 1/4 cup vegetable oil
- 2 1/4 tsp active dry yeast
- 1 tbsp granulated sugar
- 1 tsp salt
- 3 medium potatoes, peeled and boiled
- 1 medium onion, finely chopped
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp black pepper
- 1 tsp salt
- 1 1/2 cups kaşar cheese, shredded
- 1 egg yolk, beaten
- 2 tbsp olive oil
Instructions
- In a small bowl, combine the warm water, sugar, and yeast. Let sit for 5-10 minutes until foamy. In a large mixing bowl, whisk together the flour and salt. Add the yeast mixture, warm milk, and vegetable oil. Stir until a shaggy dough forms, then turn onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let rise in a warm place for 1 hour, or until doubled in size.
- While the dough rises, make the filling. Heat a skillet over medium heat and sauté the chopped onion in a little oil until golden and translucent, about 5-7 minutes. In a large bowl, mash the boiled potatoes. Add the sautéed onions, cumin, paprika, black pepper, and salt. Mix until well combined. Let the filling cool completely before assembling the buns.
- Punch down the risen dough and turn it onto a lightly floured surface. Divide the dough into 12 equal pieces. Roll each piece into a ball, then flatten into a disc about 4 inches in diameter. Place a generous spoonful of the potato filling in the center of each disc, then top with a sprinkle of shredded kaşar cheese. Bring the edges of the dough up and pinch to seal tightly. Gently shape into an oval bun, seam side down.
- Place the shaped buns on a baking sheet lined with parchment paper, leaving about 2 inches between them. Cover loosely with a clean kitchen towel and let rise for 20-30 minutes, or until puffy and slightly increased in size.
- Preheat the oven to 350°F (175°C). In a small bowl, beat the egg yolk with a teaspoon of water. Brush the tops of the risen buns with the egg wash, being careful not to deflate them.
- Place the baking sheet in the preheated oven and bake for 25 minutes, or until the buns are deeply golden brown and sound hollow when tapped on the bottom. The internal temperature of the dough should reach at least 190°F (88°C) for a fully baked bread.
- Immediately after removing the buns from the oven, brush the hot tops with olive oil. This gives them a beautiful glossy sheen and adds a subtle fruity flavor. Transfer the buns to a wire rack to cool slightly before serving.
