Tips for success
For the cleanest slices, use a sharp chef’s knife and cut with a single, firm motion rather than sawing back and forth. If the bark cracks, let it sit at room temperature for a few minutes to soften slightly.
To get those beautiful caramel ribbons, make sure the caramel is warm but not boiling—too hot, and it will sink into the chocolate; too cool, and it will be too thick to drizzle.
If you want extra crunch, add a sprinkle of flaky sea salt over the top before the chocolate sets. This enhances the salty-sweet contrast.
For a more even layer of toppings, gently press them into the chocolate with the back of a spoon. And if you’re making this ahead, keep the bark in the refrigerator until just before serving—it stays firm and breaks cleanly when cold.
Variations
- Dark Chocolate Version: Swap the milk chocolate for dark chocolate (60-70% cacao) for a less sweet, more intense bark. The bitterness of the dark chocolate pairs beautifully with the sweet peanut brittle and salted caramel.
- Nut-Free Option: Replace the roasted peanuts with additional peanut brittle or use toasted sunflower seeds and omit the peanuts. Ensure all ingredients are nut-free and check labels for cross-contamination.
- Spiced Caramel Twist: Add a pinch of cinnamon or cayenne to the warm salted caramel before drizzling. This adds a subtle warmth that complements the roasted peanuts and chocolate.
- White Chocolate Bark: Use white chocolate in place of milk chocolate for a sweeter, creamier bark. Reduce the caramel drizzle slightly to balance the sweetness, and add a sprinkle of flaky sea salt.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 2 weeks. Let sit at room temperature for 5 minutes before serving to soften the caramel.
- Freezer
- Wrap the bark tightly in plastic wrap and then in foil. Freeze for up to 3 months. Thaw in the refrigerator overnight before serving.
- Reheat
- No reheating needed. Serve cold or at room temperature.
Store the bark in an airtight container at room temperature for up to 1 week, or in the refrigerator for up to 2 weeks. Keep it in a cool, dry place to prevent the chocolate from blooming.
If refrigerated, let the bark sit at room temperature for a few minutes before serving to allow the caramel to soften slightly.
This bark is an excellent make-ahead treat. Prepare it up to 2 weeks in advance and store it in the refrigerator. Slice it into bars before storing for easy serving.
You can also wrap individual bars in parchment or plastic wrap and keep them in an airtight container. For longer storage, freeze the bark (see freezer instructions) and thaw in the refrigerator overnight.
Serving ideas
Serve the bark as a dessert or snack, arranged on a platter for sharing. It’s perfect for holiday cookie trays, party favors, or as an edible gift. The thick bars are satisfying on their own, but you can also break them into smaller pieces for a bite-size treat. Pair with coffee or milk for a classic combination.
For a more elegant presentation, dust the bars lightly with cocoa powder or drizzle with extra caramel just before serving. The bark also works well as a topping for ice cream or as a component in a dessert board. Store any leftovers in an airtight container to keep them crisp.

Peanut Brittle Caramel Milk Chocolate Crunch Bark

Ingredients
- 24 oz milk chocolate, finely chopped
- 8 oz peanut brittle, chopped
- 1 cup roasted Virginia peanuts
- 1/2 cup warm salted caramel sauce
Instructions
- Place the peanut brittle on a cutting board and chop it into small, uneven pieces with a chef's knife. Coarsely chop the roasted Virginia peanuts so they are about the same size as the brittle pieces. Set both aside in separate bowls.
- Using a box grater, grate the solid block of milk chocolate into a pile of fine curls. This creates a light, fluffy texture that will melt evenly and give the bark a smooth finish.
- Place the grated chocolate in a heatproof bowl and melt it gently over a pot of simmering water or in the microwave in 20-second bursts, stirring often, until completely smooth and glossy. Do not overheat.
- Line a metal tray with parchment paper. Pour the melted milk chocolate onto the tray and spread it into an even rectangle about 1/2 inch thick with a spatula. Smooth the top as much as possible.
- Warm the salted caramel sauce until it is pourable but not boiling. Drizzle it over the chocolate in a lattice pattern, moving the spoon back and forth to create thin ribbons.
- Scatter the chopped peanut brittle and roasted peanuts evenly over the caramel-drizzled chocolate. Press them gently into the surface so they adhere.
- Refrigerate the tray until the chocolate is completely firm, about 1 hour. Once set, lift the bark from the tray using the parchment. Use a sharp chef's knife to slice it into thick bars, about 2 inches wide.
- Lift one thick bar and snap it cleanly in half to reveal the layered cross-section of crunchy peanut brittle, smooth milk chocolate, and gooey salted caramel ribbons. Serve immediately or store in an airtight container.
