Tips for success
For the most efficient workflow, start the pasta water before you begin making the meatballs. While the water heats, mix and roll the meatballs, then brown them. By the time the meatballs are browned, the water will be boiling, and you can add the pasta.
This way, everything is ready to assemble at the same time. If you have extra time, you can make the meatballs ahead and refrigerate them, but they are so quick to assemble that it's not necessary.
To get a beautiful golden cheese crust, you can transfer the skillet to a preheated broiler for the last minute or two of cooking. Watch it closely to prevent burning. If you don't have a broiler-safe skillet, you can use a kitchen torch to brown the cheese. Alternatively, you can sprinkle a little extra parmesan on top before covering, which will create a more flavorful crust as it melts.
Variations
- Spicy Sausage Version: Swap the ground beef for 1 pound of spicy Italian sausage (casings removed). Skip the salt in the meatball mixture, as the sausage is already seasoned. Add a pinch of red pepper flakes to the sauce for extra heat.
- Vegetarian Skillet: Omit the meatballs and increase the tomato sauce to 4 cups. Add 1 cup of cooked lentils or chickpeas to the sauce for protein. Proceed with the rest of the recipe as written.
- Cheesy Spinach Addition: Fold 2 cups of fresh spinach into the sauce just before assembling the skillet. The spinach will wilt as the dish cooks, adding color and nutrition. You can also add a layer of ricotta cheese spooned into the shells before topping with mozzarella.
- Gluten-Free Adaptation: Use gluten-free jumbo shells and gluten-free breadcrumbs. Ensure the tomato sauce is certified gluten-free. All other ingredients are naturally gluten-free. The texture may be slightly different, but the flavor will be just as delicious.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently to avoid drying out.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a 350°F (175°C) oven for 15-20 minutes, or in the microwave in 1-minute intervals, stirring between.
Store any leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will meld and deepen overnight, making it even more delicious the next day. To reheat, place a portion in a microwave-safe dish and heat in 30-second intervals, stirring occasionally, until hot.
Alternatively, reheat in a skillet over medium heat with a splash of water or sauce to prevent drying. The cheese will melt again, and the dish will be just as satisfying.
You can prepare the meatballs up to a day ahead and keep them covered in the refrigerator. You can also cook the pasta shells in advance and store them in a sealed container with a little olive oil to prevent sticking. When ready to cook, brown the meatballs and assemble the dish as directed.
This makes the recipe even more convenient for busy weeknights. If making the entire dish ahead, assemble the skillet, cover, and refrigerate. Bake in a 375°F (190°C) oven for 20-25 minutes, or until bubbling, then add the basil.
Serving ideas
Serve this skillet dish directly from the pan for a rustic, family-style presentation. Pair it with a crisp green salad dressed with a simple vinaigrette to balance the richness. Crusty bread is essential for sopping up the extra sauce—a warm baguette or garlic bread works beautifully. For a complete Italian-American meal, start with a light antipasto platter and finish with a scoop of gelato.
This dish is also great for entertaining, as it can be made ahead and reheated. For individual servings, use a spatula to carefully lift out a portion of shells and meatballs, making sure to get plenty of sauce and cheese.
Garnish with extra fresh basil just before serving to keep it vibrant. Leftovers are excellent for lunch the next day—simply reheat and enjoy. The cheese pull is best right after cooking, so serve immediately for the most dramatic effect.

One-Pot Stuffed Shells and Meatballs Skillet

Ingredients
- 1 lb ground beef (80% lean)
- 1/2 cup plain breadcrumbs
- 1 large egg
- 1/4 cup grated onion
- 2 cloves garlic, minced
- 1 tsp dried Italian herbs
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 12 oz jumbo pasta shells
- 3 cups spiced tomato sauce
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1/4 cup fresh basil leaves, torn
Instructions
- In a large bowl, combine the ground beef, breadcrumbs, egg, grated onion, minced garlic, Italian herbs, salt, and pepper. Mix gently with your hands until just combined; avoid overmixing. Roll the mixture into mini meatballs, about 1 inch in diameter.
- Heat the olive oil in a large skillet over medium-high heat. Add the meatballs in a single layer and cook, turning occasionally, until browned on all sides, about 5 minutes. They do not need to be cooked through at this point.
- While the meatballs brown, bring a large pot of salted water to a boil. Cook the jumbo pasta shells according to package directions until al dente, about 10 minutes. Drain and rinse with cool water to stop the cooking.
- Reduce the heat to medium. Pour the spiced tomato sauce into the skillet with the meatballs, scraping up any browned bits. Nestle the cooked pasta shells into the sauce, open side up. Gently spoon some sauce into each shell.
- Sprinkle the shredded mozzarella and grated parmesan evenly over the entire skillet, covering the shells and meatballs.
- Cover the skillet with a lid and cook over low heat until the cheese is melted and bubbling, about 5 minutes. The meatballs should reach an internal temperature of 160°F (71°C).
- Remove the skillet from the heat and scatter the torn fresh basil leaves over the top. Let the dish rest for a few minutes before serving, to allow the cheese to set slightly.
