Tips for success

For the best flavor, use a dry white wine like Pinot Grigio or Sauvignon Blanc. The wine's acidity balances the richness of the butter and olive oil.

If you prefer no alcohol, substitute with an equal amount of seafood stock and add a tablespoon of lemon juice. The lemon juice will mimic the wine's brightness without the alcohol.

To make the dish even more luxurious, finish with a drizzle of extra-virgin olive oil and a squeeze of fresh lemon before serving. If you like a bit of heat, increase the red pepper flakes to 1 teaspoon.

For a thicker sauce, remove the pasta and clams, then simmer the broth on the stovetop for a few minutes to reduce before spooning it over.

Variations

  • Spicy Arrabbiata Clam Linguine: Add 1 teaspoon of red pepper flakes and a pinch of cayenne for a fiery kick. Use a robust red wine like Chianti instead of white, and stir in a tablespoon of tomato paste with the garlic. The broth will be deeper and spicier.
  • Lemon Herb Clam Linguine: Add the zest of one lemon and 2 tablespoons of fresh lemon juice along with the wine. Increase the parsley to 1/2 cup and add 1 tablespoon of fresh thyme leaves. The citrus brightens the broth and complements the clams.
  • Creamy Garlic Clam Linguine: Stir in 1/2 cup of heavy cream during the last 10 minutes of cooking, along with the fresh clams and linguine. The cream adds richness and a silky texture. Finish with grated Parmesan cheese, if desired.
  • Vegetable-Forward Clam Linguine: Add 1 cup of halved cherry tomatoes and 1/2 cup of sliced fennel bulb with the canned clams. The tomatoes soften and release their juices, while the fennel adds a mild anise flavor. Omit the red pepper flakes for a milder dish.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 3 days. The pasta will absorb broth; add a splash of wine or water when reheating.
Freezer
Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the fridge and reheat gently, adding broth to loosen.
Reheat
Reheat in a saucepan over medium-low heat, adding a splash of white wine or water to restore the sauce. Stir frequently until heated through, about 5 minutes.

Store leftover clam linguine in an airtight container in the refrigerator for up to 3 days. The pasta will absorb some of the broth, so add a splash of water or white wine when reheating to loosen it. Reheat gently on the stovetop or in the microwave, but do not boil, as the clams can become tough.

The garlic wine broth can be made a day ahead: combine the canned clams, wine, garlic, olive oil, butter, and red pepper flakes in the slow cooker, then refrigerate overnight.

The next day, start the slow cooker on LOW for 2 hours, then add the fresh clams and linguine. This saves prep time and allows the flavors to meld even longer.

Serving ideas

Serve this clam linguine in shallow bowls with a ladle of the garlicky broth over the top. A sprinkle of fresh parsley adds color and freshness. Offer crusty bread on the side for soaking up every last drop of the briny sauce. A glass of Pinot Grigio or another dry white wine complements the dish beautifully.

This pasta is satisfying enough as a main course for six people. For a lighter meal, serve smaller portions as a first course.

Pair with a simple green salad dressed with lemon and olive oil to balance the richness. The dish is best enjoyed immediately while the clams are tender and the pasta is perfectly coated.

Frequently asked questions

Can this recipe be made without alcohol?
Yes. Replace the Pinot Grigio with an equal amount of seafood stock or chicken broth, and add 1 tablespoon of fresh lemon juice to mimic the wine's acidity. The lemon juice brightens the broth and helps balance the richness of the butter and olive oil.
Why did some clams not open?
Clams that remain closed after cooking are likely dead before cooking and should be discarded. Always scrub fresh clams and discard any that are cracked or open before cooking. When adding to the slow cooker, ensure they are nestled into the liquid so they steam evenly.
Can frozen clams be used instead of fresh littlenecks?
Frozen clams can be substituted, but they will release a lot of liquid and may not open as dramatically. Thaw them first and add them during the last 10 minutes of cooking. The dish will still be flavorful, but the texture may be less tender than fresh clams.
How can the dish be made less spicy?
Omit the red pepper flakes entirely or use just a pinch. The heat from the flakes is subtle but can be adjusted to taste. If you prefer no heat, skip them altogether; the garlic and wine will still provide plenty of flavor.
Can the linguine be cooked separately?
Yes, but the slow cooker method cooks the pasta in the broth, which adds flavor. If cooking separately, boil the linguine until al dente, then add it to the slow cooker with the clams for the last 5 minutes to absorb some broth. The dish will be less integrated but still delicious.

A close-up of glossy linguine with fresh clams in a rich garlic white wine sauce in a white crockpot.

Ingredients

  • 2 cans (10 oz each) baby clams with juice
  • 1 cup dry Pinot Grigio
  • 8 cloves garlic, minced
  • 1/2 cup extra-virgin olive oil
  • 1 stick butter
  • 1/2 tsp red pepper flakes
  • 12 scrubbed littleneck clams
  • 16 oz linguine
  • 1/4 cup fresh flat-leaf parsley, chopped

Instructions

  1. In the slow cooker, combine the canned baby clams with their juice, Pinot Grigio, minced garlic, olive oil, butter, and red pepper flakes. Stir gently to blend the butter into the liquid.
  2. Cover and cook on LOW for 2 hours. The liquid should be steaming and fragrant, with the garlic softened and the butter fully incorporated.
  3. After 2 hours, add the scrubbed littleneck clams and the linguine to the slow cooker. Push the linguine down into the liquid so it is mostly submerged.
  4. Cover and cook on LOW for 20 minutes, until the littleneck clams have opened and the linguine is al dente. Stir once halfway through to redistribute the pasta.
  5. Turn off the slow cooker. Gently stir in the chopped parsley. Using tongs or a carving fork, twirl the linguine into nests and serve in shallow bowls with a ladle of the lemon-garlic broth and clams on top.
