Tips for success
For the best texture, use a good-quality sharp cheddar and shred it yourself from a block. Pre-shredded cheese often contains cellulose and other anti-caking agents that can prevent smooth melting.
If you prefer a spicier kick, add a pinch of cayenne pepper or a dash of hot sauce along with the cheese. For extra depth, you could also stir in a teaspoon of Dijon mustard before adding the cheese — it won't make the sauce taste mustardy, but it will enhance the cheddar flavor.
To make this dish even more substantial, you can add cooked chicken, bacon, or ham along with the cheese. For a vegetarian version, this recipe is already meat-free.
If you have leftover roasted vegetables, such as cauliflower or bell peppers, toss them in at the end with the cheese. The sauce is forgiving, so feel free to adjust the consistency with a little extra broth or cream as needed.
Variations
- Add Chicken: Stir in 1 cup of shredded rotisserie chicken along with the cheese at the end. The chicken adds protein and makes the dish more filling. Heat through until the chicken is warmed.
- Use Other Cheeses: Substitute the sharp cheddar with a mix of Gruyère and fontina for a nuttier, more complex flavor. Or use pepper jack for a spicy kick. The total amount of cheese remains 2 cups.
- Add Bacon: Cook 4 slices of bacon until crispy, then crumble and stir into the pasta just before serving. The smoky flavor pairs beautifully with the cheddar and broccoli.
- Make it Gluten-Free: Use gluten-free cavatappi or another short gluten-free pasta. Note that gluten-free pasta may absorb liquid differently, so check the package for cooking times and add extra broth if needed.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of milk or broth to restore creaminess.
- Freezer
- Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over low heat, adding a splash of milk or broth to loosen the sauce. Or microwave in 30-second intervals, stirring between, until hot.
Store any leftovers in an airtight container in the refrigerator for up to 3 days. The sauce will thicken as it cools, so when reheating, add a splash of milk, broth, or water to loosen it.
Reheat gently on the stovetop over low heat or in the microwave in 30-second intervals, stirring in between, until hot. Avoid boiling, as that can cause the cheese sauce to separate.
You can prepare the vegetables and shred the cheese up to a day ahead, storing them in the refrigerator in separate containers.
The dish is best cooked fresh, but you can also cook it fully and refrigerate it; reheat gently with a little extra liquid to restore the creamy texture. If making ahead for a party, consider undercooking the pasta slightly so it doesn't overcook when reheated.
Serving ideas
Serve this broccoli cheddar cavatappi as a main course with a simple green salad and crusty bread on the side. It's also a wonderful side dish alongside grilled chicken, steak, or roasted pork. For a touch of freshness, top each bowl with a sprinkle of chopped fresh parsley or chives before serving, though this is optional and not shown in the video.
For a more indulgent meal, you could add a drizzle of truffle oil or a sprinkle of crispy bacon bits over the top. If you have a wedge of Parmesan, a little grated over the bowl adds a nice salty contrast. The dish is rich and satisfying on its own, so keep accompaniments light. A glass of crisp white wine or a cold beer pairs well with the creamy cheese sauce.

One-Pot Broccoli Cheddar Cavatappi

Ingredients
- 2 tbsp unsalted butter
- 1/2 cup diced yellow onion
- 1/2 cup shredded carrot
- 2 cloves garlic, minced
- 3 cups vegetable broth
- 1/2 cup heavy cream
- 8 oz cavatappi pasta
- 3 cups broccoli florets
- 2 cups shredded sharp cheddar cheese
- Salt to taste
- Black pepper to taste
Instructions
- Melt the butter in a large pot or Dutch oven over medium heat. Add the diced onion and shredded carrot, and cook, stirring occasionally, until the onion is translucent and the carrot has softened, about 4 minutes. Add the minced garlic and cook for 1 minute more, until fragrant.
- Pour the vegetable broth and heavy cream into the pot. Add the dry cavatappi pasta and broccoli florets. Stir everything together to combine and bring the liquid to a simmer over medium-high heat.
- Reduce the heat to medium-low and let the pasta simmer gently, stirring occasionally, until the cavatappi is tender and most of the liquid has been absorbed, about 12 to 14 minutes. The pasta will cook directly in the sauce, creating a creamy base.
- Turn the heat to low. Sprinkle the shredded cheddar cheese over the pasta and stir continuously until the cheese is fully melted and the sauce is smooth and velvety. Season with salt and black pepper to taste.
- Ladle the creamy cavatappi into bowls and serve hot. The sauce will thicken as it sits, so serve right away for the best texture.
