Tips for success
For perfectly even slices, use a sharp chef's knife and clean it between cuts. If the log softens while you're slicing, pop it back in the freezer for a few minutes.
You can also roll the log into a rectangle and cut into squares for a different shape. These bars are very forgiving — adjust the nut ratios to suit your taste.
To make these bars even more portable, wrap each slice individually in plastic wrap or parchment paper. This is great for lunchboxes or on-the-go snacks.
If you prefer a softer texture, let the bars sit at room temperature for a few minutes before eating. For a crunchier texture, toast the nuts lightly before processing.
Variations
- Chocolate Chip: Add 1/4 cup of mini chocolate chips to the food processor during the last few pulses. The chocolate will melt slightly and create a marbled effect. Use dairy-free chips for a vegan version.
- Spiced: Add 1/2 teaspoon of ground cinnamon and a pinch of nutmeg to the mixture for a warm, cozy flavor. This pairs especially well with the dates and walnuts.
- Seed-Based: Replace the walnuts and pistachios with a mix of sunflower seeds, pumpkin seeds, and sesame seeds for a nut-free version. Toast the seeds lightly for extra crunch.
- Citrus Zest: Add 1 teaspoon of orange zest along with the vanilla extract. The bright citrus flavor cuts through the sweetness of the dates and adds a refreshing twist.

They can be made up to 2 weeks in advance if refrigerated, or up to 3 months if frozen. Thaw in the refrigerator or at room temperature before serving.
Serving ideas

Arrange them on a platter for parties or pack them in lunchboxes. The coconut coating adds a subtle tropical flavor that complements the dates and nuts beautifully.

No-Bake Date Pistachio Energy Bars

Ingredients
- 2 cups pitted Medjool dates
- 1 cup raw walnuts
- 1/2 cup shelled pistachios
- 1 pinch sea salt
- 1 tsp pure vanilla extract
- 1/2 cup unsweetened shredded coconut, for coating
Instructions
- Place the pitted Medjool dates, raw walnuts, shelled pistachios, sea salt, and pure vanilla extract in a food processor. Pulse a few times, then process continuously until the mixture is sticky and uniformly combined, scraping down the sides as needed. The mixture should hold together when pressed between your fingers.
- Transfer the date-nut mixture onto a large piece of parchment paper. Using your hands, shape it into a log about 2 inches in diameter. Roll the log tightly in the parchment paper, twisting the ends to secure. Place the wrapped log on a baking sheet.
- Place the baking sheet with the wrapped log in the freezer and chill for 20 minutes, until the log is firm enough to slice cleanly.
- Remove the chilled log from the freezer and unwrap it. Using a sharp knife, slice the log into half-inch thick rounds. The slices should hold their shape without crumbling.
- Place the unsweetened shredded coconut in a shallow bowl. Press each slice into the coconut, turning to coat both sides and the edges. Gently shake off any excess.
