Before you start
Before starting, pit the dates if they aren't already pitted. Measure out the walnuts, pistachios, salt, and vanilla. Line a baking sheet with parchment paper.
Have the shredded coconut ready in a shallow bowl. Clear a space in the freezer for the baking sheet. The entire process is quick, so having everything prepared in advance makes it seamless.
Ingredients at a glance (6)
- 2 cups pitted Medjool dates
- 1 cup raw walnuts
- 1/2 cup shelled pistachios
- 1 pinch sea salt
- 1 tsp pure vanilla extract
- 1/2 cup unsweetened shredded coconut, for coating
Instructions
Process and Shape
- Process the Date MixturePlace the pitted Medjool dates, raw walnuts, shelled pistachios, sea salt, and pure vanilla extract in a food processor. Pulse a few times, then process continuously until the mixture is sticky and uniformly combined, scraping down the sides as needed. The mixture should hold together when pressed between your fingers.Look for The mixture is sticky and holds together when pinched.Tip If the dates are very dry, soak them in warm water for 10 minutes, then drain well before using.
- Shape the LogTransfer the date-nut mixture onto a large piece of parchment paper. Using your hands, shape it into a log about 2 inches in diameter. Roll the log tightly in the parchment paper, twisting the ends to secure. Place the wrapped log on a baking sheet.Look for The log is firm and holds its shape.Tip For even slices, make the log as uniform in thickness as possible.
The mixture should be sticky and hold together when pressed. It will look like a coarse, dark paste with visible flecks of nuts. The log should be firm and well-wrapped, ready for chilling.
Chill and Slice
- Chill the LogPlace the baking sheet with the wrapped log in the freezer and chill for 20 minutes, until the log is firm enough to slice cleanly.Look for The log feels firm to the touch.Tip Chilling makes slicing easier and prevents crumbling.
After 20 minutes in the freezer, the log should be firm to the touch. Slicing should be clean and neat, with no crumbling. The rounds will look like dark discs with embedded nut pieces.
Coat and Serve
- Slice into CoinsRemove the chilled log from the freezer and unwrap it. Using a sharp knife, slice the log into half-inch thick rounds. The slices should hold their shape without crumbling.Look for Slices are clean and hold together.Tip If the log softens while slicing, return it to the freezer for a few minutes.
- Coat with CoconutPlace the unsweetened shredded coconut in a shallow bowl. Press each slice into the coconut, turning to coat both sides and the edges. Gently shake off any excess.Look for Each slice is evenly coated with coconut.Tip Coat the slices just before serving for the freshest texture.
Each slice should be evenly coated with coconut, giving them a snowy, festive appearance.
The bars are ready to serve immediately or can be stored for later. Take a moment to check the color, texture and aroma before you move on to the next step.
Common mistakes
One common mistake is over-processing the mixture into a paste, which yields a dense, greasy bar. Pulse until the mixture is sticky and uniform but still has some texture.
Another is using dry dates, which won't bind properly; soak them if needed. Skipping the chill time leads to crumbly slices. Finally, don't skip the salt — it balances the sweetness and enhances the flavors.
How to tell it’s done
The bars are done when they hold their shape after slicing and are coated with coconut. The texture should be chewy and firm, not crumbly. If the mixture is too sticky to slice, chill it longer.
If it crumbles, process it a bit more or add a touch of water. There is no protein in this recipe, so no internal temperature check is needed.
